CORIANDER AND HONEY JELLY
Another recipe from "Preserving the Harvest." I am going to try it in a couple of months, when the weather cools down.

Steps:
- Boil the water and coriander seeds for 2 minutes in a 3-quart saucepan. Let stand, covered, for 6 hours or overnight.
- Strain the infusion through a coffee filter and return 2 1/2 cups of the liquid to the pan.
- Add the sugar, lemon juice, and honey. Mix well. Boil hard and add the pectin.
- Bring to a boil again and boil for exactly 1 minute (use a timer). Remove from the heat and skim off any foam with a metal spoon that has been dipped in ice water.
- Pour into four sterilized half-pint jars, leaving 1/4 inch headspace.
- Wipe rims of the jars clean and place the hot lids on the jars (follow manufacturer's instructions). Place rings on jars and tighten with your fingertips until closed.
- Process for 5 minutes in a boiling-water bath. Adjust for altitude, if necessary.

The flower nectar used to make a honey determines the honey's taste, so you can change the flavor of this jelly by the honey you choose. - Using a vegetable peeler, remove the colored part of the peel from one of the lemons. (Avoid removing the white portion.) Cut the peel into thin strips; set aside. Cut the remaining lemons in half; squeeze lemons for juice. Measure 1/2 cup lemon juice. (Reserve any remaining juice for another use.)
- In a 5 to 6 quart heavy pot, combine the lemon peel, the 1/2 cup lemon juice, the water and the sugar. Cook and stir over medium heat until the sugar dissolves. Stir in honey. Bring to a full rolling boil, stirring constantly. Quickly stir in the pectin. Return to a full rolling boil, stirring constantly. Boil hard for 1 minute, stirring constantly. Remove from heat. Quickly skim off the foam with a metal spoon. Use spoon to remove the lemon peel strips; discard peel strips.
- Ladle hot jelly into hot, sterilized half-pint canning jars, leaving a 1/4-inch headspace. Wipe jar rims; adjust lids -- tightening to finger tight.
- Process filled jars in a boiling-water canner for 5 minutes (start timing when water returns to boiling). Remove jars from canner; cool on wire racks.

- Bring to full rolling boil and stir in honey immediately.
- Return to rolling boil, and boil for 3 minutes, stirring constantly.
- Remove from heat and skim.

- Bring the mixture to a boil over high heat and stir in the liquid pectin.
- Bring to a full boil again and boil for one minute.
- Remove from heat, stir, and skim off foam on top.
- Pour into sterilized jars and seal with paraffin.
