CORIANDER AND LIME PESTO



Coriander and lime pesto image

The most delicious flavour combination, my Coriander and lime pesto is a lovely change from the traditional basil variety.

Number Of Ingredients 7

1 bunch/s fresh coriander leaves
1 clove/s garlic (-crushed (if not using a processor))
60 g raw cashew nuts ((¼ cup) toasted)
30 g parmesan cheese ((2 tablespoons) finely grated)
1 lime/s (juice and zest )
20 ml macadamia nut oil ((1 tablespoon) )
1 red chilli/s

Steps:

  • In a food processor grate the parmesan and garlic and set aside. Thermomix 10 seconds, speed 6.
  • Place the coriander and cashews in the processor and pulse until just chopped. Thermomix pulse 2-3 times or until chopped when you look through the lid.
  • Mix in the parmesan, lime juice and zest and macadamia oil (and optional chill) until combined and serve. Thermomix 10 seconds reverse speed 3.

A bright, herby, zingy coriander pesto recipe that adds all kinds of flavour to vegetables and grains.

1 lime (juice only)
2 cloves garlic (crushed)
50g peanuts
100 g coriander, leaves and stalks
6-8 tbsp olive oil

Steps:

  • Juice the lime into a small dish and add the crushed garlic, set aside for 20 minutes.
  • Add the peanuts to the food processor and pulse until finely chopped. Add the coriander, garlic and lime juice and blend until well broken down. With the blender running, drizzle in enough oil to make a pesto.

A delicious and very flavoursome alternative to pine nut pesto. Good with pasta, fish or in a panini.

Number Of Ingredients 5

2 cups fresh coriander leaves and first inch or so of stalks
1 garlic clove
good pinch any coarse salt - I use Maldon sea salt
1/2 cup extra virgin olive oil
1/4 cup walnuts/pecans - chopped

Steps:

  • Put all ingredients in blender.
  • Whizz until smooth.
  • If dry, add more olive oil.
  • Will keep in fridge for about a week or can freeze.

A good pesto has got to be one of the most versatile ingredients one can have in their fridge. Liven up that boring old sandwich, a welcome change from tomato and cream sauces for pasta, a great addition to any soup and of course, great for a quick entertainment help as a dip, or spread on crostini's with a bit of melted parmesan cheese. This pesto recipe, although not a traditional European one, is equally versatile and then some, use it on most Asian rice dishes, a spoon full in your laksa, toss it through you stir fry at the last minute or dollop a little on your pizza before you serve it.

3 bunches coriander leaves, removed (cilantro)
1 bunch Thai basil, leaves removed
150 g lightly toasted cashews, roughly chopped
2 garlic cloves, chopped and lightly browned
grated fresh parmesan cheese
extra virgin olive oil
sesame oil
flaked sea salt
black pepper

Steps:

  • Place the leaves of coriander and basil into your food processor.
  • Chop leaves for about 10-20 seconds on high.
  • Stop processor and add cashews, garlic, 2 tbsps parmesan, salt and pepper.
  • Process all the above together on high while slowly adding a stream of olive oil until desired consistency is achieved, I prefer a nice thick pesto, however depending on the use you may want to have it a little thinner.
  • Once desired consistency is achieved add a few drops of sesame oil to taste.
  • If not being used right away place in an air tight container with a thin layer of olive oil over the top of the pesto.

1/2 cup olive oil
3 -4 cloves chopped garlic

1 tablespoon lime juice

1/2 cup grated parmesan cheese (or more)

Steps:

  • Put all ingredients in the blender or food-processor.
  • Process until fine and well blended, add the Parmesan and blend for a few seconds more.

  • Wash your coriander leaves carefully, removing any yellow or damaged leaves, and do the same for the mint – using leaves only and not the stalks.
  • Place the coriander and mint leaves in a food processor along with the crushed garlic, Parmesan, cashew nuts and lemon juice and start the motor. If you are living off grid and are not into electrical appliances then you can use a mortar and pestle to grind the pesto.
  • Pour in the olive oil in a slow steady stream, while the motor is running, until the pesto is finely chopped. If doing it by hand add a little olive oil at a time to your mortar while grinding.
