SL ROAST WITH ONION AND MUSHROOM GRAVY - 6-QT. PRESSURE COOKER

SL Roast With Onion and Mushroom Gravy - 6-Qt. Pressure Cooker image

Entered for safe-keeping, adapted from Donna Davidson in November 2000 Southern Living, times are for 15 psi 6-qt. (or larger) stovetop pressure cooker. See notes at the end of directions for necessary changes to prepare in an electric pressure cooker, such as Instant Pot. 5/24/18: I loaded the recipe as I would prepare it in a 6-quart Instant Pot electric pressure cooker; it is available here: http://www.food.com/recipe/sl-roast-with-onion-mushroom-gravy-6-qt-instant-pot-535868

Provided by KateL

Categories     Roast Beef

Time 38m

Yield 6-8 serving(s)

Number Of Ingredients 8

2 -3 lbs boneless chuck roast, trimmed
1/2 teaspoon fresh ground black pepper
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
1 (1 ounce) package dry onion soup mix
2 beef bouillon cubes
2 cups water
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • Sprinkle roast evenly with pepper. Place in 6-quart or larger pressure cooker.
  • Add mushroom soup, onion soup mix, beef bouillon cubes and 2 cups water.
  • Secure lid. Over medium-high heat, bring to HIGH pressure (2nd bar,15 psi). Adjust heat to stabilize just at high pressure. From moment high pressure was reached, cook 20 minutes. (Check recommended cooking time in your manufacturer's manual.).
  • Remove from heat and use quick pressure reduction method recommended by your manual. The recipe recommended running cold water over the lower edge of the cooker.
  • Remove lid, directing steam away from you.
  • Remove roast, and keep warm.
  • Stir together cornstarch and 2 tablespoons water. Add to liquid in pressure cooker. Bring to a boil, then cook for 1 minute.
  • Serve gravy with roast.
  • -- MODIFICATIONS FOR USING ELECTRIC PRESSURE COOKER, added May 11, 2018 --.
  • DO NOT ADD canned condensed Cream of Mushroom Soup during Step 2. The safety sensors of the new electric pressure cookers will give a "Burn" error if you do. (We'll add the condensed soup after pressure cooking.).
  • For an electric pressure cooker, cook at High pressure for 40 minutes.
  • DO NOT RUN COLD WATER OVER THE LID of an electric pressure cooker for quick release! Allow pressure to reduce naturally for 12 minutes, then you can do a quick release of remaining pressure.
  • Add the Cream of Mushroom soup after pressure cooking, before the cornstarch step. If you want to make your own condensed cream of mushroom soup, "This Old Gal" recommends: 1) in a liquid measuring cup, whisk 1 cup cold milk with 2 Tablespoons cornstarch until well blended. 2) Add to pressure cooker pot, press SAUTE button. 3) Stir in 1 1/2 tablespoons butter, 1 teaspoon beef bouillon granules (or Better than Bouillon), 1/2 teaspoon of sea salt, and a dash of pepper. Oh, and add a (drained) small can of mushrooms or 1/4 cup of sauteed mushrooms to make it "mushroom" soup. (Or, if you are a Mushroom Lover, saute 8 ounces of mushrooms on the stove, and add them to the pressure cooker pot at this point.) 4) Heat to a boil, stirring frequently. 5) Simmer on low for one minute more to thicken.
  • After incorporating the cream of mushroom soup ingredient(s), decide if you still need to add the additional 2 tablespoons of cornstarch and 2 tablespoons of cold water to reach desired consistency.

KALUA PIG IN 6-QT ELECTRIC PRESSURE COOKER

Kalua Pig in 6-Qt Electric Pressure Cooker image

Adapted from Nom Nom Paleo. This is my go-to recipe for delicious pulled pork in only 90 minutes at pressure. For a 2-person household, I coordinate with my step-daughter so we can both enjoy this economical but delicious protein. One Boston Butt yields a lot of pulled pork! Note that cooking time is the amount of time cooked at high pressure (as is common for pressure cooker recipes); the pressure cooker can take 10-25 minutes to reach high pressure, and from 15-25 minutes to naturally release pressure.

Provided by KateL

Categories     Low Protein

Time 1h40m

Yield 8 serving(s)

Number Of Ingredients 5

3 slices bacon
10 garlic cloves, peeled
1 1/2 tablespoons pink himalayan coarse salt or 1 1/2 tablespoons kosher salt
1 cup water (use 1 1/2 cups water if using an 8-qt pressure cooker)
1 cabbage, cored, cut in 8 wedges

Steps:

  • Place bacon slices flat on the bottom of the pressure cooker pot. Press "Saute" button. Brown bacon and flip to brown the other side. When browned on both sides, turn off pressure cooker.
  • Cut the roast into 3 equal pieces. With a sharp knife, makes slits in the roast and place the garlic there.
  • Use 3/4 teaspoon of medium-coarse salt for every 1 pound of meat; if using fine salt, use half as much. Sprinkle salt evenly over the pork.
  • Place the salted pork on top of the bacon - it needs to sit in one layer.
  • Pour in water.
  • Secure lid.
  • Press "Manual" or "Pressure Cook" button (if using Instant Pot). Immediately press the + button until you have set the time for 90 minutes under high pressure. (If using a stovetop pressure cooker, cook on high heat until high pressure is reached, then lower heat to maintain high pressure for 75 minutes.).
  • The electric pressure cooker will switch to a "Keep Warm" setting about 10 minutes after pressure cooking has stopped. It can sustain "Keep Warm" for 10 hours, if necessary.
  • Allow pressure to reduce naturally. If you are impatient, allow it to reduce pressure for at least 15 minutes before manually releasing remaining pressure.
  • Remove the pork and place in a large bowl. Place the cabbage wedges into the cooking liquid.
  • Secure the lid. Pressure cook the cabbage for 2 minutes at high pressure. After pressure cooking has finished, allow it to reduce pressure naturally for 5 minutes, then quickly manually release any remaining steam.
  • Meanwhile, shred the pork, and apportion into bowls. Place a wedge of cooked cabbage on top of each portion.
  • Refrigerated leftovers will keep for 4 days; frozen will keep several months.

CL BEEF POT ROAST AND GRAVY - 6-QT PRESSURE COOKER

CL Beef Pot Roast and Gravy - 6-Qt Pressure Cooker image

Entered for safe-keeping, adapted from Julianna Grimes, September 2010 Cooking Light. Calls for 6- or 8-quart pressure cooker. For best results, use Pressure Cooker Beef Stock for lower sodium but rich taste. Don't omit the parsnips or turnips -- they provide a very mellow flavor. I don't see many potatoes labeled Yukon Gold any more; now they might be called "yellow". A serving = 3 oz. beef, 2/3 cup vegetables, and 2 tablespoons sauce.

Provided by KateL

Categories     One Dish Meal

Time 1h36m

Yield 12 serving(s)

Number Of Ingredients 15

3 lbs boneless chuck roast, trimmed
1 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
2 teaspoons olive oil
3 cups rich homemade beef stock (preferably made in pressure cooker, Cooking Light Pressure-Cooker Beef Stock - 6-Qt Pressure Cooker)
1/2 cup dry red wine
4 fresh thyme sprigs, tied securely together with twine
3 garlic cloves, chopped
3 large parsnips, peeled and diagonally cut into 2-inch pieces
3 large carrots, peeled and diagonally cut into 2-inch pieces
1 lb turnip, each cut into 8 wedges
1 lb yukon gold potato, peeled and cut into 2-inch pieces
1 large onion, cut into 8 wedges
2 tablespoons all-purpose flour
12 fresh thyme sprigs (optional)

Steps:

  • Sprinkle roast evenly with salt and pepper.
  • Heat a 6- or 8-quart pressure cooker over medium-high heat. Add oil to cooker; swirl to coat.
  • Add roast to cooker. Sauté 5 minutes, browning on all sides.
  • Stir in 3 cups rich beef stock and wine.
  • Close lid securely. Bring to high pressure over high heat. Reduce heat to medium or level needed to maintain high pressure. Cook for 35 minutes.
  • Remove from heat. Use quick release method favored by your pressure cooker manufacturer: release pressure through steam vent, or place cooker under cold running water to release pressure.
  • Remove lid, directing steam away from you. Add thyme sprigs, garlic, parsnips, carrots, turnips, potatoes and onions.
  • Close lid securely. Return to high pressure, cook 1 minute.
  • Remove from heat. Use quick release method favored by your pressure cooker manufacturer: release pressure through steam vent, or place cooker under cold running water to release pressure. Let stand 5 minutes.
  • Remove roast. Slice roast thinly, and place on a platter.
  • Remove vegetables from cooker using a slotted spoon, and place on platter with roast. Cover and keep roast and vegetables warm.
  • Strain cooking liquid through a cheesecloth-lined sieve into a large bowl. Discard solids.
  • Bring cooking liquid to a boil over medium-high heat in a large, wide skillet. Cook until reduced to 1 1/2 cups (about 15 minutes).
  • Remove 1/4 cup cooking liquid from pan. Add 2 tablespoons flour, stirring with a whisk.
  • Return flour mixture to pan. Cook 2 minutes or until slightly thick, stirring with a whisk.
  • Serve sauce with roast and vegetables. Garnish each serving with a fresh thyme sprig, if desired.

SWEET DRY-RUB BABY BACK RIBS - 6-QT ELECTRIC PRESSURE COOKER

Sweet Dry-Rub Baby Back Ribs - 6-QT Electric Pressure Cooker image

Tried and True, just a hint of heat. I have adapted my dry rub from from Ribs, Chops, Steaks, & Wings by Ray Lampe, and my electric pressure cooking directions from Gracie Cooks! blog. We found the original rub recipe to have way too much salt, and we reduced the cayenne pepper so toddlers wouldn't be overwhelmed. I like to keep the ribs out of the bottom liquid as much as possible, and I top it with a fresh BBQ sauce (or Heinz's Kansas City BBQ sauce was even easier and quite yummy) for finishing off the ribs either in the oven or on the grill. The pressure-cooked unglazed ribs can be frozen - we tend to make as many slabs as our P.C. can hold. Afterwards, strain the liquid, defat, and use as a marinade for a rump roast. Removing the membrane that covers the inner part of the ribs and removing excess fat accounted for most of my prep time. In the Instant Pot, it only took 15 minutes to reach pressure, and 20 for the pressure to come down naturally. (The posted "Cooking Time" is the amount of time at High Pressure (11 psi). I think it is most convenient to cook the ribs ahead and just worry about "finishing" them when you are ready to eat.

Provided by KateL

Categories     Pork

Time 1h

Yield 2 full rib racks, 4 serving(s)

Number Of Ingredients 15

3/4 cup brown sugar
2 -4 tablespoons salt
1/4 cup paprika
2 tablespoons finely ground black pepper
2 tablespoons granulated garlic
1 tablespoon onion powder
1 tablespoon ground cumin
1 tablespoon chili powder
1 teaspoon dry mustard
1 teaspoon ground coriander or 1/2 teaspoon dried cilantro
1/4 teaspoon cayenne pepper
1/2 teaspoon ground allspice
4 lbs baby back ribs (2 full racks)
12 ounces Coca-Cola
1/4-1/2 cup barbecue sauce (I like Heinz Kansas City BBQ sauce)

Steps:

  • RUB:.
  • Combine all Rub ingredients in a medium bowl.
  • RIBS:.
  • Using a full cooking sheet, prepare ribs by removing membrane that covers the inside part of the ribs. Also trim off excess fat, if any. (Check YouTube for instructive videos.).
  • Generously coat both sides of both racks of ribs.
  • In 6-quart or larger electric pressure cooker, place roasting rack in inner pot. Pour in Coca Cola. Place each rack of ribs vertically, with meaty side out, and meatier edge on top. (A 6-quart P.C. should accommodate 3 racks, and an 8-quart P.C. should handle 4 racks.).
  • Feel free to sprinkle rest of rub on ribs.
  • Put inner pot into Pressure Cooker base.
  • Secure lid.
  • INSTANT POT: Select MEAT/STEW setting, and increase time to 30 minutes. When cooking has completed, press Off, and unplug. Allow pressure to release naturally (or at least 12 minutes before venting).
  • OTHER ELECTRIC PRESSURE COOKER: Cook on HIGH pressure for 30 minutes, and allow pressure to release naturally.
  • STOVE-TOP P.C.: Please consult your manual. These normally cook at 15 psi instead of 11 psi attained by electric pressure cookers, so cooking times and Natural Pressure Release times will both be shorter. You will have to hang around to make sure the stove-top pressure cooker maintains the right pressure, however.
  • Once pressure cooker has released its pressure, remove the lid. Carefully remove the ribs with tongs. (I move the ribs to a colander to drain as I normally cook them ahead up to this point.).
  • OPTIONAL: Strain the cooking liquid and refrigerate, then remove the top fat layer. It would make a killer marinade for a rump roast. If you don't like that option, discard the cooking liquid as you see fit.
  • FINISHING:.
  • OVEN: Set to BROIL. Put racks meaty side up and glaze with BBQ sauce with a silicone basting brush. Broil for 2-5 minutes or until heated through. If you like, baste again and broil some more.
  • GRILL: Prepare grill. On BBQ mesh grate, place rib racks meaty side up and glaze with BBQ sauce with a silicone basting brush. Heat through. Baste again and heat some more if you wish.

KEMP'S VEGETARIAN BLACK BEANS - 6-QT PRESSURE COOKER

Kemp's Vegetarian Black Beans - 6-Qt Pressure Cooker image

Entered for safe-keeping, adapted from Gourmet Executive Food Editor Kemp Minifie in April 2007 Gourmet. Kemp Minifie claims that the vegetarian "holy trinity" of flavor is sherry, soy sauce and balsamic vinegar. Beans improve in flavor if cooked at least 8 hours ahead. Chill, uncovered until completely cooled, then chill covered up to 1 week, or freeze up to 3 months. Beans thicken a lot as they stand, so thin with water when reheating over moderately low heat. Because these beans are best cooled so they thicken as they stand, some people make a big pot on the stove and designate it for other recipes. So I am giving both the Pressure Cooker directions and the non-pressure directions. The Pressure Cooker takes 1/3 the time. The preparation time does not include chilling time; the cooking time is for the pressure cooker.

Provided by KateL

Categories     Black Beans

Time 50m

Yield 8-9 cups, 16-18 serving(s)

Number Of Ingredients 9

1 lb dried black beans, picked over and rinsed but not soaked (about 2 1/3 cups)
1 medium onion, finely chopped (110g)
3 tablespoons olive oil
8 cups water
1/2 teaspoon salt
1/4 cup cream sherry or 1/4 cup medium-dry sherry
1 teaspoon salt
1 -2 tablespoon soy sauce
1 -2 tablespoon balsamic vinegar

Steps:

  • PRESSURE COOKER.
  • In a 6- to 8-quart pressure cooker, combine beans, onion, oil, water and 1/2 teaspoon salt.
  • Seal pressure cooker with lid and cook at high pressure, according to manufacturer's directions, until beans are tender, 30-45 minutes.
  • Remove from heat. Use quick release method favored by your manufacturer; Kemp says to put the pressure cooker in the sink (with lid still attached) and run cold water over the lid until pressure goes down completely. (Don't try the cold water method with an electric pressure cooker!)
  • Chill uncovered until completely cooled, then chill, covered, up to 1 week or freeze up to 3 months.
  • NON-PRESSURE COOKING METHOD.
  • In a 6- to 8-quart heavy pot, bring black beans, onion, oil, water and 1/2 teaspoon salt to a boil. Reduce heat and simmer, covered, until beans are tender, 1 1/2 to 2 hours (depending on age of beans).
  • Chill uncovered until completely cooled, then chill, covered, up to 1 week or freeze up to 3 months.
  • REHEATING.
  • When reheating the beans later, stir in Sherry, 1 teaspoon salt, then soy sauce and vinegar to taste (start with 1 tablespoon each). Thin with water if necessary. Simmer, uncovered, stirring occasionally, for 5 minutes.

Cooking Light Pressure-Cooker Beef Stock - 6-Qt Pressure Cooker image

Entered for safe-keeping, adapted from Julianna Grimes, September 2010 Cooking Light. Calls for 6- or 8-quart pressure cooker. You can't beat a pressure cooker beef stock for richness, yet low sodium. If you don't have time to chill the stock overnight, cool the strained stock slightly and spoon off the excess fat for immediate use. After chilling, this stock will jiggle like Jello. Preparation time includes overnight chilling. Nice & thick!
