A small recipe I improvised while for my lactose-intolerant friend.

Number Of Ingredients 3

½ cup coconut oil
2 cups confectioners' sugar, or as needed
1 teaspoon vanilla extract

Steps:

  • Microwave coconut oil until melted, 30 to 45 seconds.
  • Beat coconut oil, confectioners' sugar, and vanilla extract together in a bowl with a hand mixer until desired consistency is reached.

Coconut-Cream Cheese Frosting image

I wanted a frosting for a coconut layer cake that stood up to a stronger flavor without overpowering it and without being too sweet. If frosting a layer cake, I recommend spreading melted apricot preserves over the center layer, along with some frosting.

1 (8 ounce) package cream cheese, softened
½ cup unsalted butter, softened
4 cups confectioners' sugar
2 tablespoons heavy cream
½ teaspoon salt
½ teaspoon coconut flavoring
1 teaspoon vanilla extract
½ cup sweetened shredded coconut
1 cup sweetened shredded coconut, toasted

Steps:

  • Beat the cream cheese and butter in a mixer bowl until light and fluffy. Gradually add the confectioners' sugar, one cup at a time, alternating with heavy cream. Beat in the salt, coconut flavoring, and vanilla extract. Continue beating until mixture is smooth and spreadable. Add additional confectioners' sugar if necessary to thicken the frosting, or more cream to thin. Stir in the coconut. If desired, spoon toasted coconut evenly over frosted cake.

  • In a medium mixing bowl, and using electric beaters, cream together the coconut oil with the vanilla. You'll want to make sure you are using soft coconut oil, which replicates softened butter.
  • Next, slowly pour in powdered sugar, one cup at a time, while keeping your electric beaters going. You'll want to do this on low speed (so you don't have a powdered sugar tornado!). Frosting will start to get THICK. Once you have all the powdered sugar mixed in, slowly drizzle in your filtered water until you reach the desired consistency. Remember, coconut oil melts in the heat, so you'll want to ice your cake/cupcakes quickly and then pop them in the fridge to stiffen.
