EASY COFFEE SQUARES



Easy Coffee Squares image

I make these often it's a wonderful easy recipe and they are very moist! Serving size is only estimated depending on the size you cut the squares. You can even add in nuts in place of the chocolate chips or use about 6 ounces each!

Number Of Ingredients 11

1/2 cup oil
2 cups brown sugar
2 eggs
3 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla (can use 2 teaspoons)
1 cup strong black coffee
12 ounces chocolate chips (or to taste)

Steps:

  • Set oven to 350 degrees.
  • Grease a large cookie sheet.
  • In a bowl combine oil, sugar and eggs, beat until well combined.
  • In another bowl, combine dry ingredients, except chocolate chips, then add to the oil/sugar mixture; mix well.
  • Add the vanilla and coffee; mix until combined.
  • Stir in chocolate chips.
  • Spread on a cookie sheet.
  • Bake for about 35 minutes or until bars tests done.
  • Cool and cut into squares.
  • Delicious!

Favorite Coffee Squares image

A piece of this cake with a cup of steamy coffee... What a way to start the day!!

Number Of Ingredients 14

1 c raisins
2 c water
1/2 c shortening
1 large egg
1 c sugar
2 1/2 c flour, sifted
1 tsp baking soda
1 tsp salt
1/2 tsp cloves
1/2 tsp cinnamon
FROSTING
1 c powdered sugar
2 Tbsp milk, approx
1/2 tsp vanilla

Steps:

  • 1. Cook raisins in water until only 1 cup liquid remains.
  • 2. Add hot liquid to shortening. Set aside and let cool.
  • 3. Beat eggs and sugar together. Stir in Shortening mixture. Blend in dry ingredients. Fold in raisins.
  • 4. Spread in greased 10x15 cookie sheet with edges. Bake at 350 degrees for 20-25 min.
  • 5. Frost with powdered sugar frosting while still warm.
  • 6. Cut into squares.

1 cup vegetable oil
2 eggs
3 cups all-purpose flour
1 cup brewed coffee
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla extract
1 (12 ounce) bag chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Beat brown sugar, oil, and eggs together in a bowl using an electric mixer until smooth and creamy. Stir flour, coffee, salt, baking soda, and vanilla extract into creamed sugar mixture until batter is just mixed; fold in chocolate chips and walnuts. Spread batter into the prepared baking dish.
  • Bake in the preheated oven until edges start to crisp and a toothpick inserted in the center comes out clean, 25 to 30 minutes.

They're all red and white with a hint of maple. When sliced, the cookies reveal a white base, red middle, and white top. They will have you singing 'O Canada' for the rest of the day!

1 cup all-purpose flour
2 tablespoons confectioners' sugar
½ cup butter
⅓ cup seedless raspberry jam
⅔ cup white sugar
½ cup butter, softened
2 eggs
⅔ cup rice flour
10 drops red food coloring, or as needed
2 cups confectioners' sugar, or as needed
⅓ cup butter, softened
1 tablespoon milk, or as needed
1 teaspoon maple extract

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Line bottom and sides of an 8-inch square baking pan with parchment paper; crease corners well.
  • Whisk together 1 cup flour and 2 tablespoons confectioners' sugar; cut in 1/2 cup butter until mixture resembles fine crumbs. Pat mixture evenly into prepared pan.
  • Bake in the preheated oven for 20 minutes; remove to cool on a wire rack, about 15 minutes. Top base evenly with raspberry jam.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat white sugar and 1/2 cup butter together until fluffy; beat in eggs until fluffy and pale yellow. Beat rice flour into egg mixture until well combined; stir in food coloring until batter reaches desired shade of red. Spread batter evenly over jam layer.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes. Cool completely in the pan; about 20 minutes.
  • Beat 2 cups confectioners' sugar and 1/3 cup butter together in a bowl with an electric mixer until smooth; stir in milk and maple extract. Spread icing evenly over cooled bars.
  • Hold edges of parchment paper; lift squares out of pan to a cutting board. Slice into 1-inch squares with a very sharp knife.

To heighten the toffee flavor, substitute toffee baking bits for half of the chopped almonds.

Crust
1 cup (2 sticks) unsalted butter, at room temperature
1 cup firmly packed light brown sugar
1 large egg yolk
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups all-purpose flour
Topping
7 to 8 ounces milk chocolate, broken into pieces, or 1 1/2 cups milk chocolate chips
1 cup chopped almonds, toasted

Steps:

  • 1. Preheat the oven to 350°F. Line a 9-by-13-inch baking pan with parchment.
  • 2. Prepare the crust. In a large bowl, with an electric mixer, beat together the butter and sugar on medium speed until light, about 2 minutes. Beat in the egg yolk, vanilla, and salt. On low speed, gradually beat in the flour just until mixed. The dough will be stiff. Pat the dough evenly over the bottom of the baking pan.
  • 3. Bake in the center of the oven until pale gold on top, about 20 minutes.
  • 4. Remove the pan from the oven and scatter the chocolate pieces evenly over the crust. Return the pan to the oven for 1 minute. Remove the pan again and, using a knife, spread the chocolate evenly over the crust. Sprinkle evenly with the almonds.
  • 5. Let cool completely in the pan on a wire rack. Using a sharp knife, cut into small squares, then carefully remove from the pan with a small offset spatula or an icing spatula.

This cake is not a typical "Coffee Cake" with cinnamon. It is a chocolate chip cake with real coffee. My family gobbles these squares up.

1/2 cup margarine or 1/2 cup butter
1 1/2 cups brown sugar
1 egg
1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla
1/2 cup warm coffee
1/2 cup chocolate chips

Steps:

  • Preheat the oven to 350 degrees.
  • Cream the margarine or butter with the sugar.
  • Add the egg and mix.
  • Then blend in the rest of the ingredients except the chips.
  • Spread into a greased 9x13" baking pan.
  • Sprinkle the chocolate chips on top.
  • Bake for 30-35 minutes.
  • Cool and then cut into squares.
