CONCH SCALOPPINI

2 pounds conch meat
2 cups buttermilk
1 tablespoon Cajun spice
2 tablespoons all-purpose flour
Kosher salt and freshly ground black pepper
2 tablespoons grapeseed oil, divided
3 tablespoons minced olives
1 tablespoon minced garlic
2 tablespoons seeded and diced tomato
1 tablespoon whole capers
1 teaspoon minced thyme leaves
2 tablespoons white wine
1/2 cup chicken stock
2 teaspoons freshly chopped basil leaves
1 lemon, juiced
2 teaspoons chopped parsley leaves
4 tablespoons butter, cut into cubes, room temperature
Warmed bread, for serving

Steps:

  • Fillet the conch meat on a cutting board to create flat 12 to 15 (1/4 to 1/2-inch) fillets - the thinner the better without breaking. Cover the pieces with plastic wrap and pound the meat with a mallet to flatten, doubling the width. Put the conch meat in a shallow dish and add the buttermilk and Cajun spice, tossing to make sure the conch is evenly coated. Let marinate, covered, in the refrigerator for 1 to 2 hours.
  • In a small bowl, combine the flour and salt and pepper, to taste. Remove the conch from the marinade, pat dry with a paper towel and dredge in seasoned flour.
  • In a large saute pan over medium-high heat, add 1 tablespoon grapeseed oil and when the oil is hot add the floured conch, cooking for 1 to 2 minutes on each side. Remove the conch to a plate and tent with foil to keep warm.
  • To the saute pan add the remaining grapeseed oil. Add the olives, garlic, tomatoes, capers and thyme, and cook over medium heat for 2 minutes. Remove the olive mixture from the pan and pour over the conch. Return the pan to medium heat. Add the wine to deglaze the pan, then add the stock, basil, lemon juice and parsley. Cook to reduce by 2/3 volume and swirl in the butter. Ladle into serving bowls and serve with warmed bread.

SUPER SPICY RIBS

2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons chili powder
2 tablespoons paprika
1 tablespoon dry mustard
1 tablespoon salt
2 large racks (4 pounds or more) pork ribs
1/2 cup apple juice
1/2 cup tomato juice
1/2 cup molasses
1/4 cup Worcestershire sauce
1/4 cup hot sauce
1 cup barbecue sauce (your choice)

Steps:

  • A few hours before beginning the slow cooking of the ribs, make the rub by combining garlic powder, onion powder, chili powder, paprika, mustard, and salt in a bowl and mixing well. Rub the mix into the meat and let sit for at least an hour. The mixture will begin to cure the meat.
  • About 30 minutes before beginning to barbecue, heat the grill.
  • Wrap ribs in heavy duty aluminum foil and place on the grill over indirect heat and slowly cook for about 2 hours, turning occasionally.
  • While the ribs are cooking, begin the sauce on the stovetop. Combine apple juice, tomato juice, molasses, Worcestershire sauce, hot sauce and barbecue sauce in a saucepan, stirring to mix well. Simmer over low heat until it beings to thicken. Let simmer for 1/2 hour. Reserve about 1 cup to serve on the side with the ribs, and use the rest to brush on the ribs as they barbecue.
  • When the meat begins to become fork tender, unwrap ribs and begin brushing on the sauce. Continue to apply the sauce to the ribs during the barbeque process. When ribs are able to pull apart, they are ready.

CONCH ROLLS

1 cup grated coconut in syrup
1 cup shredded coconut
2 tablespoons dry active yeast
1/2 cup warm water
1/2 cup sugar
2 eggs
1 1/2 cups milk
1/2 cup solid vegetable shortening
1 3/4 cups flour, plus 1 3/4 cups
1/2 cup grated coconut in syrup
1/2 cup shredded coconut
2 teaspoons salt
Pan spray
Melted butter

Steps:

  • To make the filling for the conch rolls: In a medium mixing bowl, combine the grated coconut in syrup and shredded coconut. Reserve until needed.
  • To make the conch rolls: Preheat the oven to 350 degrees F.
  • In a small mixing bowl, dissolve the yeast in the water and let it begin to foam. In a large mixing bowl, with your hands, combine the sugar, eggs, milk, shortening, 1 3/4 cups flour, coconut in syrup, shredded coconut, and salt. Once the ingredients are well incorporated, move the mixture into the bowl of a standing mixer. With the dough hook attachment on, gradually add the remaining 1 3/4 cups of the flour. Once all of the flour is mixed in, remove the bowl from the mixer, take out the dough hook, cover dough with a cloth, and let rise for 1 1/2 hours.
  • Punch down the dough in the center with your fist, cover the dough again, and let rise for another 30 minutes. Punch down the dough a second time. Cut into 4-ounce balls to make the conch rolls. Roll out the 4-ounce dough portions into circles. Roll up the circles to form a spiral shell. Place onto a greased baking sheet. Let the rolls rest for another 30 minutes. Baste the insides of the rolls with the coconut in syrup mixture.
  • Bake conch rolls for 12 minutes or until lightly golden brown. Once the rolls or loaves are pulled from the oven, brush with melted butter.

I had a very similar meal at the Watercourse in Denver when I was a vegan. I found the recipe on the web somewhere a couple of years ago. Even meat lovers enjoy this dish. (As this is my first recipe I hope all goes well for those who try it.)

1/2 cup tamari
2 tablespoons lemon juice
1/4 cup mirin
1/2 cup water
2 (16 ounce) packages tempeh (makes about 4 slices)
2 cups sliced mushrooms (whatever type you prefer)
1 1/2 cups sliced yellow onions
1 teaspoon rosemary
1 tablespoon minced garlic
salt
pepper
flour
1/4 cup olive oil
1 tablespoon parsley
2 teaspoons lemon juice
3 ounces sweet white wine
6 ounces vegetable broth

Steps:

  • First, poach the tempeh slices in the marinade for about 20 minutes and then plop them into a flour-salt-pepper mix and brown each side in the olive oil to make a sort of roux.
  • Now, add the mushrooms, onions, garlic, and rosemary to saute for about two minutes.
  • Add wine and reduce by one half.
  • Add veggie stock and lemon juice, simmer until the sauce thickens.
  • Sprinkle with parsley and voila.
  • This is very nice with horseradish mashed potatoes.

Another dish we ate growing up. This is one of my favorites!We always ate it over cooked rice and I actually like to DOUBLE the recipe to have PLENTY of gravy.

1 round steak, cut into strips
1/2 cup flour
salt
pepper
garlic salt
1 chicken bouillon cube
1 cup water
2 (10 1/4 ounce) cans beef gravy
3/4 cup red wine
2 green onions

Steps:

  • Mix the flour, salt, pepper and garlic salt.
  • Coat the strips of meat.
  • Fry in a pan, using shortening or oil until brown.
  • Add the chicken bullion cube dissolved in the 1 cup water.
  • Add the 2 cans beef gravy and the 3/4 cup red wine.
  • Simmer for 1- 1 1/2 hours.
  • Garnish with chopped green onion.
  • Best when served over cooked rice!
