1/2 cup chopped mushroom
1/2 cup chopped onion
1/2 cup chopped celery
1 clove garlic, minced
1/4 teaspoon marjoram, crushed
4 1/2 cups water
3/4 cup tomato paste
4 cups elbow macaroni
2 teaspoons salt
1 teaspoon sugar
1/4 cup parsley, chopped
2 cups cottage cheese
1/3 cup grated parmesan cheese

Steps:

  • Saute first 5 ingredients in a large skillet.
  • Stir in next 6 ingredients and simmer until macaroni is tender, about 25 minutes.
  • Mix next 3 ingredients together.
  • Put 1/2 the macaroni mixture in a greased 2-qt casserole dish.
  • Top with 1/2 the cottage cheese mixture.
  • Repeat layers.
  • Bake at 350 degrees for 40 minutes.

This is the easiest and best egg casserole I have tried so far. My sweet mother-in-law shared this recipe with me. I make 3 or 4 at the time and keep them in the freezer to take to gatherings, feed guests, or surprise kids. Green chilies make it pop!

10 eggs, beaten
2 (16 ounce) packages cottage cheese
1 pound shredded Monterey Jack cheese
1 (4 ounce) can diced green chiles
½ cup butter, melted
½ cup all-purpose flour
½ cup cooked crumbled bacon
1 teaspoon baking powder

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a 10x13-inch baking dish with cooking spray.
  • Mix eggs, cottage cheese, Monterey Jack cheese, green chiles, butter, flour, bacon, and baking powder together in a large bowl; pour into prepared baking dish.
  • Bake in the preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking until a toothpick inserted into the center of the casserole comes out clean, about 30 minutes more.

1 large onion
2 lbs crookneck yellow squash, sliced
1/2 lb mushroom, sliced
4 garlic cloves, diced
4 tablespoons oil
2 eggs
1 pint cottage cheese
8 ounces monterey jack cheese, grated
1/2 teaspoon thyme (or more)
1/2 teaspoon garlic powder
kelp (optional)
parmesan cheese
salt

Steps:

  • Cut onion in half (from north to south), then in slices.
  • Sautee squash, mushrooms, onion and garlic in oil until squash is slightly tender.
  • Meanwhile, mix together eggs and cottage cheese.
  • To assemble:.
  • Place vegetables in bottom of 9 x 13 casserole dish, being careful to drain off all liquid.
  • Spread cottage cheese mixture on top.
  • Sprinkle with spices as desired.
  • Sprinkle grated cheese on top.
  • Lightly toss mixture with fork.
  • Bake, uncovered, in 350 degree oven for 30 minutes.

1/3 cup rye flakes or 1/3 cup old fashioned oats
2 3/4-3 cups water
1 1/2 cups buckwheat groats
1 1/2 teaspoons dried dill or 1/4 cup fresh dill, chopped
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 tablespoon unsalted butter, plus more for preparing the pan
1 1/2 cups low fat cottage cheese
2 large eggs, lightly beaten
2 tablespoons sugar (optional) or 2 tablespoons honey, beaten with the eggs (optional)
3/4 cup sour cream
1/8 teaspoon sweet paprika

Steps:

  • Set a rack in the center and preheat the oven to 350°F.
  • Butter an 8-inch square baking dish. Coat the bottom and halfway up the sides with the rye flakes or oatmeal. Set aside.
  • In a heavy 2-quart Dutch oven or saucepan, combine 2 3/4 cups of water with the buckwheat, dill, 1/2 teaspoon of the salt, and the pepper.
  • Bring to a boil over high heat. Stir in butter.
  • Cover, reduce the heat to low, and simmer until the buckwheat is tender, about 10 minutes.
  • Stir in another 1/4 cup of water if the mixture gets dry before the buckwheat is tender.
  • Transfer the cooked buckwheat to a medium bowl.
  • Stir in the cottage cheese, followed by the eggs and the remaining 1/2 teaspoon salt.
  • Pour the mixture into the prepared baking pan.
  • With a rubber spatula, spread the sour cream in a layer on top.
  • Dust with paprika.
  • Bake until the edges are firm and the center is set, 45 to 50 minutes.
  • Remove from the oven and let cool for 5 minutes.
  • Run a knife along the edges and cut into 8 portions.
  • Use a spatula to remove the pieces from the pan.

I found this recipe in a cookbook given to me for Christmas called "Irish Cooking". The casserole is really simple to make, and it has an almost quiche-like texture to it. The original recipe called for regular cottage cheese, but we actually had FAT FREE on hand. I don't think it took away from the flavor of the dish at all. This dish might also be nice served at brunch or breakfast.

6 medium crookneck (yellow) squash
2 teaspoons salt, divided
7 tablespoons unsalted butter, at room temperature, divided
1 (8 ounce) container sour cream
4 ounces shredded Cheddar cheese
½ cup grated Parmesan cheese
5 medium green onions, chopped
4 teaspoons white sugar
1 cup bread crumbs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Slice squash.
  • Add 1 teaspoon salt to a pot of water and bring to a simmer. Add squash slices and simmer, uncovered, for 15 minutes. Drain.
  • Put squash in a bowl and add 4 tablespoons butter. Gently blend in sour cream, Cheddar cheese, Parmesan cheese, green onions, sugar, and remaining 1 teaspoon salt. Transfer to a round casserole dish. Top with bread crumbs and dot with remaining 3 tablespoons butter.
  • Cook in the preheated oven until hot and bubbly, about 30 minutes.

2 (10 ounce) cans white meat chicken, drained and flaked
1 (10.5 ounce) can condensed cream of chicken soup

1 (8 ounce) package shredded Cheddar cheese
¼ cup creamy salad dressing (such as Miracle Whip®)
1 tablespoon lemon juice
1 sleeve butter-flavored crackers, crushed
¼ cup butter, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine broccoli and 1/2 cup water in a saucepan over medium heat. Cover and cook until tender, about 10 minutes. Drain.
  • Transfer broccoli to a 9x13-inch casserole dish. Add chicken, condensed soup, cottage cheese, Cheddar cheese, salad dressing, and lemon juice and mix until well combined.

HOMEMADE COTTAGE CHEESE (CROCK-POT)



Homemade Cottage Cheese (Crock-Pot) image

So easy to make and healthy too! Recipe came from the Rennet package, which is available at health food store, and some supermarkets. Please read all the insturctions before beginning. I've found it easier to use a crockpot, however I've included the directions for preparing on the stovetop. Note however, you will need to assemble a double-boiler of sorts. It's for this reason that I found the crockpot worked best.

1 gallon skim milk
1/2 cup water
5 drops liquid rennet
1/4 cup buttermilk
1 teaspoon salt
1/3 cup cream
salt (to taste)

Steps:

  • Add the rennet liquid to the 1/2 cup of water, set aside.
  • Heat skim milk to 85 degree F and maintain temperature for one minute.
  • Add buttermilk and Rennet solution and stir well.
  • Cover with towel and leave at room temperature (70 degrees F) for 12 to 18 hours. A firm curd will forms and a little Whey will appear on the surface. (To test for firm curd, remove a milk sample at a point near the edge of the pan or bowl with a spoon. The curd is ready when the coagulated milk sample holds its shape and the edges are sharply defined.).
  • Cut the curd into 1/2 inch squares by passing a long knife through the curd lengthwise and crosswise of the container.
  • Heat curd slowly over hot water until temperature reaches 110ºF.
  • Hold this temperature for 20-30 minutes, stirring every 5 minutes to help distribute the heat evenly and keep the curd from sticking together.
  • Note: If using a double boiler bring the water to boil and then turn off and watch closely, otherwise it may overheat and you'll have 'cheese'. In my crockpot I turn to high and keep a close eye on the temperature; stirring around the edges and bottom every 5 minutes. Once it gets up to 100 degrees, I turn it to low until it reaches 110, then turn to the keep warm setting. Each crockpot is a little differnt so watch it carefully. I've also read where the container with the curd can be microwaved on high for 1 minute, then stirred and let stand for 5 minutes; but I haven't tried this method yet.
  • Immediately pour the the curd into a bowl, or collendar that is lined with cheese cloth and drain for several minutes; shifting the cloth occassionally to help drain off the Whey.
  • Once the Whey has been drained off, immerse curd in the cheese cloth in a bowl of cold water for approximately 2 minutes.
  • Drain the Whey from the curd and transfer the cheese to a bowl.
  • Mix in salt and cream.
  • Chill before serving.
