CONCH SALAD

My twist on a favorite Bahamian-style dish, served cold.

1 pound fresh conch
1 ¼ cups lemon juice, divided
1 cup diced tomatoes
½ cup diced onion
½ cup diced green bell pepper
½ cup diced cucumber
¼ teaspoon seasoning blend (such as Badia® Complete Seasoning®), or to taste
1 pinch seasoned salt, or to taste
2 cups tomato juice
¼ cup lime juice
¼ cup vinegar
1 dash hot sauce, or to taste

Steps:

  • Tenderize conch with a meat mallet. Dice into bite-sized chunks. Soak conch in 1 cup lemon juice for at least 2 hours, preferably overnight.
  • Drain off lemon juice and place conch in a bowl. Add tomatoes, onion, green pepper, cucumber, seasoning blend, and seasoned salt; mix thoroughly.
  • Transfer conch mixture to a container. Add remaining 1/4 cup lemon juice, tomato juice, and lime juice; mix well. Stir in vinegar and hot sauce. Refrigerate until flavors combine, about 1 hour. Serve cold.

Have been searching for the right recipe for a long time and when we made these they were out of this world. I found it on Emerils.com and what a find it is! We did not make the Island Hot Sauce - be careful this is really hot.

canola oil
1/4 lb conch, cleaned, cooked and diced small
1/2 cup diced onion
1 tablespoon garlic
3 eggs
1 1/2 cups milk
2 tablespoons baking powder
1 teaspoon salt
3 1/4 cups flour
1 tablespoon chopped parsley
1 quart vegetable oil, for frying
Tabasco sauce, to taste
Worcestershire sauce, to taste
spice essence, to taste
island hot sauce, to taste
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano leaves
1 tablespoon dried thyme
1 onion, chopped
2 carrots, chopped
3 scotch bonnet peppers, halved and seeded and stems removed
1 -2 tablespoon vegetable oil
2 tablespoons sherry wine vinegar (to taste)
kosher salt, to taste
water to cover bell pepper

Steps:

  • In a saute pan, add canola oil and heat.
  • Add the conch, onion and garlic; saute until translucent, about 3 minutes.
  • Remove from heat and cool.
  • Make the batter by combining the eggs, milk, baking powder, and salt.
  • Add the flour, 1/4 at a time, beating and incorporating until all is used and the batter is smooth.
  • Season with Tabasco and Worcestershire sauce.
  • Stir in the parsley and the cooled conch mixture.
  • Heat the oil to 360°F.
  • Drop by the batter, a heaping tablespoon at a time, into the oil.
  • When the fritters pop to the surface, roll them around in the oil to brown them evenly.
  • Remove and drain on paper towels.
  • Essence:.
  • Combine all ingredients thoroughly and store in air tight jar or container.(Yield 2/3 cup).
  • Season immediately with the Essence.
  • Island Hot Sauce:.
  • Sweat onion, carrots and peppers till soft, about 5 minutes.
  • Cover with water and vinegar.
  • Simmer till carrots are very tender.
  • Puree in blender and season to taste, with vinegar and salt.
  • Thin, as necessary, with a bit more water.
  • Serve with fritters and enjoy!

I used to make this chowder when I lived in Florida where it was easy to get conch, however large clams (shelled) will also work. Recipe source: Bon Appetit (January 1983)

8 cups water
2 cups conch, pounded with a mallet to tenderize and chopped into small pieces (3/4 - 1 pound, may substitute large shelled clams)
2 tablespoons shortening (Crisco) or 2 tablespoons bacon fat
2 cups onions, chopped
2 cups celery, chopped
1 cup green pepper, chopped
1 cup carrot, chopped
1 garlic clove, minced
3 quarts water
4 potatoes, peeled and diced (4 cups)
1 (10 ounce) can tomato puree
1 (6 ounce) can tomato paste
3 tablespoons fresh oregano, minced (or 1 tablespoon dried)
3 tablespoons fresh basil, minced (or 1 tablespoon dried)
2 bay leaves
hot pepper sauce
salt
pepper

Steps:

  • In a large saucepan (soup pot) over high heat, bring conch and 8 cups water to a boil. Drain and set aside.
  • In a large skillet over medium high heat, melt shortening (or bacon fat). Stir in onion, celery, bell pepper, carrot and garlic and saute until browned. You may have to cook in batches depending on size of skillet. Transfer vegetable to soup pot when cooked.
  • Add drained conch and 3 quarts of water to soup pot along with potatoes, tomato puree, tomato paste, oregano, basil, bay leaves and hot pepper sauce.
  • Put soup pot over high heat and bring to a boil. Reduce heat and simmer for 1 1/2 hours or until conch are tender and potatoes are cooked. Discard bay leaves. Add salt and pepper to taste.

2 pounds partially cooked fresh or frozen conch or whelk meat (scungilli)
1/3 cup olive oil
2 cloves large garlic, finely chopped
pinch of crushed red pepper, or to taste
2 (28-ounce) cans peeled tomatoes, chopped
1 cup dry white wine
salt
2 tablespoons chopped fresh flat-leaf parsley
Italian bread slices, toasted

Steps:

  • 1 If using fresh conch, go to step 2. If the conch are frozen, place them in a bowl with cold water to cover. Put the bowl in the refrigerator several hours or overnight, changing the water occasionally. 2 Begin cutting the conch into 1/4-inch slices. When you come to a dark tube filled with a spongy matter, pull or cut it out and discard it, as it can be gritty. There is another tube on the outside of the body that does not need to be removed. Rinse the slices well and pat them dry. 3 Pour the oil into a large saucepan. Add the garlic and crushed red pepper. Cook over medium heat until the garlic is golden, about 2 minutes. Add the tomatoes and their juice, the wine, and salt to taste. Bring to a simmer. Cook 15 minutes on low heat, stirring occasionally. 4 Add the conch and bring to a simmer. Cook, stirring occasionally, until the conch is tender and the sauce is thickened, about 30 minutes. If the sauce becomes too thick, stir in a little water. Taste for seasoning, adding more pepper, if desired. Stir in the parsley. 5 Place slices of toasted Italian bread in the bottom of 4 pasta bowls. Spoon on the conch and serve immediately.
