CLASSIC COLESLAW

4 carrots, shredded
2 heads green cabbage, sliced thin
1/4 head purple cabbage, sliced thin
2 cups whole milk, plus more for thinning
1 cup mayonnaise
2 tablespoons sugar
4 teaspoons white vinegar
2 teaspoons freshly ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 cup minced fresh parsley

Steps:

  • Combine the carrots and the green and purple cabbage in a large bowl.
  • In a separate bowl, mix together the milk, mayonnaise, sugar, vinegar, black pepper, cayenne and salt. Add more milk if you like the dressing a little thinner. Pour over the cabbage mixture and toss to combine. Add the parsley and toss again.

½ cup mayonnaise
¼ cup sour cream
2 tablespoons cider vinegar
¾ teaspoon sugar
½ teaspoon salt
½ teaspoon black pepper
2 lb green cabbage, quartered, cored, and thinly sliced (8 cups)
3 medium carrots, shredded

Steps:

  • Whisk together mayonnaise, sour cream, vinegar, sugar, salt, and pepper in a large bowl until combined well, then toss with cabbage and carrots. Let stand, uncovered, at room temperature, tossing occasionally, until wilted, about 30 minutes. Serve at room temperature or chilled. Do Ahead: Coleslaw can be made 1 day ahead and chilled, covered.

Raspberry Jam, heated, recipe follows
7 ounces sugar
2 tablespoons tapioca flour, sifted
4 egg yolks
2 tablespoons orange liqueur (Recommended: Grand Marnier)
1 tablespoon orange zest, finely minced
1 tablespoon lemon zest, finely minced
8 egg whites
12 ounces fresh raspberries (about 2 baskets)
1/4 cup sugar
1/4 cup fresh orange juice
2 tablespoons fresh lemon juice

Steps:

  • Preheat the oven to 400 degrees F.
  • Pour the warm raspberry jam into a 7 by 11-inch baking dish. In a medium sized mixing bowl, whisk together 1 ounce of sugar, and tapioca flour. Add the egg yolks, Grand Marnier, orange zest and lemon zest. Whisk until light in color.
  • In an electric mixer, fitted with a wire whisk, beat together the egg whites and 1 ounce of sugar to soft peaks. Then, add the remaining 5 ounces of sugar in a slow, steady stream and continue to whip to stiff peaks.
  • Stir 1/3 of the meringue into the egg yolk mixture to blend. Fold in the remaining meringue and continue to gently mix until well blended.
  • Spoon into 3 equal mounds over the raspberry jam, shaping to resemble the 3 mountains of Salzburg. Bake for 12 to 15 minutes, until golden and risen like a souffle. Serve immediately with extra raspberry jam and Creme Anglaise.
  • In a small saute pan, combine 6 ounces of raspberries, sugar, orange juice and lemon juice. Bring to a boil and cook for about 3 minutes, whisking vigorously to break apart the raspberries. The mixture should resemble a loose jam. Remove from the heat and add the remaining 6 ounces of raspberries, stirring gently until well coated.

BRAISED RED CABBAGE

1/4 cup peanut oil
1 medium red onion, sliced
1 cup brown sugar
2 Granny Smith apples, sliced
1/2 cup red wine vinegar
2 cups red wine
2 cups orange juice
1 cinnamon stick
3 teaspoons ginger powder
Salt and pepper
4 pounds red cabbage, cut into julienne
A few gold leaves for decoration (optional ? available at specialty stores)

Steps:

  • Preheat oven to 350 degrees F.
  • Heat a heavy casserole. Add peanut oil. Saute red onion until translucent. Sprinkle in brown sugar and cook for a few minutes until it starts to caramelize.
  • Add sliced apples and deglaze with the red wine vinegar. Bring to a boil. Add red wine and orange juice, cinnamon stick, ginger powder and salt and pepper. Simmer for 5 minutes.
  • Add red cabbage and continue to cook for about 10 minutes on top of the stove.
  • Cover cabbage with foil and cook in 350 degrees F. oven for about 45 minutes. Remove. Taste, and adjust seasoning, if necessary.

WOLFGANG PUCK'S SALMON WITH CELERY-ROOT PUREE



Wolfgang Puck's Salmon With Celery-Root Puree image

6 tablespoons unsalted butter
1 shallot, chopped
1 clove garlic, minced
1 tomato, peeled, seeded and chopped
1/2 bottle cabernet sauvignon
2 tablespoons balsamic vinegar
1 cup chicken stock
Salt and freshly ground pepper to taste
1 medium-sized baking potato, peeled
1 celery root, peeled
1/2 cup heavy cream
2 tablespoons butter
Salt and freshly ground pepper to taste
1 1/2 tablespoons fresh ginger, finely minced
1 1/2 tablespoons black pepper, chopped or roughly cracked
4 salmon fillets, Alaskan King or other, each about 6 ounces
Olive oil for grilling or sauteing

Steps:

  • To make the sauce, heat two tablespoons of the butter in a large saute pan until the butter is foamy. Add the shallot, garlic and tomato and saute at medium-low heat for about five minutes, or until the shallot is translucent.
  • Add the wine and vinegar and cook over medium-high heat until reduced by half. Add the chicken stock and reduce again by half. Finish the sauce by stirring in the remaining four tablespoons of butter, one tablespoon at a time. Season with salt and freshly round pepper to taste. Keep warm.
  • Prepare the celery-root puree by chopping the potato and celery root into one-inch cubes. Put in a medium-sized pot and cover with lightly salted cold water. When the water comes to a boil, cook for 15 to 20 minutes, or until soft. Drain and return the potato and celery root to the pot. Heat briefly until the excess moisture evaporates.
  • Pass the celery Root-potato mixture through the small disk of a food mill or a ricer. (Do not use a food processor; it will make a gluey puree.) Return to the pot.
  • Stir in the cream and cook, stirring, over medium heat for about three minutes, or until thickened.
  • Remove from the heat. Stir in the butter and the salt and pepper to taste.
  • In a small bowl, combine the ginger and black pepper. Season the salmon with salt and coat with the ginger-pepper mixture. If grilling or broiling the salmon, sprinkle the fillets with olive oil and cook two minutes on each side. If sauteing the salmon, heat one tablespoon of olive oil in a large saute pan. When the pan is very hot, add the salmon and cook two minutes on each side.
  • Divide the sauce among four warm dinner plates. Spoon equal amounts of celery-root puree on the center of each plate. Place salmon on top.
