Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

Number Of Ingredients 12

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

3 slices bread
1 large egg, lightly beaten
2/3 cup 2% milk
1 cup shredded cheddar cheese
1 medium onion, finely chopped
1/2 cup finely shredded carrot
1 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds ground beef
GLAZE:
1/4 cup packed brown sugar
1/4 cup ketchup
1 tablespoon prepared mustard

Steps:

  • Preheat oven to 350°. Tear bread into 2-inch pieces; place in a blender. Cover and pulse to form coarse crumbs; transfer to a large bowl. Stir in egg, milk, cheese, onion, carrot, salt and pepper. Add beef; mix lightly but thoroughly. Transfer to a greased 9x5-in. loaf pan. , In a small bowl, mix glaze ingredients; spread over loaf. Bake 60-75 minutes or until a thermometer reads 160°. Let stand 10 minutes before slicing. Freeze option: Bake meat loaf without glaze. Securely wrap cooled meat loaf in foil, then freeze. To use, partially thaw meat loaf in refrigerator overnight. Prepare and spread glaze over top; reheat on a greased shallow baking pan in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°.

2 eggs
⅔ cup milk
2 teaspoons salt
¼ teaspoon ground black pepper
3 slices bread, crumbled
1 ½ pounds ground beef
1 onion, chopped
1 cup shredded Cheddar cheese
½ cup shredded carrot
¼ cup brown sugar
¼ cup ketchup
1 tablespoon prepared yellow mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk eggs, milk, salt, and ground black pepper in a large bowl. Add crumbled bread and stir until dissolved. Mix ground beef, onion, Cheddar cheese, and carrot into bread mixture; transfer mixture to a 9x5-inch loaf pan. Combine brown sugar, ketchup, and mustard in a small bowl; spread over meat mixture.
  • Bake in the preheated oven until no longer pink in the center, 1 to 1 1/4 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

This is a very easy and no fail recipe for meatloaf. It won't take long to make at all, and it's quite good!

1 ½ pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
⅓ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

FILLING:
1/2 cup finely chopped onion
1/2 cup diced celery
1/2 cup butter, cubed
6 slices bread, toasted, cubed
1 large egg, beaten
1/2 cup water
1/2 teaspoon poultry seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
MEAT LOAF:
1 large egg, beaten
2/3 cup evaporated milk
1/4 cup dry bread crumbs
1 teaspoon salt
1-1/2 pounds lean ground beef

Steps:

  • In a skillet, saute onion and celery in butter until tender. In a large bowl, combine the bread cubes, egg and water. Stir in the onion mixture, poultry seasoning, salt and pepper; set aside. , In another large bowl, combine the egg, milk, bread crumbs and salt. Crumble beef over mixture and mix well. Pat two-thirds of the meat mixture onto the bottom and up the sides to within 3/4 in. of the top of a 9x5-in. loaf pan. Spoon filling into meat shell; cover top with remaining meat mixture and seal edges. , Bake at 350° for 1 hour or until meat is no longer pink; drain. Let stand for 10 minutes before serving.

1/2 cup redi mix breadcrumbs
1 medium size green pepper, chopped

Steps:

  • In a large mixing bowl, combine the egg, the bread crumbs, and the milk. Stir in the onion, salt, poultry seasoning, sage, pepper, nutmeg, and ginger. Add ground beef and mix well.
  • In a shallow baking dish, pat mixture into an 8x4x1-1/2-inch loaf, smoothing the top. Bake meat loaf in 350 degree oven for 45 minutes.
  • In a small bowl, stir together the ketchup and brown sugar. Spread over the meat loaf. Bake for 10 to 15 minutes more, until done.
  • In the meatime, prepare Dried Tomato Mayonnaise: In a small bowl, cover dried tomatoes with boiling water. Let tomatoes stand 5 minutes; drain well. Finely chop the tomatoes. In the small bowl, combine the tomatoes, mayonnaise, sour cream, and milk. Use half of the mixture for the meat loaf sandwiches; refrigerate remaining mixture to serve with other meat or poultry sandwiches.
  • Serve sliced meat loaf on bread with Dried Tomato Mayonnaise, cheese, lettuce, and tomato slice.

½ cup milk
1 cup soft bread crumbs
1 ½ pounds ground beef
1 ¼ teaspoons salt
ground black pepper to taste
1 egg, slightly beaten
3 tablespoons steak sauce, (e.g. Heinz 57)
1 onion, chopped
½ cup diced green bell pepper
¼ cup steak sauce, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
  • Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
  • In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
  • Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.
