COUNTRY STYLE MEATLOAF RECIPE

This easy to make meatloaf recipe is the ultimate comfort food made from few ingredients and that is guaranteed to bring smiles around your table.

¾ loaf Italian Bread (soaked in water and squeezed)
1 seeded medium-diced red bell pepper
1 seeded medium-diced green bell pepper
1 peeled small-diced yellow onion
4 finely minced cloves of garlic
3 ½ pounds 90/10 ground beef
4 large eggs
1 ½ tablespoons Worcestershire sauce
sea salt and pepper to taste
¾ cup ketchup
1/3 cup packed light brown sugar
2 tablespoons soy sauce

Steps:

  • Preheat the oven to 375°.
  • Add the squeezed out wet bread to a large bowl along with the peppers, onions, garlic, ground beef, eggs, Worcestershire sauce, salt and pepper and mix thoroughly until completely combined.
  • Divide the mixture between to 9x5 prepared loaf pans and pack it in tight. You can line one of the pans with bacon as I did in the video for extra flavor if you prefer.
  • In a small bowl mix together the ketchup, brown sugar, and soy sauce until combined and add it to the top of the meatloaf and spread around to coat the top.
  • Bake in the oven at 375° for 50-60 minutes or until cooked throughout and reads 165° internally.
  • Rest for 3-4 minutes, slice, and serve.

This country meatloaf recipe is a shaped loaf made with ground round, onions and carrots. A nicely seasoned everyday meatloaf.

2 tablespoons unsalted butter
8 ounces sliced mushrooms
1 cup chopped onion
1 cup thinly sliced celery
3/4 shredded carrots
2 tablespoons water
2 pounds ground round or lean ground beef (85 to 90 percent lean)
1/2 cup flour
1 1/2 teaspoons seasoned salt
1/4 teaspoon dried leaf thyme
1 tablespoon fresh chopped parsley, or 1 teaspoon dried parsley flakes
2 tablespoons light soy sauce

Steps:

  • Gather the ingredients.
  • In a skillet, melt butter over medium heat; add mushrooms, onion, celery, carrots, and water.
  • Heat to boiling; cover and cook for 10 minutes, or until vegetables are just tender-crisp.
  • In a large bowl, combine ground beef, flour, seasoned salt , thyme, parsley, soy sauce, and the cooked vegetables.
  • Mix gently and shape into a loaf in a greased, shallow baking pan (with sides).
  • Bake the meatloaf at 350 F for about 1 hour to 1 hour and 10 minutes, or until the loaf is crusty and browned. The meatloaf is done when it reaches 160 F on a meat thermometer.

2 eggs
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1/2 teaspoon pepper
1 package (6 ounces) corn bread stuffing mix
1-1/2 pounds ground beef
1/2 pound ground veal
1/4 pound ground pork

Steps:

  • In a large bowl, beat eggs. Add soup, pepper and stuffing mix. Combine beef, veal and pork; crumble over egg mixture and mix well. , Press into a 9x5-in. loaf pan. Bake at 350° for 1-1/2 hours or until no pink remains and a thermometer reads 160°. Drain.

This meatloaf recipe has been in my 3-ring binder of recipes clipped and pasted from magazines for a long time. I think it may originally have been from Good Housekeeping magazine. Anyway, it's one of the best meatloafs I've ever had and I'm posting it on Zaar for safekeeping!Leftovers make GREAT meatloaf sandwiches!

1 tablespoon cooking oil
1 medium onion, diced
1 stalk celery, diced
3 slices white bread or 3 slices whole wheat bread
2 lbs lean ground beef
1 medium carrot, shredded
1 teaspoon salt
1/4 teaspoon fresh ground pepper
1 egg (can use an egg substitute such as Eggbeaters)
1 (8 ounce) can tomato sauce
1 tablespoon light brown sugar
1 tablespoon cider vinegar
1 tablespoon prepared yellow mustard

Steps:

  • In medium frying pan over medium heat, saute onion and celery until tender, about 10 minutes, stirring occasionally.
  • Into large bowl, tear bread into small pieces.
  • Add onion mixture, ground beef, carrot,salt,pepper,egg, and 1/2 of tomato sauce and mix well with a spoon.
  • Turn mixture into a meatloaf pan( I use one with an insert that lets any grease drip to the bottom of the pan) and shape into a loaf.
  • If not using a meatloaf pan, in a 12" by 8" baking dish, shape mixture into a 8" by 4" loaf.
  • In a small bowl, mix the brown sugar, vinegar, mustard, and remaining tomato sauce.
  • Spoon mixture evenly over meatloaf in pan.
  • Bake at 350 degrees for 1 1/2 hours.
  • Serve meatloaf warm or cover and refrigerate to serve cold later.

1/2 cup onions (small diced)
1/2 cup celery (small diced)
1/2 cup red bell peppers (small diced)
1 pound ground pork
2 pounds ground sirloin
3/4 cup tomato ketchup
3 eggs (whole)
3/4 cup half and half
1-1/4 cups oatmeal
20 slices smoked bacon
1 1/2 teaspoons salt (kosher, coarse)
1 teaspoon red pepper flakes
1/2 teaspoon ground coriander seed
1/2 teaspoon celery seed
1/2 teaspoon ground cumin seed

Steps:

  • Lightly steam onions, celery, and bell peppers and let cool. Place the cooled vegetables into a mixing bowl and add the pork, sirloin, ketchup, eggs, half and half and mix well. Mix in the oatmeal and spice mix. Place the meat into a loaf pan lined with bacon strips. Place in refrigerator overnight so that the meat loaf firms up. When ready for use, remove from the refrigerator; cover the top of the loaf pan with aluminum foil; place in a pre-heated 350 degree oven on top of a roasting pan. Do this to prevent the overspill from making a mess out of your oven and cook until the inside temperature (with a thermometer) reaches 165 degrees (about 1 1/2 hours). 15 minutes before it is done, remove the foil - this will allow the top to brown. Remove from the oven and pour out excess oil and let it sit for 20 minutes. Turn the loaf pan upside down to remove the meatloaf. Slice with a sharp knife.

2 Tsp Vegetable oil
1 Medium Onion chopped
2 Cloves Garlic minced
2 Large Eggs
1 Tsp Salt
1/2 Tsp Ground black pepper
2 Tsp Dijon mustard
2 Tsp Worcestershire sauce
1/4 Tsp Hot red pepper sauce
1/2 Cup Whole milk
2 Lbs Meat loaf mix (50%beef, 25% pork, 25 % veal)
2/3 Cup Crushed saltines (about 16)
1/3 Cup Fresh parsley chopped Minced
6-8 Oz Thin sliced bacon
Glaze
1/2 Cup Ketchup or chili sauce
4 Tbsp Brown sugar
4 Tsp Cider or white vinegar

Steps:

  • Heat oven to 350 Heat oil in med. skillet - add onion and garlic and saute until softened, about 5 min. Set aside to cool while preparing remaining ingredients. Mix eggs with thyme, salt, pepper,mustard, worchestershire sauce, pepper, pepper sauce, and milk. Add egg mixture to meat in large bowl with crackers, parsley, and cooked onion mixture. Mix until evenly blended and meat mixture does not stick to bowl. If it sticks add additional milk a few tbsp at a time, until no longer sticks. Shape into loaf on cookie sheet lined with foil for easy clean-up. Brush with half of the glaze and arrange bacon slices over top tucking ends under loaf. Bake until bacon is crisp and internal temp is 160 (about an hour). I found that it took longer at 375. Cool 20 min. Simmer remaining glaze until slightly thickened. Slice meatloaf and serve with extra glaze.

I have three small children and I'm always trying new meat loaf recipes. This recipe is something I developed, and it's one of the first meat loaves that my kids really went for. See if your kids like it, too!

HERB SAUCE:
1/4 cup olive oil
8 ounces fresh mushrooms, chopped
1 large onion, finely chopped
1 garlic clove, minced
1 can (28 ounces) crushed tomatoes
1 can (6 ounces) tomato paste
1 teaspoon salt
1/8 teaspoon pepper
2 teaspoons sugar
1 cup water
1 bay leaf
2 tablespoons chopped fresh basil or 2 teaspoons dried basil
MEAT LOAF:
2 pounds ground beef or combination of ground beef, pork and veal
1 cup seasoned dry bread crumbs
3 tablespoons milk
2 large eggs, beaten

Steps:

  • In a skillet, heat oil on high. Saute the mushrooms; onion and garlic. Add tomatoes, tomato paste, salt, pepper and sugar. Remove 1-1/2 cups. Add water, bay leaf and basil to skillet. Simmer, uncovered, for 45 minutes, stirring occasionally. , Meanwhile, combine all meat loaf ingredients with 1-1/2 cups reserved sauce. press into a 9x5-in. loaf pan lined with waxed paper. Unmold onto a roasting pan. Bake at 350° for 45 minutes or until no pink remains and a thermometer reads 160°. Remove from oven; drain. Spread 1/2 cup of herb sauce over top of meat loaf. Return to oven for 15 minutes. Discard bay leaf and serve remaining sauce over individual servings.
