NO-CHURN BLUEBERRY GRAHAM CRACKER ICE CREAM

Steps:
- In a small saucepan, combine blueberries, sugar and vanilla. Bring to a boil; reduce heat. Simmer until mixture begins to thicken, about 5 minutes, stirring frequently. Cool completely. Refrigerate until chilled., In a large bowl, beat cream until soft peaks form. Add condensed milk; beat until mixture thickens. Gently fold graham crackers into cream mixture. Transfer to freezer containers, allowing headspace for expansion. Drop blueberry mixture by tablespoonfuls over ice cream. Cut through ice cream with a knife to swirl. Freeze for 8 hours or overnight before serving.

Steps:
- In a tall glass, lightly press mint into simple syrup with a muddler or long-handled spoon. Fill glass with cracked ice. Add gin and stir energetically with a swizzle stick or long-handled spoon until frost forms on outside of glass. Top off with more cracked ice, plant a mint sprig on top, and serve with a straw.

This is a nice Jell-O recipe for the holidays, it's a little different from most of the recipes out there as it contains fruit.

Steps:
- Dissolve cherry jell-o and lime jell-o as directed and refrigerate both in separate containers ( ice cube tray size is perfect ) until firm. Dissolve lemon jell-o as directed and refrigerate until thickened but not set. In a large bowl whip the cream and add the softened cream cheese until smooth. Fold in the lemon jell-o, pineapple and fruit cocktail. Cut up the cherry and lime jello into cubes and fold into the mixture. Pour into a 3 quart mold and refrigerate.
- I listed 60 minutes as the prep time but I usually make the cherry and lime jell-o the night before I want to prepare this to make it easier. I hate waiting for jell-o to set!
