2 cups all-purpose flour
2 cups semisweet chocolate chips
1 cup sweetened flaked coconut
1 cup chopped pecans
½ cup whole wheat flour
½ cup oats
1 teaspoon baking soda
1 teaspoon salt
2 sticks unsalted butter, melted
¾ cup brown sugar
¾ cup white sugar
2 eggs
1 teaspoon vanilla

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix all-purpose flour, chocolate chips, pecans, coconut, whole wheat flour, oats, baking soda, and salt together in a large bowl.
  • Mix butter, brown sugar, and white sugar until combined in a separate bowl; add eggs and vanilla. Add flour mixture and stir until combined. Press dough into an ungreased 9x13-inch baking pan.
  • Bake in the preheated oven until golden brown, about 13 minutes. Be careful not to overbake. Cool for 10 minutes before cutting into 1x2-inch bars.

20 ounces white chocolate or almond bark
1/2 teaspoon peppermint extract
30 mint-flavored chocolate sandwich cookies, such as Oreos
Crushed peppermint candies or candy canes, for topping

Steps:

  • Bring a shallow pan of water to a simmer. Add the white chocolate to a heatproof bowl and set over the simmering water to melt. Stir in the peppermint extract.
  • Dip the cookies one by one in the melted chocolate to cover completely, then transfer to a parchment-lined baking sheet. Sprinkle the crushed candy over the tops. Allow the cookies to set and dry before serving.

The bark only takes about 5 minutes, making it the perfect fast, easy, and extremely satisfying treat. It's just melted chocolate, topped with a mixture of toffee bits, peanuts, almonds, pretzels, Oreos, and a sprinkling of sea salt. Sounds simple enough, but there's something about the combination that's just irresistible. Salty-and-sweet treats can do no wrong. The bark is a texture lover's dream full of smooth richness along with crispy and crunchy in every bite. Use your favorite dark Chocolate bar, definitely not milk, and don't go too dark so that it's bitter. For the toppings, if you don't have all of them on hand, mix and match based on what you do have. The batch makes about 4 times what you'd get in one $3.69 9-ounce bag, enough to share with friends and they'll love you for it. Before beginning to melt the chocolate, have everything else chopped, prepped and ready to go.

16 ounces dark chocolate (1 pound; I used equal parts TJ's 72% Pound Plus, Dark Chocolate, and Milk Chocolate Bars; if only using one, select a favorite dark chocolate)
about 1 1/2 cups mini pretzels
8 chocolate-stuffed Oreos, roughly chopped (or use TJ's Chocolate Jo-Jo's; regular Oreos may be substituted)
1/3 cup toffee bits
1/3 cup coarsely chopped peanuts (I used roasted lightly salted)
1/3 cup coarsely chopped almonds (I used roasted lightly salted)
sea salt for sprinkling, to taste

Steps:

  • Line a baking tray with parchment paper; set aside. Before beginning to melt the chocolate, have all the ingredients chopped, prepped, and ready to go so that they're ready to be added while the chocolate is hot and melty. I use my Mini-Prep Plus Food Processor to grind the nuts in seconds rather than hand-chopping, but I hand-chop the cookies.
  • Coarsely chop the chocolate or break into chunks to encourage smooth melting.
  • Place chocolate in a large microwave-safe bowl. Heat on high power to melt, about 2 to 3 minutes, stopping every 15 seconds to check and stir until mixture can be stirred smooth. Be careful not to scorch it; or use a double boiler.
  • Pour melted chocolate onto parchment and with a spatula or offset knife, smooth into a large rectangle, about 10×15-inches, and about 1/8-inch thick; just eyeball.
  • Evenly sprinkle with pretzels, Oreos, toffee bits, peanuts, almonds, and sea salt to taste.
  • Allow chocolate to set up for at least 1 hour at room temp, or in the freezer for about 30 minutes.
  • After chocolate has set, break into pieces or chop with a knife. Bark will keep airtight at room temp for many weeks and in the fridge or freezer for many months.

A Trader Joe's copycat. Melted chocolate with a mix of almonds, peanuts, pretzels, chocolate Oreos (or Jo-Jo's), and toffee. You can change the proportions of the add-ins according to your preferences.

1/2 cup small pretzels
10 oreo chocolate cream-filled chocolate sandwich cookies, roughly chopped
1/2 cup toffee pieces (like Heath toffee bits)
1/2 cup peanuts, coarsely chopped
1/2 cup almonds, coarsely chopped
sea salt, to taste

Steps:

  • Line a baking pan with parchment paper.
  • Roughly chop the Oreos. You want fairly big chunks.
  • Coarsely chop the almonds and peanuts. I used a small food processor.
  • Measure out the pretzels. You want everything chopped and measured before you melt the chocolate.
  • Coarsely chop the chocolate or break into small chunks.
  • Put chocolate into a microwave safe bowl, place in microwave oven, and heat on high to melt, about 2 to 3 minutes. Stop every 15 seconds to check and stir until mixture can be stirred smooth. Be careful not to scorch it. You can also use a double-boiler instead of the microwave.
  • Pour chocolate onto parchment, and smooth into a large rectangle with a spatula, around 10x15-inches and 1/8-inch thick.
  • Immediately sprinkle evenly with pretzels and Oreos, then toffee, peanuts, almonds, and sea salt to taste and press in lightly.
  • Let it set for 1 hour at room temperarure or 30 minutes in the freezer.
  • Break into pieces.
  • It will keep for weeks in an airtight container.

  • Line a large baking sheet with parchment paper and set aside. Heat chocolate in microwave for 30 seconds, then remove and give it a stir. Continue melting chocolate in 15-second intervals, stirring after each time. When chocolate is about 80% melted, remove from microwave and stir until smooth.
  • Pour melted chocolate onto parchment paper and spread about 1/8" thick. You should end up with a rectangle that’s roughly 10" x 15". Evenly distribute the mini pretzels and chocolate cookies over the wet chocolate and press lightly to adhere.
  • Sprinkle with toffee bits, chopped peanuts and almonds and set aside for at least an hour to harden at room temperature. You may place bark in refrigerator or freezer to speed up the process. Once chocolate is firm, break into pieces and serve.
