This dressing is perfect for hearty appetites. Mix up a batch of savory & sweet cornbread stuffing for the next holiday dinner!

½ cup butter
1 onion (diced)
1 cup celery (chopped)
1 teaspoon poultry seasoning
½ teaspoon ground sage
5 cups crumbled cornbread (dry*)
5 cups white bread cubes (dry*)
2 tablespoons fresh parsley (chopped)
salt & pepper to taste
2-3 cups chicken broth (or as needed)
3 eggs (beaten)

Steps:

  • Preheat oven to 350°F.
  • Melt butter in a large skillet. Add onion, celery, poultry seasoning, and sage. Cook over medium heat until tender (do not brown). Cool.
  • Place cornbread and bread in a large bowl with celery & onion mixture, parsley, and salt & pepper.
  • Combine eggs and 2 cups chicken broth, whisking until smooth.
  • Drizzle bread cubes with egg mixture, gently tossing just until moistened. Add more broth if needed to moisten the mixture, allowing the mixture to stand a few minutes between each addition to soak up the moisture.
  • Place in a greased 2qt baking dish. Bake uncovered for 35-40 minutes or until heated through.

4 cups water
Turkey giblets
CORNBREAD:
1-1/4 cups all-purpose flour
3/4 cup yellow cornmeal
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 large egg
1 cup milk
1/4 cup vegetable oil
DRESSING:
2 celery ribs, finely chopped
1 large onion, finely chopped
1 cup chopped pecans
1 cup butter, cubed
6 cups cubed soft bread (1/2-inch cubes)
2 large eggs, beaten
1-1/2 teaspoons poultry seasoning
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a large saucepan, bring water and giblets to a boil. Reduce heat; cover and simmer for 2 hours., Meanwhile, in a large bowl, combine the flour, cornmeal, sugar, baking powder and salt. Combine the egg, milk and oil; stir into dry ingredients just until moistened. Transfer to a greased 9-in. square baking pan. , Bake at 400° for 18-20 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut cornbread into 1/2-in. cubes; set aside. , Strain broth, discarding giblets. Set broth aside; cool slightly. In a large skillet, saute the celery, onion and pecans in butter until vegetables are tender. Transfer to a large bowl. Stir in the cornbread, cubed bread, eggs, seasonings and enough reserved broth to reach desired moistness (about 1-1/2 cups). Save remaining broth for another use., Transfer to a greased 13x9-in. baking dish. Cover and bake at 350° for 35 minutes. Uncover; bake 8-10 minutes longer or until a thermometer reads 160° and top is lightly browned.

1 cup all-purpose flour
1 cup cornmeal
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
2/3 cup water
1/3 cup fat-free milk
1 large egg, lightly beaten
2 tablespoons canola oil
10 slices bread, toasted and cubed
3 cups chopped celery
1-1/3 cups chopped onion
1 teaspoon canola oil
3 teaspoons reduced-sodium chicken bouillon granules or 1-1/2 vegetable bouillon cubes
1/4 cup boiling water
1 can (14-1/2 ounces) reduced-sodium chicken broth or vegetable broth
2 large eggs, lightly beaten
2 teaspoons dried parsley flakes
1-1/2 teaspoons rubbed sage
1 teaspoon each poultry seasoning, dried basil and rosemary, crushed
1/2 teaspoon each salt and dried thyme

Steps:

  • Preheat oven to 375°. For cornbread, in a bowl, combine flour, cornmeal, sugar, baking powder and salt. In a small bowl, whisk egg, water, milk and oil. Stir into flour mixture just until blended. Transfer to a greased 8-in. square baking pan. Bake until a toothpick inserted in the center comes out clean, 15-20 minutes. Cool in pan on a wire rack. Crumble into a large bowl. Reduce oven temperature to 350°. , For stuffing, stir bread cubes into cornbread crumbs. In a nonstick skillet, cook celery and onion in oil until tender, about 6 minutes. Stir into cornbread mixture. , In a small bowl, dissolve bouillon in water. In a large bowl, combine the broth, egg, seasonings and bouillon mixture. Pour over cornbread mixture; toss to coat evenly., Transfer to a greased 13x9x2-in. baking dish. Cover and bake 20 minutes. Uncover; bake until lightly browned, 25-30 minutes longer.

Adapted from Brown's Guide to Georgia. This is our favorite dressing at Thanksgiving. Bake separately in a pan, then cut into squares to serve or spoon right from the pan. Time does not include making corn bread. I have used packaged cornbread stuffing but I think it is better with the homemade. Either works however. If you use preseasoned stuffing mix, you will need to cut back on the salt and adjust other seasonings to your taste.

3 cups cornbread, crumbled
2 -2 1/2 cups dry bread, crumbled
5 cups turkey broth or 5 cups chicken stock
2 -3 eggs
1/2 cup butter, melted
1 onion, chopped fine
1/4 cup celery, finely chopped
1/2 tablespoon salt
1/2 teaspoon pepper
1/2 tablespoon dried sage or 1/2 tablespoon poultry seasoning

Steps:

  • Preheat oven to 425°F.
  • Mix breads, add eggs and other ingredients.
  • Mix well and continue to add broth until mixture is the consistency of cake batter or thick soup. (Really soupy - it will cook dry.).
  • Bake in greased baking dish for about 40 minutes.

7-1/2 cups coarsely crumbled cornbread

1-1/3 cups chicken broth

Steps:

  • In a large skillet, saute celery and onions in butter until tender; transfer to a large bowl. Add the cornbread, bread crumbs, sage and poultry seasoning. I grew up on mama's cornbread dressing. I have come across many cornbread dressing recipes; however, this is still the best. This stuffing has cubes of cornbread with the addition of onions, celery, eggs, and stock. It's the perfect Southern souffle!

8 cups crumbled cornbread
4 cups cubed stale bread
1 cup butter, melted
2 large onions, chopped
1 ½ cups chopped celery
2 cups turkey broth, or as needed
1 ½ cups chopped cooked turkey
1 (10.75 ounce) can condensed cream of chicken soup
¼ cup chopped, cooked turkey giblets
4 large hard-cooked eggs, chopped
4 tablespoons self-rising flour
4 tablespoons chopped fresh parsley
2 teaspoons chopped fresh sage, or to taste
2 large bay leaves
salt and ground black pepper to taste
3 large eggs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x13-inch baking dishes.
  • Combine cornbread and stale bread cubes in a large bowl. Set aside.
  • Melt butter in a large skillet over medium heat. Add onions and celery and cook until transparent, 5 to 10 minutes.
  • Pour onion mixture over the cornbread mixture. Add turkey broth, chopped turkey, soup, giblets, hard-cooked eggs, and flour. Mix so that all the cornbread is wet. Mix in parsley, sage, bay leaves, salt, and pepper. Add beaten eggs. Mixture should be "soupy." Pour mixture evenly into the prepared pans.
  • Bake in the preheated oven until cooked through and set, 1 hour to 1 hour and 20 minutes.
