COCONUT BISCOTTI

1 1/2 cups unsweetened coconut flakes
1 cup granulated sugar
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup coconut oil
1 teaspoon pure vanilla extract
1/2 cup salted macadamia nuts, chopped
1 cup confectioners' sugar
2 tablespoons coconut cream
1/8 to 1/4 teaspoon coconut extract
Coarse sugar, for decorating

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Spread 1 cup coconut flakes on a baking sheet and bake until toasted, about 3 minutes. Let cool completely. Transfer to a food processor; add the granulated sugar and pulse until finely ground. Line 2 baking sheets with parchment paper.
  • Whisk the coconut-sugar mixture, the flour, baking powder, baking soda and salt in a bowl. Melt the coconut oil in the microwave; add to the flour mixture along with the vanilla and 1/3 cup water and mix with a wooden spoon until a stiff dough forms. Stir in the macadamia nuts and the remaining 1/2 cup coconut flakes; gently knead until the dough comes together.
  • Divide the dough in half and shape into two 9-by-2-inch logs; place 1 log on each baking sheet. Bake, switching the pans halfway through, until the logs are firm and golden, about 25 minutes. Reduce the oven temperature to 300 degrees F.
  • Let the logs cool 10 minutes, then transfer to a cutting board; slice diagonally with a serrated knife into 3/4-inch-thick pieces. Arrange the slices cut-side down on the baking sheets. Bake, flipping halfway through, until just golden and the centers still have a little give, 20 to 25 minutes. Let cool completely on the baking sheets. (The biscotti will crisp as they cool.)
  • Whisk the confectioners' sugar, coconut cream and coconut extract until smooth. Dip the biscotti in the glaze; sprinkle with coarse sugar.

2 1/2 cups all-purpose flour
1 1/4 cups granulated sugar
2 teaspoons baking powder
2 teaspoons anise seeds
1 teaspoon coarse salt
2 cups (11 ounces) almonds, toasted and coarsely chopped
3 large eggs, plus 1 more, beaten, for brushing
Fine sanding sugar, for sprinkling (optional)

Steps:

  • Preheat oven to 350 degrees. In the bowl of an electric mixer, whisk together flour, granulated sugar, baking powder, anise seeds, salt, and nuts. Transfer to mixer fitted with the paddle attachment. Add eggs; beat until a stiff dough comes together, about 3 minutes.
  • Divide dough in half. Form each half into a 12-inch log. (Dough may be sticky; dampen your hands for easier handling.) Transfer to a parchment-lined baking sheet and flatten so each log is 13 inches long, 2 1/4 inches wide, and 3/4 inch thick.
  • Brush logs with beaten egg and sprinkle with sanding sugar. Bake until firm and very pale golden, about 35 minutes. Let cool on pans on a wire rack, 40 minutes. Meanwhile, reduce oven temperature to 300 degrees.
  • Using a serrated knife with a sawing motion, cut logs into slices slightly thicker than 1/4 inch. Arrange, cut-side up, on parchment-lined baking sheets. Bake until dry to touch, about 30 minutes. Let cool completely on pans on racks, 30 minutes. Store in an airtight container up to 1 month.

1/4 cup canola oil
2 large eggs
1/4 cup lime juice
1 teaspoon vanilla extract
1/4 teaspoon coconut extract
1-3/4 cups all-purpose flour
2/3 cup cornmeal
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup sweetened shredded coconut
1 teaspoon grated lime zest

Steps:

  • In a small bowl, beat sugar and oil until blended. Beat in the eggs, lime juice and extracts. Combine the flour, cornmeal, baking powder and salt; gradually add to sugar mixture and mix well (dough will be sticky). Stir in coconut and lime zest. , Divide dough in half. With lightly floured hands, shape each half into a 12x2-in. rectangle on a parchment-lined baking sheet. Bake at 350° for 20-25 minutes or until set., Place pan on a wire rack. When cool enough to handle, transfer loaves to a cutting board; cut diagonally with a serrated knife into 3/4-in. slices. Place cut side down on ungreased baking sheets. Bake for 5-6 minutes on each side or until golden brown. Remove to wire racks to cool. Store in an airtight container.

3 1/2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon kosher salt
1 cup unrefined coconut oil, melted
1 cup sugar
3 large eggs
1 tablespoon clear imitation vanilla
1/2 cup rainbow sprinkles
Flaky salt, such as Maldon, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F.
  • Whisk together the flour, baking powder and salt in a medium bowl and set aside. Whisk together the coconut oil and sugar in a separate large bowl. Whisk the eggs into the coconut oil mixture one at a time, and then the vanilla. Whisk the dry ingredients into the wet ingredients, and then fold in the sprinkles.
  • Line a baking sheet with parchment, divide the dough into 2 parts and form each part into a long rectangle, about 4 inches wide. Leave a few good inches in between the rectangles because they will spread in the oven. Sprinkle the tops with a few pinches of sea salt and bake until firm and just beginning to brown around the edges, about 25 minutes.
  • Remove from the oven and reduce the heat to 250 degrees F. Use a serrated knife to cut the rectangles into 1-inch pieces and place them on the lined baking sheet cut-side down. Bake until crisp, about 20 more minutes. Transfer to a wire rack to cool completely, about 1 hour.

1/2 C slivered almonds, toasted
1/2 C shredded coconut
3/4 tsp baking soda
1/4 tsp salt
3/4tsp coconut extract
1/4 tsp almond extract
2 eggs
1 egg white
Vegetable cooking spray
1/2 C chocolate chips
1/4 C almonds, finely chopped (optional)
1/4 C shredded coconut (optional)

Steps:

  • Directions 1. Preheat oven to 350. Combine first 6 ingredients in a large bowl (Flour-Salt) in a bowl. Set aside. Combine coconut extract, almond extract, eggs and egg white in a small bowl. Add to flour mixture, stirring until well-blended (dough will be dry). 2. Turn the dough out onto a lightly floured surface, and knead lightly 7 or 8 times. Shape dough into a 16-inch-long roll. Place roll on a baking sheet coated with cooking spray, and flatten roll to 1-inch thickness. 3. Bake at 350° for 30 minutes. Remove roll from baking sheet to a wire rack, and let cool 10 minutes. Cut roll diagonally into 30 (1/2-inch) slices, and place, cut sides down, on baking sheet. Bake 7 minutes. Turn cookies over, and bake an additional 7 minutes or until lightly toasted. Remove from baking sheet; let cool completely on wire rack. 4. Place chocolate in a small bowl and melt in the microwave for 30 seconds. Stir and microwave an additional 30 seconds or until smooth. Be carefull not to burn the chocolate. Spread a thin layer of chocolate on one side of each cookie. Well the chocolate is warm sprinkle biscotti with chopped almonds and/or coconut. Allow chocolate to harden completely. Store in an airtight container for up to three weeks.

1 cup stone-ground yellow cornmeal
1/2 cup unsweetened shredded coconut
1/2 teaspoon baking powder

3/4 cup granulated cane sugar
6 tablespoons extra-virgin olive oil
1 tablespoon finely grated lemon zest
1 cup dried cherries
1 cup shelled pistachios

Steps:

  • Heat oven to 350 degrees. In a large bowl, whisk flour, cornmeal, coconut, baking powder, and salt.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix eggs, sugar, oil, and zest on medium speed until well combined. Reduce speed, add flour mixture, and mix until just combined. Fold in cherries and pistachios.
  • Transfer dough to a parchment-lined baking sheet and pat into a 14-by-4-inch log. Bake until firm and golden, 30 to 35 minutes. Transfer to a wire rack and reduce oven to 325 degrees.
  • Once cool, transfer log to a cutting board and, using a serrated knife, cut diagonally into 1/2-inch slices. Arrange slices on parchment-lined baking sheet and bake, rotating halfway through, until just golden around the edges, 15 to 18 minutes. Let cool completely.

1/2 cup sugar
1/2 cup butter, softened
2 tablespoons vanilla
2 eggs
1 1/2 cups shredded coconut, lightly toasted
1 1/2 cups flour
1 teaspoon baking powder
1/2 cup toasted almond, chopped (optional)
1/2 cup milk chocolate chips or 1/2 cup semi-sweet chocolate chips, melted

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl cream together sugar and butter.
  • Add vanilla, eggs and coconut.
  • Add 1/2 cup flour and baking powder, mix well. Add remaining flour.
  • Stir in nuts if desired.
  • On a large sprayed cookie sheet divide dough in half and shape into two logs. (I usually spray my hands with non stick cooking spray for this.).
  • Bake for 20-25 minutes.
  • Reduce oven temp to 300.
  • Cool for 5-10 minutes remove logs from cookie sheets to a cooling rack. Cool for 10-15 minutes.
  • Cut logs into 3/4 inch slices and place back on cookie sheet, bake for 15-20 minutes or until desired crispness.
  • Cool completely and either dip or drizzle with melted chocolate.
  • Store in a air tight can or jar. Do not store in plastic.
