Corned Beef Hash Benedict with Cheesy Mornay Sauce image

3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 to 1 1/2 cups whole milk
1/2 cup shredded Gruyere
2 tablespoons Dijon mustard
1/8 teaspoon grated nutmeg
Kosher salt and freshly ground white pepper
2 tablespoons olive oil
1 large shallot, diced
1 pound deli corned beef, sliced 1/4 to 1/2 inch thick and diced
Butter, for the English muffins
2 English muffins, split and lightly toasted
2 tablespoons honey
2 Roma tomatoes, sliced
Kosher salt
4 sunny-side up eggs
2 tablespoons minced chives

Steps:

  • For the Mornay sauce: Add the butter to a medium pot set over medium heat. Add the flour and cook, whisking, until blonde in color, 2 to 3 minutes. Slowly whisk in 1 cup of the milk until combined. Add the Gruyere, mustard and nutmeg and simmer, whisking occasionally, until thick, about 10 minutes. Season with salt and white pepper. Keep warm over low heat, whisking occasionally and adding up to 1/2 cup additional milk to thin if needed, until ready to plate.
  • For the corned beef hash: Heat a medium pan over medium heat. Add the oil and shallots and saute until translucent and slightly golden, about 10 minutes. Add the corned beef and saute until crispy and browned, 5 to 7 minutes more.
  • For serving: Butter the English muffin halves and drizzle with a bit of honey. Sprinkle the tomato slices with salt, then place a couple slices on top of each muffin half, followed by some hash. Top with a sunny-side up egg and ladle Mornay sauce on top. Garnish with minced chives.

1 1/2 cups dry elbow macaroni, uncooked
4 cups coarsely shredded cabbage
2 cups chopped leftover corned beef
1 small onion, chopped (about 1/3 cup)
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 1/4 cups milk
1 tablespoon spicy brown mustard
1/4 teaspoon ground black pepper
1 1/2 cups finely chopped cheddar cheese
1/2 cup dry breadcrumbs
2 tablespoons butter, melted

Steps:

  • Preheat oven to 375°F
  • Spray 13x9-inch baking dish with cooking spray.
  • Bring water to a boil in large saucepan over high heat.
  • Add macaroni; cook 5 minutes, stirring occasionally.
  • Add cabbage; cook an additional 5 minutes, stirring occasionally.
  • Drain well.
  • Return to saucepan; stir in corned beef and onions.
  • Mix soup, milk, mustard and pepper in small bowl until well blended.
  • Pour over corned beef mixture; toss to coat.
  • Stir in cheese. Spoon into prepared baking dish.
  • Combine bread crumbs and butter in small bowl; sprinkle over corned beef mixture.
  • Bake 30 minutes, or until hot.
  • NOTE:
  • If using leftovers simply omit the part about cooking the cabbage.

4 slices thick cut bacon, cubed
1 yellow onion, peeled, halved and sliced into thin 1/2 moons
2 medium carrots, peeled and sliced into 1/4-inch rounds
2 tablespoons unsalted butter
2 tablespoons flour
1 (11 1/4 ounce) bottle irish stout beer (Guinness)
1 cup chicken broth
2 tablespoons grainy mustard
1 tablespoon Worcestershire sauce
2 teaspoons sugar
3 cups green cabbage, cut into 1-inch dice
3 cups shredded cooked corned beef
1 teaspoon kosher salt, plus more to taste
1/4 teaspoon ground black pepper, plus more to taste
2 lbs krinkle-cut French fries, cooked
2 cups cheese curds
2 tablespoons chopped parsley

Steps:

  • In a large sauté pan over medium heat, cook bacon until crisp, about 5 minutes. Remove bacon from the pan with a slotted spoon and drain on a towel-lined plate. Return the pan with bacon grease to medium heat and add onions and carrots. Cook, stirring occasionally, until vegetables are soft and caramelized, about 20 minutes.
  • Add butter to pan, heating until melted, then stir in flour. Add the beer, chicken broth, mustard, Worcestershire sauce, sugar and cabbage to the pan and bring to a simmer. Continue to cook until cabbage is tender and gravy has thickened, about 10 minutes. Stir in the corned beef, salt and pepper. Keep warm.
  • Mound the french fries in a bowl or on a platter. Top with cheese curds, then spoon corned beef and gravy over. Garnish with crisp bacon and chopped parsley to serve.

1 cup breadcrumbs
3 tablespoons Worcestershire sauce
2 teaspoons ground mustard
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
3/4 lb corned beef, chopped
1 medium onion, cut into large chunks
2 garlic cloves
1 tablespoon parsley
1 1/4 lbs ground round or 1 1/4 lbs chuck
1/2 cup swiss cheese, shredded
12 ounces Guinness stout
3 tablespoons ground mustard
3 tablespoons brown sugar

Steps:

  • Preheat oven to 375.
  • In small saucepan, combine 12 oz Guinness, 3 tbsp brown sugar, and 3 tbsp ground mustard and bring to boil.
  • Reduce heat and simmer until glaze is reduced by half, let cool.
  • In food processor, pulse corned beef, onion, and garlic until they are finely minced. Add egg, bread crumbs, and other seasonings to corned beef mixture and mix well.
  • Break ground beef into large chunks and add to corned beef, you can also add the swiss cheese at this time. Using your hands, gently mix the ground beef into the corned beef until just combined.
  • On a foil-lined baking sheet, form meat mixture into loaf shape.
  • Bake for 35 minutes, then, using a spoon or brush, apply some glaze to top and sides of meatloaf. Repeat every five to ten minutes to build up the glaze.
  • Once the internal temperature of the meatloaf is 150 degrees, remove from oven and let rest for ten minutes.
  • Before serving, apply one last coat of glaze.

2 cups cubed cooked potatoes
8 ounces evaporated milk
1/2 cup finely chopped onion
1/4 cup bell pepper
2 teaspoons snipped parsley
2 teaspoons Worcestershire sauce
1/4 teaspoon smoked paprika
1/2 teaspoon diced jalapeno
black pepper
4 eggs
1/4 cup shredded cheese

Steps:

  • Preheat oven to 375 degrees.
  • Lightly coat a 9 inch casserole pan with butter.
  • Combine leftover corned beef, potato, evaporated milk, onion, bell pepper, parsley, Worcestershire, paprika, jalapenos, and pepper.
  • Pour into prepared dish.

1/2 cup cold water

2 tablespoons Bisquick baking mix
1/4 teaspoon salt

  • Heat oven to 450*.
  • Stir baking mix, water and shortening to a soft dough. Gently smooth dough into a ball on floured, cloth-covered board. Knead 5 times.
  • Roll dough into a rectangle, 12x9". Spread hash over dough to within 1/2 inch of edge; sprinkle with pepper. Roll up, beginning at narrow side; cut into nine 1-inch slices.

Homemade Corned Beef image

This is from southernfood.about.com. I've made my own corned beef before but not with this recipe. I plan on trying this for this year's St. Paddy's Day. Note: You will need to start this with a fresh brisket (7-9lbs.) about 7 days before you plan to make your dinner.

10 cups water
1 1/2 cups kosher salt
1 cup granulated sugar
2 tablespoons dry mustard
3 tablespoons pickling spices
3 garlic cloves, minced
1 fresh beef brisket, 7-9 lbs

Steps:

  • Combine water, salt, sugar, mustard, spices, and garlic in an 8 quart nonreactive stock pot. Bring to a boil over high heat. Remove from heat and set aside to cool. When liquids have cooled, trim the beef of excess fat and put into the liquid.
  • You may need to transfer the liquids and beef to a larger container or bowl, just make sure it is nonreactive. If necessary, add more cold water to cover the beef. Using a heavy pottery bowl or a few small bowls, weigh the corned beef down so it will stay submerged in the water. Cover the pan and refrigerate 5 to 7 days in the refrigerator. Take out once a day to stir lightly, and turn the beef as needed.
  • On the 6th or 7th day, remove the beef from the brine and rinse well with cold water.
  • Cook as desired. I wrap the corned beef in a double layer of foil and place it in a large roasting pan. Then I cook it at 275* overnight. When it is fork tender it goes in the refrigerator to cool until dinner time. After cooking the potatoes, carrots and onions until they're almost done, I add the wedges of cabbage and cook about 15 minutes. At this point, I slice the corned beef and let it simmer in the cooking liquid until it is warm throughout. I remove it gently to the serving platter and put the veggies in a large bowl. We always serve corned beef and cabbage with horseradish and soda bread.

1 cup Simply Potatoes Diced Potatoes with Onion, coarse chopped into smaller pieces (measure after chopping)
1 cup finely chopped cooked corned beef
2 teaspoons whole grain mustard
1 sheet puff pastry, thawed, and cut into 4 squares
1 (10 3/4 ounce) can cheddar cheese sauce, warmed

Steps:

  • Preheat oven to 400 degrees.
  • In small *non-stick frying pan, add potatoes and corned beef. Fry over medium high heat for 10-12 minutes or until potatoes are done and lightly browned, stirring minimally. (*Time depends on how much you chopped the potatoes and onions.) Remove from heat.
  • Place pastry squares onto parchment paper-lined baking sheet. Spread each square with 1/2 teaspoons mustard off to one side. Top each with a mound of potato/corned beef mixture on top of mustard.
  • Wet two connecting sides, fold over and press closed to seal.
  • Pop into preheated oven and bake for 20 minutes.
  • Serve with warmed cheese sauce drizzled over.
  • *Optional garnish: snipped chives, but not needed. Optional only!
  • **Turnovers can also be brushed with an egg wash prior to baking, but not needed nor necessary. Only for presentation and does not effect this recipe.
