Coffee Rubbed Homemade Burgers image

These Homemade Burgers are seasoned with a spiced coffee rub that elevates the flavor of the beef and makes for a truly epic hamburger!

1 1/2 Tbsp ground coffee
1/2 Tbsp salt
1/2 Tbsp paprika
1/2 Tbsp brown sugar
1/2 Tbsp pepper
1/2 Tbsp onion powder
1/2 Tbsp garlic powder
1/4 Tbsp ground coriander
2 Tbsp butter
1/2 yellow onion (diced)
3 cloves garlic (roughly minced)
1/2 cup ketchup
1 1/2 Tbsp tomato paste
6 oz Dr Pepper
1/4 cup apple cider vinegar
2 1/2 Tbsp Worcestershire sauce
1/4 cup brown sugar (packed)
1 tsp ancho chile powder
1/2 tsp salt
1/4 tsp pepper
3 Tbsp brewed coffee
2 lbs Angus ground beef (85/15)
2 Tbsp heavy cream (or extra bbq sauce)
1 tsp kosher salt
1/2 tsp black pepper
Brioche or pretzel buns
green leaf or arugula lettuce
8 slices cooked bacon

Steps:

  • Combine coffee rub seasoning mix ingredients in a small bowl and mix together with a fork. Set aside.
  • Melt butter over MED heat in a saucepan. Add onion and garlic and saute until soft and translucent, about 6-8 minutes.
  • Add remaining bbq sauce ingredients, stirring to combine. Bring to a low boil, then reduce heat and simmer for 20 minutes, until sauce has thickened.
  • Pour sauce into blender or food processor and puree. Set aside to cool.
  • To a mixing bowl, add ground beef, heavy cream, salt, and black pepper. Mix well with your hands. Divide into 6 equal sections. Each burger will be about 1/3 pound.
  • Use your thumbs to press a half dollar sized divot in the center of each patty (this will help prevent the burger from doming up while cooking).
  • Liberally rub coffee seasoning mix over both sides of each burger.
  • Preheat grill over MED HIGH heat and lightly brush grates with vegetable oil if desired. Grill burgers, for about 5 minutes per side, or until desired doneness is achieved.
  • While burgers are grilling, toast buns on the grill as well.
  • To serve, spread bbq sauce over the top and bottom buns, then top the bottom bun with a piece of lettuce, a cooked burger, a smear of more bbq sauce, some bacon, then top with the top bun.

I got this recipe from Bon Appetit. This is a great recipe and a nice change from the normal Cheeseburgers. The coffee really compliments the flavor of the meat.

1 tablespoon freshly ground coffee
2 teaspoons packed golden brown sugar
2 teaspoons fresh ground black pepper
1/2 teaspoon ground coriander
1/2 teaspoon dried oregano
1/2 teaspoon fine sea salt
8 slices applewood-smoked bacon
1 lb ground chuck
1 lb ground sirloin
8 slices smoked provolone cheese, smoked caciocavallo or 8 slices smoked gouda cheese
8 potato-bread hamburger buns

Steps:

  • For coffee rub:
  • Mix all ingredients in small bowl. DO AHEAD: Can be made 1 week ahead. Store airtight at room temperature.
  • For burgers:
  • Cook bacon in large skillet until crisp. Transfer to paper towels to drain. Break in half. Gently mix chuck and sirloin in large bowl. Form meat into 8 patties, each 3 1/2 to 4 inches in diameter and 1/3 to 1/2 inch thick. Using thumb, make slight indentation in center of each burger. DO AHEAD: Burgers and bacon can be prepared 8 hours ahead. Cover separately and chill.
  • Prepare barbecue (medium-high heat). Sprinkle 1 teaspoon coffee rub on top side of each burger. Place burgers, rub side down, on grill rack. Grill until slightly charred, about 4 minutes; turn.
  • Place 2 bacon slice halves atop each burger. Cook 3 minutes.
  • Top each with 1 cheese slice. Cover and cook until cheese melts, about 1 minute longer. Place burgers atop bottom halves of buns. Top with onion slices and tomato slices.

COFFEE RUB
1 tbsp freshly ground coffee
2 stun (packed) golden brown sugar
2 tspn fresh ground black pepper
½ tspn fresh ground Coriander
½ tspn fresh dried Oregano
½ tspn fine sea salt
BURGERS
2 lbs ground beef or 1 lb ground beef and 1 lb ground sirloin
8 slices smoked provolone, equally as good with cheddar
8 potato bread hamburger buns
8 slices red onion
8 slices tomato
8 slices apple wood smoked bacon (or thick bacon)
2 tbsp worcestshire sauce
3 garlic cloves minced
2 tspn grey poupon
BBQ SAUCE
1 Tbsp Butter
1 Garlice Clove Minced
1 Cup Ketchup
1/3 Packed Golden Brown Sugar
1/3 Cup Worcestshire Sauce
¼ Cup Fresh Lemon Juice
1 Chipotle Chili from called chipotle chili in adobo
¼ tspn Ground Cayenne
Melt butter in medium saucepan over medium heat. Add garlic; stir 30 seconds. Stir in ketchup and all remaining ingredients. Bring to a boil. Reduce heat to med-low simmer until reduced to 11/3 cups stirring occasionally about 15 minutes season with salt and pepper to taste.
**Can be made 1 week ahead.

Steps:

  • For rub mix all ingredients in small bowl, rub can be made one week ahead. For burgers, mix ground beef with the mustard, garlic and worcestchire until completely mixed. Makes 8 patties. Cook bacon and set aside on drip dish to drain off all the fat and break in half. Using your thumb make a slight indentation in each burger in the center. Prepare BBQ heat to medium. Sprinkle 1 TBSPN of coffee rub on each side of the hamburger patty. Grill until slightly charred about 4 minutes, turn then place two bacon halves atop each burger. Cook for three (3) minutes then place cheese on top and melt, about one minute longer. Top with onions and tomatoes. Spoon a dollop of Texas BBQ sauce and serve the burger on the potato bun. Cooking Tip: Making an indentation in the center of the patty before cooking ensures a nice flat burger.
