COLA BARBECUE SAUCE

4 cloves garlic, peeled
1/4 teaspoon kosher salt, plus a generous pinch for the garlic
3 cups cola
1 1/2 cups ketchup
1/4 cup cider vinegar
2 tablespoons Worcestershire sauce
1 slightly heaping tablespoon chili powder
1 teaspoon freshly ground black pepper, plus additional for seasoning
1/2 teaspoon hot sauce, plus additional for seasoning
1/4 teaspoon ground allspice
1 1/2 tablespoons freshly squeezed lime juice

Steps:

  • Smash the garlic cloves, sprinkle with a generous pinch of salt, and, with the flat side of a large knife, mash and smear mixture to a coarse paste.
  • Stir garlic paste, the 1/4 teaspoon salt, cola, ketchup, vinegar, Worcestershire, chili powder, 1 teaspoon black pepper, 1/2 teaspoon hot sauce, and allspice together in a small saucepan. Bring to a boil, reduce heat, and simmer until thickened, about 45 minutes. Allow to cool slightly, stir in the lime juice, and season with black pepper and hot sauce, to taste.

BEER CAN CHICKEN WITH COLA BARBECUE SAUCE

One 12-ounce can beer
One 3 1/2 to 4 pound chicken
2 tablespoons Basic Barbecue Rub, recipe follows
2 cups Cola Barbecue Sauce, for serving, recipe follows
1/4 cup firmly packed brown sugar
1/4 cup sweet paprika
3 tablespoons freshly ground black pepper
3 tablespoons kosher or sea salt
1 tablespoon hickory salt
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons celery seeds
1 teaspoon cayenne pepper
1 cup cola (recommended: Coca-Cola)
1 cup ketchup
1/4 cup Worcestershire sauce
1 teaspoon liquid smoke
3 tablespoon steak sauce (recommended: A-1 Steak Sauce)
1 teaspoon onion flakes
1 teaspoon garlic flakes
1/2 teaspoon freshly ground black pepper

Steps:

  • Pop the tab off the beer can. Using a church key style can opener, make a few more holes in the top of the can. Pour out half the beer into the soaking water of the wood chips. Set the can of beer aside.
  • Set up the grill for indirect grilling and preheat to medium. If using a charcoal grill, place a large drip pan in the center. If using a gas grill, place all the wood chips in the smoker box or in a smoker pouch and preheat the grill to high until you see smoke, then reduce the heat to medium.
  • Remove the packet of giblets from the body cavity of the chicken and set aside for another use. Remove and discard the fat just inside the body and neck cavities. Rinse the chicken, inside and out, under cold running water, drain, and blot dry inside and out with paper towels. Sprinkle 2 teaspoons of the rub inside the body and neck cavities of the chicken. Rub the bird all over on the outside with 2 teaspoons of the rub. If you have the patience, you can put some of the rub under the skin being careful not to tear it.
  • Spoon the remaining 2 teaspoons of rub through the holes into the beer in the can. Don't worry if it foams up, this is normal. Insert the beer can into the body cavity of the chicken and spread out the legs to form a sort of tripod. Tuck the wing tips behind the chicken's back.
  • When ready to cook, if using a charcoal grill, toss all the wood chips on the coals. Stand the chicken up in the center of the hot grate, over the drip pan and away from the heat. Cover the grill and cook the chicken until the skin is a dark golden brown and very crisp and the meat is cooked to an internal temperature of 180 degrees, about 1 1/4 to 1 1/2 hours. If using a charcoal grill, you'll need to add 12 fresh coals per side after 1 hour.
  • Using tongs, carefully transfer the chicken in its upright position on the beer can to a platter and present it to your guests. Let rest 5 minutes, and then carefully remove the chicken from the beer can. Take care not to spill the hot beer or otherwise burn yourself. Quarter or carve the chicken and serve with the Cola Barbecue Sauce.
  • Combine all the ingredients in a mixing bowl and stir to blend together. Store the rub in an airtight jar away from heat or light. It will keep for at least 6 months.

You might not think of Coca-Cola as the base for a barbecue sauce, but in this recipe, the sweetness of the soda helps to enhance the flavor.

2 cups/475 milliliters Coca-Cola (or similar cola)
2 cups/475 milliliters ketchup
1/2 large onion (finely chopped)
1/4 cup/60 milliliters white vinegar
1/4 cup/60 milliliters brown sugar
1/2 teaspoon/2.5 milliliters chili powder (mild)
1/2 teaspoon/2.5 milliliters salt (use less if preferred)
1/2 teaspoon/2.5 milliliters black pepper (use less if preferred)

Steps:

  • In a large saucepan, add all of the ingredients. Place it on the stovetop over medium heat and bring the sauce up to a boil. Reduce the heat to a low simmer and cook the sauce for 10 to 12 minutes, stirring occasionally.
  • Once the sauce has thickened, remove it from the heat and let it cool for 10 minutes before using. If you are making the sauce ahead, let the sauce cool completely and place it into an airtight plastic container or jar and store it in the refrigerator for up to a week after preparation. Warm it before using. Discard the sauce if you see any mold forming or it produces an unpleasant odor. Coca-Cola adds more than sugar (in the form of high fructose corn syrup). It has tartness due to phosphoric acid, similar to the tartness of the vinegar that is a basic part of barbecue sauce. The flavorings in Coke are a closely held secret. Certainly, there are essential citrus oils of orange, lime, and lemon. Lab analysis has found the aromas of cinnamon, vanilla, and nutmeg, and some suspect there is lavender as well. You will also get different results based on the ketchup you use. Most brands also have high fructose corn syrup providing sugar, plus vinegar and spices that include allspice, cinnamon, cloves, and ginger. If you use your own homemade ketchup, you will have more control over what goes into your barbecue sauce.

500 ml ketchup
350ml Worcester sauce
250 ml dark soya sauce
500 ml chicken stock
600 grm brown sugar
400 ml honey
3 cloves crushed garlic
250 ml vinegar ( white, cider or red)
1 tsp thyme
1 tbl sp mustard (any)
3 tbl sp tomato purée

Steps:

  • place all ingredients in a large heavy pan, i used my large flat bottomed wok, bring to the boil. remove the scum that forms and reduce the heat to a simmer.
  • if wanted for a dip, reduce down until thick , if your doing it as a cooking sauce. just add to your slow cooker (for eg.) and cook along with your choice of meat, then when the meat is cooked remove it and sieve the sauce back into your large pan. reduce to a nice pouring thickness and pour over meat. then put in the oven on a med/high heat until dark and sticky.
  • goes excellent with pork spare ribs in a slow cooker on high for 5 hours.

½ Scotch bonnet or habanero chile, seeds removed, deveined, finely chopped
1 12-oz. bottle or can of cola (such as Coca-Cola)
3 garlic cloves, finely chopped
¾ cup ketchup
½ cup (packed) dark brown sugar
½ cup grated sweet onion
1 Tbsp. Worcestershire sauce
½ tsp. ground allspice
2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt
½ tsp. coarsely ground black pepper

Steps:

  • Bring chile and cola to a simmer in a medium saucepan over medium heat; reduce heat to low and simmer 3 minutes. Whisk in garlic, ketchup, brown sugar, onion, Worcestershire sauce, allspice, salt, and pepper. Cook, stirring occasionally and adjusting heat as needed to maintain a simmer, until sauce is thick, 15-20 minutes. Let cool before using. Do ahead: Sauce can be made 2 days ahead. 1 C. Coca-Cola (or other cola)
1 C. tomato ketchup
2 Tbsp. fresh lime juice
1/4 c. molasses
3 Tbsp. honey
1 Tbsp. Dijon mustard
3 Tbsp. Balsamic vinegar

Steps:

  • In a medium saucepan, heat the oil over low heat. Add the shallot, garlic, chili powders, cumin, thyme, and red pepper flakes. Cover, and cook, stirring a few times, for about 10-12 minutes. The object is to sweat, not saute the shallots. Stir in the Coke, ketchup, lime juice, molasses, honey, Dijon mustard, and Balsamic vinegar, and bring to a simmer. Cook the sauce, uncovered, for about 15 minutes. Stir the sauce occasionally. Cook the sauce longer for more reduction, if you'd like a thicker sauce. Cool the sauce to room temperature before using. This will keep for about five days under refrigeration and covered.
