12 ounces frozen sweet corn, defrosted and drained
2 jalapenos, seeded and finely diced (if you enjoy the heat, add some seeds)
1/3-1/2 cup red onion, finely diced
3/4 cup fresh cilantro, chopped
2 limes, juice
1/2 teaspoon salt
1/2 teaspoon pepper, freshly ground

Steps:

In a large bowl, combine all ingredient and mix well.
Adjust salt and pepper, lime and jalapenos to your desired taste.

Mix corn, onion, cilantro, lime juice, chipotle pepper, and salt together in a bowl.

Note: obviously fresh corn would be the BEST option here… however I don’t have access to that at the moment… and when I do have access to it, it’s only for about 2-3 months. This was the next best thing.
