COWBOY CAMPFIRE GOULASH GRUB
This recipe came from needing to use about half a container of pulled pork bbq (with sauce). We had eaten it as sandwiches, and I needed a new way to serve it and use it up! This is laden with veggies, super-easy, and the boys ate it up! I'm a "pinch-and-dash" cook, so all values are estimated. Happy Trails to you!

Steps:
- Mince garlic and dice carrots and celery fine while heating oil. Sautee all together over medium heat until slightly translucent. Add corn, stir until thawed, and add beef broth and rotel. When this has come to a simmer, add bbq, tomato paste, condiments and seasoning. Allow to simmer until heated through and thickened, tasting and adjusting seasonings before serving. Serve on a bed of rice (or mashed potatoes would be good, too) topped with cheese, sour cream dollop, and a sprinkle of green onion. Yeeee-Haw!

there is a little shop in Norristown PA that makes sandwiches, and I looked to see if one of their sandwiches made it here, and it didn't so I'm going to post it on zarr. I'm sure everyone is saying what is a zep? well it's just a sandwich but you be the judge............

- You take the hoagie roll and slice it apart.
- put salad oil on both sides.
- then put slice of cheese on both sides.
- next comes the meat.
- slice the onion thick and put ontop of meat.
- then top with a tomato slice.
- salt and pepper opt.
- put it together and you have one of eve's famous zeps.
- the hotter the pepper the better hubby says.
- but I feel, any hot pepper will do.

CHEESY HAMBURGER SKILLET (OR HELPER, GOULASH, COWBOY STUFF)
Guy food, tossed together one Saturday night in a large cast iron skillet. Exactly my kind of comfort food. Ingredient amounts are approximate, as they usually are when a guy cooks (this guy, anyway), so don't fret over amounts and feel free to taste and add whatever.

Steps:
- Cook the elbow macaroni according to package directions.
- Meanwhile, in a large skillet, cook the ground beef and onions.
- Drain the meat mixture.
- Add tomato products and beans, undrained.
- Add water if needed and chili powder and simmer for 15 minutes.
- Add the cooked macaroni and reheat to a simmer.
- Taste and adjust salt and pepper.
- Stir in 1 cup of cheese and melt.
- Add remainder of cheese to top and remove from heat.

- Wash the potatoes and cut in half lengthwise.
- Sprinkle the skin side with salt.
- brush the cut side with oil.
- Place on grill oil side down.
- Brush top with BBQ sauce.
- Cook for about 10 minutes then flip the potatoes and put BBQ sauce on the flat side.
- Cook until tender when poked with a fork.
- This is a low to medium heat item.
