1 package Ore-Ida Steam n' Mash Garlic Seasoned Potatoes
1 pound ground meat lean
3/4 cup onion, finely chopped
1/3 cup bread crumbs seasoned
1/4 cup barbecue sauce
1 egg lightly beaten
2 teaspoon chili powder
3/4 teaspoon salt
2/3 cup evaporated milk
1 tablespoon butter
1 cup crumbled bacon real
1/4 cup crispy fried onions, canned
2/3 cup Mexican blend cheese, shredded

Steps:

  • Preheat oven to 375°F. Coat 9×9 baking dish with nonstick cooking spray. In a large bowl, combine beef, onion, breadcrumbs, barbecue sauce, egg, chili powder and salt until well mixed. Gently press into bottom of baking dish. Bake uncovered for 20 to 25 minutes, or until cooked through. Carefully pour off any excess fat if needed. Adjust oven to broil and place oven rack 6 to 8 inches from heat source. Meanwhile, microwave potatoes according to package instructions. In a large bowl, mix together hot potatoes, milk and butter, and mash with a potato masher until smooth. For a smoother consistency, mix with an electric mixer to desired consistency. Stir in bacon and fried onions. Spread evenly on top of beef mixture and sprinkle with cheese. Broil for 3 to 5 minutes, or until cheese is lightly browned. Serve hot with additional barbecue sauce if desired. TIP: If desired, substitute ground beef with ground turkey.

2 teaspoons olive oil
1 cup chopped onion
1/2 cup chopped celery
1/2 cup diced green bell pepper
1/2 cup diced red bell pepper
1 1/2 teaspoons ground cumin
2 garlic cloves, minced
1 jalapeno pepper, seeded and chopped
1/2 cup barbecue sauce, divided
2 cups mashed cooked peeled baking potatoes (about 1-pound uncooked potatoes)
1 cup regular oatmeal
1/4 cup minced fresh cilantro
1/4 cup ketchup
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1 (16 ounce) can kidney beans, drained and mashed
cooking spray
3 ounces shredded reduced-fat sharp cheddar cheese

Steps:

  • Preheat oven to 375*.
  • Heat oil in a large nonstick skillet over medium-high heat.
  • Add onion and next 6 ingredients (onion through jalapeno); saute 3 minutes.
  • Stir in 1/4 cup barbecue sauce, potato, and the next 7 ingredients (potato through beans).
  • Spoon the potato mixture into a 9x5" loaf pan coated with cooking spray.
  • Bake at 375º for 30 minutes.
  • Brush 1/4 cup barbecue sauce over loaf, and sprinkle with cheese.
  • Bake an additional 10 minutes or until done.

1/4 cup sweet honey barbecue sauce (i.e. Kraft)
1 egg, beaten
2 teaspoons chili powder
1 (24-ounce) package Ore-Ida Steam n' Mash Russet potatoes
1 tablespoon butter or margarine
1 (5-ounce) can evaporated milk
1 tablespoon chopped fresh parsley
1 teaspoon garlic powder
1/2 cup bacon bits
1/4 cup French fried onions
2/3 cup Mexican style shredded cheese mix

Steps:

  • Preheat the oven to 375 degrees Fahrenheit. Grease a 9-inch square baking dish with baking spray.
  • In a large bowl, stir together the ground beef, onions, bread crumbs, barbecue sauce, beaten egg, and chili powder just until well-combined. Press the meat mixture into the bottom of the greased baking dish.
  • Bake it for 20 to 25 minutes, or until cooked through. Test for doneness with a meat thermometer. It should read 160 degrees Fahrenheit.
  • While baking, microwave the potatoes according to package instructions in a medium, microwave-safe bowl. Mix in the butter, milk, parsley, and garlic powder until well-combined. Gently mix in the bacon bits and French-fried onions.
  • Remove the dish from the oven and turn on the broiler. Top the meat mixture with the potato mix, followed by the shredded cheese.
  • Place the baking dish 4 inches from the heat. Broil for 3 to 5 minutes or until the cheese melts. Let the cowboy meatloaf rest for 10 to 15 minutes before slicing. Serve and enjoy!

I found another version of this recipe that suggested using uncooked, grated potato instead of the cooked potato. That's a time-saving method probably worth a try, because there is quite a lot of prep required for this recipe.

1 lb. lean ground beef
1/3 cup finely crushed saltine crackers
1/4 cup each finely chopped green peppers and onions

Steps:

  • Heat oven to 375ºF.
  • Reserve 1/4 cup barbecue sauce for later use. Mix remaining barbecue sauce with remaining ingredients just until blended.
  • Shape into loaf in shallow pan sprayed with cooking spray.
