Steps:
- In large bowl, gently mix the ricotta, cocoa, lemon zest and espresso coffee in folding motions.
- Cover and refrigerate for a few hours for best results.
- Spoon mixture into small glasses.
- Pass honey to be drizzled over the top.
- Garnish with berries or sliced fruit.

I haven't tried this yet, but it's another yummy-looking recipe adapted from a new Italian cookbook I just bought ("One Pot Italian" by Massimo Capra). Cook time is chilling time, and cook/prep times are estimates. Posted for ZWT

Steps:
- Place a medium mixing bowl in a large shallow pan of hot water. Place the egg yolks in the bowl, then whip in the sugar and liqueur with a hand mixer until the mixture is pale and lemony colored, and very thick. At this point, if you lift the beaters out of the mixture, the batter should create a ribbon that sits on the surface for a few seconds before it sinks inches This means your yolks are properly cooked. Remove the bowl from the water pan and set aside to cool.
- Add the mascarpone and instant coffee powder to the egg mixture. Using an electric mixer, whip the mixture just until stiff peaks form. Take care not to overwhip, or the mixture will separate.
- Layer the chocolate sauce and the cheese mixture in a serving glass, starting with the chocolate and ending with the cheese mixture (there should be at least 5 alternating layers. Garnish each serving with grated dark chocolate.
- Chill for at least 1 hour prior to serving to allow flavors to meld.

ORANGE HOISIN RIB GLAZE
This recipe was on the package of back ribs I bought. I haven't tried it yet but definitely will the next time I make them.

- Preheat oven to 350.
- Combine all ingredients except salt and pepper.
- Season ribs with salt and pepper and place on parchment or foil lined baking pan.
- Brush with half the sauce and cover tightly with foil.
- Bake in oven for 1-1/2 to 2 hours.
- Transfer ribs to broiler rack or barbecue brushing with remaining glaze and cook on medium until browned and glazed.

EINTOPF
Eintopf means "one pot". There are as many recipes for Eintopt as there are cooks in Germany, but this one is my favorite. I use a loop of smoked turkey sausage to cut down on the fat. Also, the frozen French-cut green beans are rarely available in my small town, so I often use the canned variety. They are almost as good.

- Beat the cream until it's rich and fluffy, with soft peaks (or use already whipped cream from a can).
- Mix in the powdered sugar, and continue to beat until you have stiff peaks.
- Split whipped cream between 2 mugs.
- Add vanilla to the hot coffee, then pour over cream.
- Serve right away, Don't stir!

GINGERBREAD PARFAIT
A creamy parfait with gingerbread spices! Haven't tried this yet, am posting it for safekeeping for the holiday season - looks like it could be a delicious dessert! Cooking time is freezing time.

- Measure butter, treacle and the spices into a saucepan. Bring to boil and let simmer for 5 minutes.
- Whip egg yolks lightly in a bowl. Add the hot treacle and spice mixture, whisking constantly. Keep whisking until the mixture is fluffy and has cooled down.
- Whip heavy cream until stiff peak form. Add cognac and the treacle mixture, mix well.
- Rinse a freezer-proof mould with cold water, pour the parfait mixture into the mould and put in the freezer for 24 hours.
- When ready to serve, wash and slice kumquats.
- Dip the mould briefly into hot water to release the parfait. Invert on a serving dish. Decorate with kumquat slices.
