This bright pink applesauce is simple enough for a weeknight supper and festive enough for special occasions. It's a favorite with my family and friends and looks fabulous at a Christmas dinner! You can substitute Splenda® for the sugar.

Steps:
- Stir apples, cranberries, sugar, water, cinnamon, and salt together in a saucepan. Bring to a boil, reduce heat to low, and cook until apples and cranberries are tender, about 20 minutes. Remove from heat.
- Stir lemon juice into cranberry mixture.
- Mash cranberry mixture with a wooden spoon or fork to make a chunky sauce.

SUPERB CRANBERRY SAUCE WITH APPLES AND PEARS
This cranberry sauce has extra spices, diced fruits, and orange juice added to make it more exciting than plain old cranberries. Everyone always loves this at Thanksgiving and it disappears fast! It's best when made the night before and left to rest in the refrigerator overnight so all the flavors can blend together.

- Place the cinnamon sticks, allspice berries, and cloves onto the center of a 8 inch square piece of cheesecloth. Gather together the edges of the cheesecloth, and tie with kitchen twine to secure. Place the sachet into a large saucepan along with the cranberries and orange juice. Bring to a boil over high heat, and cook until the berries begin to burst, about 10 minutes.
- Stir in the apples, pears, white sugar, and brown sugar. Return to a boil, then reduce heat to medium-low, and simmer about 25 minutes until the apples and pears are slightly soft. Remove and discard the spice sachet. Scrape the sauce into a bowl, cover, and refrigerate overnight. Serve cold.

- In a medium saucepan over medium heat, add the cranberry juice, cranberries, cinnamon and sugar. Bring to a boil and let cook for 5 minutes. Add the apples and cook, stirring occasionally, until the cranberries have softened and apples are tender, about 5 minutes.
- Remove 8 ounces of the liquid to a small bowl and whisk in the cornstarch. Slowly add the cornstarch-juice mixture (slurry) to the cranberry mixture, stirring constantly. Cook for an additional 5 minutes.

- Slice away the bottom of the orange so it sits steady on the cutting board. Working from top to bottom, slice off the peel, leaving behind most of the white pith. Finely dice half of the peel strips; discard the rest or save for another use. In a small saucepan over high heat, combine the diced peel and the water. When the water comes to a boil, lower the heat and simmer for 10 minutes. Meanwhile, squeeze all the juice from the orange and set aside.Strain and set aside the blanched orange peel.

CRANBERRY AND APPLES SAUCE
We LOVE cranberry sauce in our house, so when I found this recipe on Culinary Hill's website I decided to tweak it to make it my own. If you like your cranberry sauce more tart, use only half of the apple. Don't leave out the salt; it makes the cranberry flavor come alive! This sweeter, milder cranberry sauce is perfect served with cream cheese and crackers, on pound cake, ice cream, or even Holiday pancakes or waffles for breakfast. Great with turkey or ham, too.

- Rinse cranberries and sort out the soft ones. Peel, slice, and grate the apple.
- Add water, sugar, and salt to a saucepan; heat on medium heat until the sugar dissolves.
- Add cinnamon, cranberries, and grated apple to the saucepan.
- Bring to a boil, then turn down to simmer, stirring occasionally, until sauce reaches the desired degree of thickness, about five to ten minutes. I like mine with a few whole berries in it.
- Sauce will continue to thicken as it cools. Serve either chilled or room temperature.
