CORNISH BEEF AND VEGETABLE TURNOVERS



Cornish Beef and Vegetable Turnovers image

Number Of Ingredients 18

For dough
2 1/2 cups unbleached all-purpose flour
3/4 teaspoon salt
1 stick (1/2 cup) cold unsalted butter, cut into bits
1 large egg yolk
1/3 to 1/2 cup ice water
1 large egg, lightly beaten, for brushing pastry
For filling
3 tablespoons vegetable oil
12 oz small mushrooms, thinly sliced
1 medium onion, finely chopped
2 garlic cloves, finely chopped
1 large russet (baking) potato
1 1/2 lb skirt steak, cut into 1/2-inch cubes
2 carrots, coarsely chopped
2 tablespoons chopped fresh flat-leaf parsley
1 1/2 teaspoons kosher salt
1/2 teaspoon black pepper

Steps:

  • Make dough:
  • Blend together flour, salt, and butter in a bowl with your fingertips or a pastry blender (or pulse in a food processor) until mixture resembles coarse meal with some roughly pea-size lumps.
  • Beat together yolk and 1/3 cup ice water, then drizzle over flour mixture and gently stir with a fork (or pulse in processor) until incorporated.
  • Gently squeeze a small handful of dough: If it doesn't hold together, add more ice water, 1/2 tablespoon at a time, stirring (or pulsing) after each addition until just incorporated, continuing to test. (If you overwork dough or add too much water, pastry will be tough.)
  • Turn dough out onto a lightly floured work surface and divide into 6 portions. With floured heel of your hand, smear each portion once in a forward motion to help distribute fat. Form each portion into a disk, rotating on work surface. Wrap disks separately in wax paper or plastic wrap and chill until firm, at least 1 hour and up to 8.
  • Make filling while dough chills:
  • Heat 1 tablespoon oil in a large heavy skillet over moderately high heat until hot but not smoking, then sauté mushrooms, stirring, until browned and dry, about 6 minutes. Transfer to a large bowl. Add remaining 2 tablespoons oil to skillet and cook onion and garlic over moderate heat, stirring, until softened, about 5 minutes. Add onion to mushrooms. Peel potato and cut into 1/2-inch cubes, then add to mushroom mixture with steak, carrots, parsley, salt, and pepper, tossing well. Cool completely.
  • Assemble pasties:
  • Roll out 1 piece of dough on lightly floured surface into a 9-inch round (keep remaining pieces covered). Mound 1 cup filling on round, slightly off center. Brush a 1/2-inch border on dough with water and fold dough over to form a half-moon. Trim edge with a fluted pastry wheel or a knife, then crimp to seal. Cut 3 small steam vents in top crust with a sharp knife and put pasty on 1 of 2 buttered large baking sheets. Make more pasties with remaining dough and filling, then chill 30 minutes, loosely covered.
  • Preheat oven to 350°F.
  • Brush pasties with egg and bake in upper and lower thirds of oven, switching position and rotating sheets halfway through baking, until golden, about 40 minutes total. Cool slightly before serving.

2 teaspoons confectioners' sugar
1 teaspoon salt
3 ounces cold, unsalted butter, cut into pieces
4 ounces lard or vegetable shortening, cut into pieces
1 egg yolk
6 tablespoons cold water
10 ounces chuck steak, trimmed and cut into scant 1/4-inch dice
1 small onion, very finely chopped
1 medium carrot, cut into 1/4-inch dice
1 small Idaho potato, cut into 1/4-inch dice
1 1/2 teaspoons salt
3/4 teaspoon freshly ground black pepper
1 egg, lightly beaten
2 1/4 cups all-purpose flour

Steps:

  • For the pastry: Sift the flour, confectioners' sugar, and salt into a mixing bowl and add the butter and lard. Using your fingers, 2 knives, or a pastry blender, cut the butter and lard into the dry ingredients until mixture resembles fine crumbs. In a small bowl, whisk the egg yolk and water together and add to the flour mixture. Mix quickly, but thoroughly, until mixture just comes together to form a dough. Knead briefly until pastry is smooth with no cracks; the trick to making this delicate pastry easy to work with is kneading it just enough so that it can be rolled out and manipulated without breaking but yet retains its lovely crumbly texture. Press into a flattened disk shape and wrap in plastic. Refrigerate for at least 30 minutes and up to overnight before proceeding.
  • Remove the pastry from the refrigerator and unwrap. Allow to soften slightly, then place on a lightly floured work surface and roll the pastry to a thickness of 1/4-inch. Using a small plate or saucer as a guide, cut out 6 (6-inch) rounds. (Scraps may be combined and reformed if you cannot get 6 rounds out of the first batch.) Stack the pastry rounds onto pieces of plastic wrap or parchment paper (with pieces between each round to keep them from sticking together) and refrigerate while you prepare the filling.
  • For the filling: Preheat the oven to 400 degrees F.
  • Remove the pastry circles from the refrigerator. In a mixing bowl, combine the meat, onion, carrot, potato, salt and pepper and mix until thoroughly combined. Place the pastry circles on a clean work surface and place about 1/2 cup of the filling in the center of 1 side of the pastry. Using the beaten egg, brush the edges of the pastry and then bring the unfilled side over the filled side so that edges meet. Press edges together to seal and then crimp using your fingers or a fork. Repeat with the remaining turnovers and then transfer to a baking sheet. Brush the tops of the turnovers with the remaining egg and then cut several slits into the top of each pastry. Bake for 20 minutes, or until pastry is golden brown around the edges. Reduce the heat to 350 degrees F and continue to bake until the pasties are golden brown. Remove from the oven and allow to cool for 10 to 15 minutes before serving.

HEINZ 57 CHICKEN TURNOVERS

1 Package (13.8 oz.) refrigerated pizza crust dough
1/2 cup Heinz 57®
1/2 cup Prepared spinach dip
2 cups Frozen cooked fajita-style chicken strips, thawed and chopped
1/2 cup Chopped red bell pepper

Steps:

  • Preheat oven to 400 degrees F. Coat a large baking sheet with nonstick cooking spray. Sprinkle work surface with a pinch of flour or cornmeal to prevent dough from sticking if desired. Unroll dough onto work surface and cut into 4 pieces.
  • In a small bowl, mix together Heinz 57® and spinach dip until smooth. Spread about 1/4 cup of Sauce mixture evenly on each piece of dough, leaving 1/2-in. around the edge. Arrange 1/2 cup of chicken and 2 Tbsp. of pepper onto one half of a dough piece. Gently fold dough over the filling to form a triangle shape. Seal the edges by crimping with fingertips or with a fork. Cut 1 or 2 slits on top of crust. Repeat with remaining dough pieces. Transfer turnovers to baking sheet and lightly coat with nonstick cooking spray.
  • Bake for 12 to 15 minutes, or until golden brown. Serve immediately.
  • TIP: If desired, add your favorite vegetables such as chopped tomatoes, sliced onions, roasted peppers or sliced mushrooms, to the filling.

WAFFLED TURNOVER

1 package (2 sheets) frozen puff pastry, thawed
1 1/2 cups apple pie filling, coarsely chopped
Nonstick cooking spray, for spraying the waffle iron

Steps:

  • Preheat a large square Belgian waffle iron.
  • Unroll the puff pastry sheets and cut each evenly into 4 squares. To assemble, roll out 1 square of puff pastry with a rolling pin into at least a 5-by-5-inch square. Place 3 tablespoons apple pie filling in the center and fold the pastry over to form a triangular pocket. Use a fork to crimp the edges. Repeat with the remaining puff pastry squares and apple filling.
  • Spray the waffle iron with nonstick cooking spray. Place 1 turnover into each of the 4 square areas on the waffle iron. Close the top and cook for 4 1/2 to 5 minutes; the pastry will be golden brown and toasted. Repeat with the remaining turnovers.

1 large leek, white and light green part only, thinly sliced
1 medium carrot, peeled and chopped into 1/4-inch rounds
4 ounces button or cremini mushrooms, sliced
One 6-ounce Yukon gold potato, peeled and diced into 1/2-inch pieces
2 cloves garlic, minced
3 tablespoons chopped fresh thyme leaves
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons unsalted butter, at room temperature
2 tablespoons all-purpose flour
1 cup milk, at room temperature
1/3 cup grated Parmesan
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
Pinch ground nutmeg
1 large store-bought rotisserie chicken breast, shredded to yield 1 1/2 cups of meat
Kosher salt and freshly ground black pepper
All-purpose flour, for dusting
One 9-inch square sheet frozen puff pastry, thawed
1 large egg, beaten

Steps:

  • Place an oven rack in the center of the oven and preheat to 400 degrees F. Line a baking sheet with parchment paper.
  • For the filling: Heat the oil over medium-high heat in a large skillet. Cook the leeks until slightly softened, about 3 minutes. Add the carrots, mushrooms, potato, garlic, thyme, salt and pepper. Stir frequently until the vegetables are tender, about 12 minutes.
  • For the sauce: Melt the butter over medium heat in a 1-quart saucepan. Add the flour and whisk until smooth, about 2 minutes. Add the milk, whisking constantly to prevent lumps. Simmer over medium heat, whisking constantly, until the sauce is thick and smooth, about 10 minutes. Remove the pan from the heat and stir in the cheese, salt, pepper and nutmeg.
  • Combine the vegetable mixture, sauce and chicken in a medium bowl. Season with salt and pepper. Cool the filling completely, about 20 minutes.
  • Roll out the pastry into a 10-by-10-inch square on a lightly floured surface. Transfer the pastry to the prepared baking sheet. Lightly brush the edges of the pastry with beaten egg using a pastry brush. Spoon the filling onto one side of the pastry. Fold the pastry over to encase the filling. Fold and crimp the edges of the pastry together to seal the filling. Brush the top of the pastry with beaten egg. Cut a 1/2-inch-long slit in the top of the pie using a paring knife.
  • Bake until puffed and golden, 30 to 35 minutes. Cool for 15 minutes and slice into 4 pieces.

1 tablespoon vegetable oil
1 pound ground beef extra-lean
1 russet potato medium, peeled and diced
1/2 cup green beans cooked and finely chopped
1 carrot pared and finely cubed
1/2 cup green onion chopped
1/2 teaspoon salt
1 tablespoon celery minced
1 tablespoon parsley minced fresh
Freshly ground pepper to taste
1 teaspoon Italian herb seasoning, crushed
Tabasco® pepper sauce to taste
3 tablespoons water
2 eggs yolk

Steps:

  • Prepare lard pastry refrigerate dough for 1 hour, covered. Heat oil in large skillet add meat and brown, stirring frequently. Add potato, green beans, carrot, green onions, salt, celery, parsley, pepper, Italian herb seasoning, and Tabasco®, stir-fry for 3 minutes. Add 1 tablespoon water, cover, and steam another 2 minutes. Cool. Roll out pastry dough 1/8 -inch thick cut into 5-inch rounds and fill with cooled filling. Moisten edges with water, fold rounds in half, and press down edges with tines of a fork. Place on lightly greased cookie sheet. Beat together egg yolks and 2 tablespoons water brush over pastries. Bake in a preheated 375° F oven for 30 to 40 minutes. Brush with egg wash 3 times during baking period to make crust crisp and golden. When cool, wrap in foil to transport to picnic.
