600 g pork fillets
1 teaspoon coriander powder
4 tablespoons olive oil
2 tablespoons soy sauce
1 garlic clove, mashed
1/2 teaspoon cinnamon
200 g rose wine
green coriander, chopped (cilantro)

Steps:

  • Mix the pork fillet cubes with 100 gram rose wine, coriander powder, cinnamon, garlic, olive oil and soy sauce.
  • Marinate for at least 8 hours.
  • Take the meat out of the marinade and make it dry.
  • Stir fry for 15 minutes until the meat is nice and brown.
  • Add the marinade and the rest of the wine,
  • Boil on high heat until the liquid has evaporated,.
  • Decorate with green coriander.

This is a Greek recipe for Pork that I copied from a magazine a few years ago. Unfortunately, I do not remember the name of the magazine. It was on Mediterranean Cooking, and I have since given it away to a friend.

1 1/2 lbs pork loin (cubed in 1-inch pieces)
1/2 teaspoon sea salt
1/2 teaspoon black pepper
2 cups dry red wine
2 tablespoons coriander seeds (crushed well)
3 tablespoons olive oil

Steps:

  • Season the pork cubes with the salt, and pepper.
  • Combine the coriander seeds with the wine in a large dish, add pork, and cover.
  • Refrigerate for 2-4 hours, stirring once or twice.
  • Heat oil in a large enough pot.
  • Using a slotted spoon, remove pork from the wine marinade, and reserve the marinade.
  • Brown pork, turning frequently,until well browned on all sides, about 10 minutes.
  • Add reserved marinade back into pot.
  • Add enough water to just cover the meat.
  • Bring to a boil.
  • Reduce heat, cover pot, and simmer 30-45 minutes, until meat is fork tender and most of the liquid has evaporated.
  • Taste, and re season with more salt and pepper, if desired.

IPork is one of the cheapest meats we can buy in Australia so I am always on the lookout for ways to use it-especially curried. This one was a good one we thought.

1 tablespoon coriander seed
1 teaspoon fennel seed
1 teaspoon black peppercorns
6 garlic cloves, peeled
2 cm fresh ginger, peeled
1 onion, roughly chopped
1 1/2 kg lean pork, diced
3 tablespoons oil
3/4 cup water
salt
1 cup Greek yogurt
1 cup fresh coriander, finely chopped

Steps:

  • Curry Paste:.
  • Toast the coriander, fennel and peppercorns in a dry fry pan over medium heat until fragrant.
  • Grind or use a mortar and pestle to crush to a powder.
  • Put the garlic, ginger, onion and ground spices in a food processor and pulse until a paste is formed.
  • Curry:.
  • Add 2 tablespoons oil to a fry pan and brown the pork in batches. Remove to a plate.
  • Add the remaining oil and heat; fry the spice paste for 3 to 4 minutes stirring often. Add the pork and stir well; add the water and bring to the boil.
  • Season with salt to taste (I find curry needs quite a bit of salt so start with about 1 teaspoon), cover and simmer gently for 2 hours (add more water if the sauce becomes too thick).
  • Pour off any excess oil and stir through the yogurt and coriander leaves.
