Colcannon Potatoes are an Irish mashed potato recipe with mixed with greens and scallions and LOTS of butter and cream. You can't go wrong with this green-filled dish on St. Patrick's Day!

4 russet potatoes (2 to 2 1/2 pounds), peeled and cut into large chunks
Salt
5 to 6 Tbsp unsalted butter (with more butter for serving)
3 lightly packed cups of chopped kale, cabbage, chard, or other leafy green
3 green onions (including the green onion greens), minced (about 1/2 cup)
1 cup milk or cream

Steps:

  • Boil the potatoes: Put the potatoes in a medium pot and cover with cold water by at least an inch. Add 2 tablespoons of salt, and bring to a boil. Boil until the potatoes are fork tender, 15 to 20 minutes. Drain in a colander.
  • Cook the greens and the green onions with butter: Return the pot to the stove and set over medium-high heat. Melt the butter in the pot and once it's hot, add the greens. Cook the greens for 3-4 minutes, or until they are wilted and have given off some of their water. Add the green onions and cook 1 minute more.

Number Of Ingredients 7

6 Yukon gold potatoes (about 2 pounds), peeled and diced into 1-inch pieces
Kosher salt and freshly ground black pepper
2 cups half-and-half
1 stick (8 tablespoons) unsalted butter
3 cloves garlic, smashed
1/2 head green cabbage, finely shredded (about 2 cups)
2 green onions, thinly sliced

Steps:

  • Place the potatoes and 2 tablespoons salt in a large pot. Add enough water to cover the potatoes by at least 1 inch and bring to a boil over high heat, then reduce to a simmer until the potatoes are cooked through and fork tender, 20 to 30 minutes.
  • Meanwhile, heat the half-and-half, butter, garlic, 1 teaspoon salt and 1/2 teaspoon black pepper in a small saucepan over medium heat. Bring to a simmer, then turn off then heat and set aside.
  • Drain the potatoes and pass through a ricer into a large bowl. Remove the garlic from the half-and-half mixture. Stir the half-and-half mixture, cabbage, three-quarters of the green onions and salt and pepper to taste into the potatoes until combined. Top with the remaining green onions and extra pepper.

3 cups finely shredded green cabbage
1 onion (finely chopped)
1/4 cup water
6 potatoes (cooked and mashed, or 4 cups prepared instant mashed potatoes )
1/4 cup milk
1/4 cup butter (or margarine)
Salt (to taste)
Freshly ground pepper (to taste)

Steps:

  • Gather the ingredients.
  • Place cabbage, onion, and water in a saucepan or Dutch oven and quickly bring to a boil. Reduce heat, cover, and simmer about 8 minutes until tender. Do not overcook.
  • Add mashed potatoes , milk, butter or margarine, salt , and pepper . Mix well, stirring often until heated through. Serve warm as a side dish.
  • Enjoy!

  • Bring a large pot of salted water to a boil over high heat. Add the potatoes and cook for 15-20 minutes, until fork tender. When soft, drain the potatoes in a colander and set aside.
  • In the same pot that the potatoes were boiled in, melt 2 tablespoons of the butter over medium-high heat. Add the chopped cabbage, season with salt and pepper, and saute until the cabbage softens, around 5-7 minutes. If you want to add kale as well (or use it instead of cabbage altogether), cook the kale for the last 3-4 minutes since it doesn't take as long to wilt as the cabbage does. Add the chopped green onions for the last minute or two. Transfer to a bowl.
  • Return the potatoes to the pot and mash them using a potato masher, then stir in the cream and 4 tablespoons of the remaining butter, reserving 2 tablespoons of butter for finishing the potatoes. Stir in the cabbage and green onions, and season with salt and pepper, to taste.
  • Transfer the colcannon to a serving bowl and top with the remaining butter to melt over top. Serve immediately.

Put the drained potatoes back into the pot they cooked in, and mash them with 1 1/4 teaspoons salt and 5 tablespoons butter (leaving lumps if you like). Gradually mash in the half and half a little at a time so the potatoes absorb it all.
  • Add 5 tablespoons butter to a large skillet over medium-high heat. Add the cabbage, onion, remaining 11/2 teaspoons salt and the black pepper. Cook until tender, about 10 to 14 minutes. Stir in half of the sliced scallion, and cook 30 seconds more.
