Garlic Herb Mashed Potatoes image

Garlic Herb Mashed Potatoes, made with roasted garlic, fresh herbs, and gold potatoes, are an easy side dish recipe perfect for dinner!

Number Of Ingredients 8

2 pounds gold potatoes
1 cup beef broth
4 tbsp cream cheese
4 tbsp unsalted butter
4 tbsp roasted garlic
4 tbsp fresh herbs (minced (basil, chives, rosemary, oregano, etc))
2 tsp salt
freshly ground pepper

Steps:

  • Clean potatoes and cut into 1-inch sized pieces. Cook in covered pot over medium heat in broth until very tender, about 30-40 minutes. Alternatively, cook on high pressure in electric pressure cooker for 12 minutes.
  • Add cream cheese, butter, roasted garlic, herbs, salt and pepper to cooked potatoes and mash together until well blended. Add additional salt and pepper, if needed.

The most perfect buttery herbed mashed potatoes. Made simply with cream, fresh herbs, a little garlic, and a good amount of butter. Each bite is perfect and so delicious. The secrets? Crème fraîche for creaminess, and herbed brown butter for incredible flavor. The best part is that you can make these mashed potatoes ahead of time for easy entertaining!

Number Of Ingredients 10

5 pounds Yukon gold potatoes, peeled and cubed
4 cloves garlic, peeled and smashed
kosher salt
1 cup whole milk or heavy cream
1 1/2 sticks (12 tablespoons) salted butter, at room temperature
8 leaves fresh sage, 6 whole leaves + 1 Tbsp chopped)
3 sprigs fresh thyme
3/4 cup crème fraîche
fresh black pepper
chopped fresh chives, for serving

Steps:

  • 1. In a large pot of cold water, bring the potatoes and garlic to a boil. Salt the water and cook until the potatoes are tender, about 20 to 30 minutes.2. Meanwhile, heat the cream, 4 tablespoons butter, 1 tablespoon chopped sage, and the thyme sprigs over medium heat until the butter has melted. Remove from the heat and let the herbs sit in the warm cream until the potatoes are done. Remove the thyme sprigs before adding to the potatoes. 3. Drain the potatoes, return the potatoes to the pot and mash over low heat, or mash in the bowl of stand mixer fitted with the paddle attachment. Add the herbed cream and crème fraîche. 4. In a skillet, melt 6 tablespoons butter and the sage leaves over medium heat until just browned. The butter will melt, foam and froth, then begin to brown along the bottom. Whisk browned bits off of the bottom of the pan. Remove the sage leaves. Pour the browned butter into the warm mashed potatoes. Taste and season with salt and pepper.5. Serve the potatoes warm, topped with the remaining 2 tablespoons butter, sage and fresh chopped chives.

½ cup salted butter, cubed
2 teaspoons chopped fresh rosemary
1 teaspoon chopped fresh sage

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain.
  • Meanwhile, combine butter, rosemary, sage, thyme, and marjoram in a large microwave-safe bowl. Microwave on high power until melted, about 30 seconds.

2 tablespoons salt, plus more to taste
1 1/2 cups milk or cream
1/2 cup (1 stick) unsalted butter, cut into small pieces
1/2 teaspoon freshly ground black pepper
1/3 cup chopped fresh herbs, such as parsley, dill or basil

Steps:

  • Peel potatoes, and cut them into 1/2-inch-thick slices. Place potatoes in a large saucepan, and cover with cold water. Stir in 2 tablespoons salt. Place pan over high heat, and bring water to a boil. Reduce heat to low, and simmer until potatoes are tender when pierced with the tip of a knife. Drain potatoes in a colander.
  • Heat milk in a small saucepan over medium-high heat until it just comes to a simmer; reduce heat to low, and keep warm. Place a heat-proof bowl on top of a pan of simmering water. Using a potato ricer, press hot, drained potatoes into bowl. Stir potatoes with a wooden spoon until smooth, about 1 minute.
  • Stir in butter until completely melted and well incorporated. While stirring continuously, slowly pour in hot milk. Stir in fresh herbs, pepper, and salt to taste. Serve immediately.

4 lbs baking potatoes, peeled and cut into 1 inch pieces
6 cloves garlic, peeled
1/2 cup milk
2 tablespoons butter
2 tablespoons finely chopped fresh rosemary or 1 teaspoon dried rosemary
2 tablespoons finely chopped fresh chives
2 tablespoons finely chopped fresh parsley
1/2 cup sour cream
salt
white pepper

Steps:

  • Place potatoes and garlic in a heavy saucepan, cover with cold water and bring to a boil.
  • Reduce heat and simmer partly covered about 15 minutes or until potatoes are fork-tender.
  • Drain well, return the potatoes to the pan and place over high heat.
  • Briefly stir or shake the pan to keep potatoes from sticking or burning until the outside of the potatoes begin to dry to a white color (1 to 2 minutes).
  • Remove from heat.
  • While the potatoes are cooking,chop the herbs, add the milk and butter to a small sauce pan and heat until butter is melted.
  • Remove from heat and stir in the rosemary, chives and parsley.
  • With an electric mixer, beat the potatoes and garlic until smooth.
  • Beat in the milk-herb mixture, sour cream and season with the salt and pepper.

2 pounds russet potatoes (about 4 medium), peeled and cut into 1-inch pieces
1 teaspoon kosher salt, plus more as needed
1/4 cup extra-virgin olive oil
1 teaspoon finely chopped fresh basil
1 teaspoon minced fresh flat-leaf parsley
1 teaspoon minced fresh tarragon
Freshly ground black pepper

Steps:

  • In a large saucepan, combine the potatoes, 1 teaspoon salt and cold water to cover. Bring to a boil over high heat. Lower the heat to maintain a simmer and cook until fork-tender, about 10 minutes. Drain the potatoes, reserving 1/2 cup of the cooking liquid. Return the potatoes to the pan. Shake the pan over medium heat for about a minute to dry the potatoes. Transfer the potatoes to a food mill, ricer or bowl.
  • Add the oil and reserved cooking liquid to the saucepan and warm over medium heat. Remove the pan from the heat. Mash the potatoes through the food mill or ricer into the pan (or mash by hand in the bowl and transfer to the pan). Add the basil, parsley and tarragon and stir to combine. Season with salt and pepper. Serve immediately.

3 pounds yellow-fleshed potatoes such as Yukon Gold

Steps:

  • Bring milk with parsley and chives to a simmer in a saucepan, then remove from heat. Let stand, covered, 20 minutes.
  • While milk is standing, cover potatoes with salted cold water by 2 inches in a large pot and simmer, uncovered, until very tender, 20 to 30 minutes. Drain in a colander and, when just cool enough to handle, peel.
  • Preheat oven to 350°F.
  • Mash warm potatoes with a potato masher, gradually adding 1 1/2 cups herbed milk. Add remaining milk 1/4 cup at a time, mashing, until potatoes reach desired consistency. Season with sea salt and pepper, then transfer to an ovenproof serving dish.
  • Heat potatoes, covered, in middle of oven 15 minutes. (If making potatoes to go with lamb, you can heat potatoes while lamb stands.)
  • Serve potatoes hot, topped with pats of butter.
