Cod Fish with Potatoes & Eggs image

I remember my mom making this when I was growing up, although I never ate it as a child. It was my grandfathers favorite.

1 bag(s) salted cod fish no bones
1 small onion, diced
1 small green pepper, diced
1 jar(s) red pimentos
4 garlic cloves, chopped
1 Tbsp green olives
1 tsp capers
2 can(s) tomato sauce
1 c white cooking wine
1 bay leaf
1 bunch cilantro, chopped
pepper to taste
dash of tabasco
1 Tbsp olive oil
1 potato,peeled and sliced
3 hard boiled eggs, sliced

Steps:

  • 1. Place the salted cod in a bowl of water, let sit to "de-salt", rinse twice...then place in a pot with fresh water and bring to a boil, rinse that water twice about 20 mins total...drain and set aside.
  • 2. to the same pot add the olive oil, onions, peppers, garlic...sauté 5mins.
  • 3. add the tomato sauce, wine, red pimentos, pepper, tabasco, olives, capers, bay leaf...simmer about 5 mins.
  • 4. meanwhile place the potato slices in boiling water till al dente...3-5 mins.
  • 5. make the hard boiled eggs by putting in a pot of cold water, bring to boil and turn off....after 10 mins, drain, cool, peel and slice. Gently break up the cooled cod fish and place in the sauce, add the sliced potatoes and eggs and cilantro combine..serve with rice

8 cod, loins (frozen)
salt & pepper
garlic powder
8 large potatoes, quartered
1 tablespoon paprika
3 garlic cloves, minced
1/2 teaspoon ground cumin
2 teaspoons salt (or to taste)
1/2 teaspoon black pepper
1/2 teaspoon piri-piri or 1/2 teaspoon hot sauce
1 tablespoon ketchup or 1 tablespoon tomato paste
1 onion, quartered
1/2 cup white wine
olive oil

Steps:

  • Preheat the oven to 375°F.
  • Season the frozen fish with salt, pepper & garlic powder and set aside.
  • In a large 9 x 13 pyrex dish or roasting pan, toss the potatoes, paprika, garlic cloves, salt, pepper, piri-piri sauce, cumin, onions, ketchup, wine and olive oil together.
  • Place the dish in the middle of the oven and bake for 35 minutes, or until the potatoes are almost tender, tossing regularly. Coat the fish with the sauce then place on top of the potatoes. Bake until the fish is tender and flaky (basting and turning 2 or 3 times) and potatoes are tender.

An excellent cod fish dish. You must soak the salted cod over night and change the water at least twice. This is an easy fish meal with my mom's original ingredients.

2 pounds salted cod fish
5 large potatoes, peeled and sliced
3 large onions, sliced
¾ cup olive oil
2 cloves garlic, minced
1 tablespoon chopped fresh parsley
1 ½ teaspoons crushed red pepper flakes
1 teaspoon paprika
3 tablespoons tomato sauce

Steps:

  • Soak salted cod in cold water overnight or for a few hours. Drain water, repeat. Heat a large pot of water until boiling. Cook cod for 5 minutes; drain and cool, leaving cod in large pieces. Set aside.
  • Preheat oven to 375 degrees F (190 degrees C).
  • In an 8x11 casserole dish, layer half the potato slices, all of the cod, and all of the onions. Top with remaining potato slices. In a small bowl, mix together olive oil, garlic, parsley, pepper flakes, paprika, and tomato sauce. Pour evenly over casserole.
  • Bake in preheated oven for 45 minutes, or until potatoes are tender.

  • Gently rinse the salt cod under cold water to remove any surface salt. Soak overnight in cold water (12 to 18 hours) in the fridge, changing the water twice. Drain the fish, gently rinse again under cold water, then pat dry with paper towels. Shred the fish into bite-sized strips.
  • Using a cheese grater or the grater attachment of a food processor, grate the potatoes into shreds. Soak in cold water for 5 minutes, then drain and rinse thoroughly and pat dry with paper towels.
  • Warm the lard or duck fat in a large skillet on medium-high heat until shimmering. Add half of the potatoes and pan-fry, stirring often to keep the potatoes from sticking together; remove with a slotted spoon when they turn golden brown, about 5 minutes, and set aside to cool on paper towels. Repeat this process with the other half of the potatoes. Reduce heat to medium and discard all but 1 tablespoon of the cooking fat.
  • Add the chopped onion and saffron to the skillet and sauté until the onion is translucent, about 5 minutes. Add the fish and pepper; gently stir to combine. Allow to sauté until the fish is softened, 3 to 5 minutes.
