Buttery soft and flaky pan-seared cod with rich cherry tomato sauce - a quick and easy dinner recipe for busy weeknights.

4 (4-6oz) cod filets (Note 1)
2 teaspoons coarse kosher salt
1 teaspoon black pepper
2 tablespoons olive oil
1 pint cherry tomatoes
2 cloves garlic (grated)
1/4 cup white wine (or water)
2 tablespoons unsalted butter

Steps:

  • Thoroughly pad dry cod filets with paper towel. Salt and pepper on both sides.
  • Preheat a large (12-inch) skillet over medium high heat. Add oil.
  • Once the oil is shimmering, add cod fillets and sear them until lightly brown, about 3 minutes. Flip the fish over and add tomatoes. Cook for about 5 minutes.
  • Once the tomatoes soften and start to burst, check the internal temperature of the fish. It should be at least 145°F. (TIP: Read the post below recipe for other ways to tell if fish is cooked.) Remove fish onto a clean plate.
  • Add wine (or water) and garlic, and continue to cook the sauce for about 5 minutes. Excess liquid should evaporate, leaving the sauce thick and rich. Stir in butter.
  • Add the fish back into the pan and let them warm up. And serve!

In this quick, elegant dinner, cherry tomatoes are roasted with garlic, shallots, sherry vinegar and a drizzle of honey, turning them into a sweet and savory condiment for simple roasted fish. This versatile, year-round recipe is delicious with juicy end-of-summer tomatoes or even with a pint from the grocery store. Thick white fish such as cod or halibut work best here. 1 pint cherry tomatoes, halved
1/2 cup thinly sliced shallots (about 1 large)
2 teaspoons minced garlic (about 2 large cloves)
2 tablespoons olive oil, plus more for brushing
1 tablespoon sherry or red wine vinegar
1 teaspoon honey
1 teaspoon kosher salt, plus more to taste
1/2 teaspoon black pepper, plus more to taste
4 (6-ounce) skin-on mild white fish fillets, such as cod or halibut
1 teaspoon freshly grated lemon zest (from about 1/2 lemon)
Chopped fresh basil, for serving
Chopped fresh mint, for serving

Steps:

  • Heat the oven to 400 degrees. Place the tomatoes, shallots and garlic in a 9-by-13-inch nonreactive baking dish. In a small bowl, whisk together the olive oil, vinegar, honey, salt and pepper. Pour over the tomatoes and toss to combine. Roast until the tomatoes have collapsed and the shallots are translucent, about 15 minutes.
  • While the tomatoes roast, pat the fish dry with paper towels, brush all over with olive oil, and season generously with salt and pepper.
  • Toss the tomatoes, move them to the sides of the dish and place the fish fillets, evenly spaced, in the center. Roast until the fish is cooked through and flakes easily with a fork, 10 to 12 minutes.
  • Sprinkle the entire dish with the lemon zest, basil and mint. Serve the fish with the tomatoes, spooning any remaining juices on top.

1/4 cup plus 1 tablespoon olive oil
1 pound cherry tomatoes, stemmed (3 cups)
1/2 cup tightly packed basil leaves
2 medium-size cloves garlic, smashed and peeled
1 large pinch hot red pepper flakes
1 1/2 teaspoons kosher salt
6 4-ounce cod or flounder fillets
Freshly ground black pepper to taste

Steps:

  • Place the 1/4 cup olive oil in a 13-by-9-by-2-inch oval dish. Cook, uncovered, at 100 percent power in a high-power oven for 2 minutes. Stir in tomatoes; cook for 8 minutes.
  • Place the basil, garlic and remaining oil in a food processor. Process until finely chopped, stopping twice to scrape down the bowl.
  • Remove the dish from oven. Stir in the basil mixture, pepper flakes and 1 teaspoon of the salt. Cook, uncovered, for 1 minute.
  • Remove the dish from the oven. Place fish fillets over the tomato sauce. Sprinkle with pepper and the remaining salt. Cover tightly with microwave plastic wrap. Cook for 7 minutes. Then prick the plastic to release steam. Remove from the oven and uncover. Place each fillet on a plate, and spoon over some sauce.

2 cans (14-1/2 ounces each) diced tomatoes with basil, oregano and garlic, undrained
4 cod fillets (6 ounces each)
2 tablespoons olive oil, divided
2 medium onions, halved and thinly sliced (about 1-1/2 cups)
1/2 teaspoon dried oregano
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper flakes
Hot cooked whole wheat pasta
Minced fresh parsley, optional

Steps:

  • Place tomatoes in a blender. Cover and process until pureed., Pat fish dry with paper towels. In a large skillet, heat 1 tablespoon oil over medium-high heat. Add cod fillets; cook until surface of fish begins to color, 2-4 minutes on each side. Remove from pan., In same skillet, heat remaining oil over medium-high heat. ½ x 680g jar passata
400g can butter bean, drained

  • Heat oven to 220C/200C fan/gas 7. Put the peppers, onions, tomatoes and olives into a large, deep baking tray and cook for 15 mins until they start to soften and char at the edges.

For a no-fuss fish dish, try roasted cod with easy watercress sauce and roasted cherry tomatoes

6 Icelandic cod fillets (about 175g/6oz each), skin on
25g butter , softened
2 tbsp olive oil
300g cherry tomato , a mix of red and yellow if you can get them
2 shallots , finely chopped
150ml dry white wine
half a 200g tub crème fraîche
bunch of watercress , tough stalks removed, roughly chopped
juice of half a lemon
100ml whipping cream
parsley or chervil sprigs, to garnish

Steps:

  • Smear the skin of the cod with the butter and season with sea salt. Heat 1 tbsp of the oil in a frying pan. When very hot add the cod, skin side down, and fry, without moving the fish, until the skin is crisp and golden. Invert on to a shallow ovenproof dish, ready to finish it off in the oven.
  • Put the cherry tomatoes in a separate shallow ovenproof dish and drizzle with another 1 tbsp oil.
  • To make the sauce, cook the shallots and wine in a small pan for about 2-3 minutes until the wine has almost gone. Tip into a food processor with the crème fraîche and watercress, season with salt and pepper and blitz. Add a squeeze of lemon juice to taste, return to the pan and set aside. Lightly whip the cream until it just holds its shape. (At this stage the cod, sauce and cream can be kept in the fridge, lightly covered with cling film, for up to 4 hours.)
  • About 20 minutes before you are ready to cook, preheat the oven to fan 170C/conventional 190C/gas 5. Roast the cod and tomatoes for 12-15 minutes until just cooked. Meanwhile, gently reheat the sauce, remove from the heat and fold in the cream. Taste and add more seasoning and lemon juice if necessary. Set the cod on warm dinner plates with the cherry tomatoes and spoonfuls of watercress sauce. Garnish with sprigs of parsley or chervil and serve with buttered new potatoes.

1 onion, chopped
400g can chopped tomatoes
1 heaped tsp light soft brown sugar
few sprigs thyme, leaves stripped

Steps:

  • Heat 1 tbsp olive oil in a frying pan, add 1 chopped onion, then fry for 5-8 mins until lightly browned.
  • Stir in a 400g can chopped tomatoes, 1 heaped tsp light soft brown sugar, the leaves from a few sprigs of thyme and 1 tbsp soy sauce, then bring to the boil.
  • Simmer 5 mins, then slip 4 cod fillets into the sauce.
  • Cover and gently cook for 8-10 mins until the cod flakes easily. Serve with baked or steamed potatoes.
