I found this recipe in the San Diego Union Tribune, and this type of dish is right up my alley. Prep time does not include overnight refrigeration.

1 lb dried pinto bean
3 tablespoons olive oil
1 large onion, minced
2 garlic cloves, minced
1 1/2 teaspoons dried Mexican oregano, crumbled
salt, to taste
1 chipotle chile in adobo, minced (optional)
queso fresco (Accompaniment)
fresh cilantro, coursely chopped (Accompaniment)
12 corn tortillas

Steps:

  • Dried beans soaked in water to cover generously for several hours or overnight.
  • Drain soaked beans and place in a clay pot with 6 cups cold water (clay pot is optional, but beans seem to cook more evenly and have a richer taste when cooked in clay.
  • Bring to a simmer slowly over moderately low heat, skimming any foam.
  • Meanwhile, heat olive oil in a skillet over low heat.
  • Add onion, bell pepper and garlic; saute until soft (about 15 minutes).
  • When beans just begin to simmer, add sauteed vegetables and oregano. Cover, adjust heat to maintain a gentl bubble, and cook until the beans are tender, 1 hour or more.
  • If additional liquid is needed, add boiling water.
  • Season with salt and minced chipotle chile, if desired.
  • Cool, then refrigerate overnight.
  • Reheat the beans slowly. Divide among warm bowls, topping each portion with queso fresco and cilantro.
  • Serve with hot tortillas.

4 cups dried black beans
1 medium onion, halved
2 cloves garlic
2 tablespoons canola oil or lard
Kosher salt

Steps:

  • Pick through the beans to remove any dirt or stones, then place in a large colander and rinse thoroughly. Transfer the beans to a large bowl, cover with 3 quarts of water, and soak overnight in the refrigerator.
  • Drain the beans, reserving the liquid. Measure the liquid and add water, if needed, to make 2 1/2 quarts. Place the beans in a stockpot or large clay olla. Add the onion, garlic, oil or lard, and the reserved soaking liquid.
  • Bring to a simmer, adjusting the heat to maintain a gentle simmer. Cover and cook, stirring occasionally, until the beans are tender, about 1 1/2 hours. Keep the beans covered with 1 inch of water as they cook, adding boiling water if needed. Remove the onion and garlic and season to taste with salt.

1 small red onion, halved and thinly sliced
1/2 cup lemon juice
1/4 teaspoon dried oregano
1/4 teaspoon red-pepper flakes
1 dried bay leaf
1 1/2 tablespoons kosher salt
Pinch black pepper
1 whole dried chipotle morita or meco chile
1 3/4 to 2 cups drained pinto beans, from 1 (15-ounce) can or homemade
1 1/4 to 3 cups vegetable broth or bean cooking liquid
Kosher salt
4 tablespoons neutral-flavored oil, plus more as needed
12 corn tortillas
4 tablespoons sour cream, vegan if you'd like
4 tablespoons roasted salted pepitas
1/4 cup cilantro leaves
2 ripe medium Hass avocados, pitted, peeled and sliced

Steps:

  • Make the pickled onion: Combine the onion, lemon juice, oregano, red-pepper flakes, bay leaf, salt and pepper in a medium bowl and mix. Let sit at room temperature for 30 minutes to allow the flavors to meld together and the onion to soften. The onion can be covered and refrigerated for up to 3 to 5 days before serving.
  • Make the enfrijoladas: Place the chipotle in a small bowl and add enough hot water to cover (see Tip). Let stand to rehydrate for 10 minutes. Once rehydrated and pliable, drain and remove the stem. To a blender or food processor, add the beans, 1 1/4 cups vegetable broth or bean cooking liquid, and the softened chipotle. Blend until completely smooth. Add more of the broth, 1/4 cup at a time as needed, to make a smooth bean sauce. Season to taste with salt.
  • Heat a medium pot over medium-low. Add 2 tablespoons oil and heat, then add the bean mixture. Stir to incorporate; the mixture may sizzle and spatter. Allow the mixture to come to a low simmer and reduce heat to low to keep warm. Add additional liquid as needed to thin to a cheese-sauce consistency.
  • Heat a comal or cast-iron skillet over medium heat. Add 2 tablespoons oil, then add 1 to 2 tortillas and lightly fry until softened and blistered, 30 to 60 seconds per side. Transfer the fried tortillas to a plate, and continue to add more oil to the comal as needed to cook all the tortillas.
  • Use tongs to slightly submerge each fried tortilla in the hot bean mixture one at a time. Flip the tortilla over to coat the second side, then fold the tortilla in half, pull out of the pot and place on a dinner plate. Continue this process until all the tortillas are coated in the enfrijolada sauce, dividing them among 4 plates. Spoon any remaining bean sauce over the top of the tortillas. Garnish with the sour cream, pickled red onion, pepitas, cilantro and avocado.

Two 16-ounce cans pinto or pink beans, drained and rinsed, or 4 cups cooked pinto or pink beans (from about 1 2/3 cups raw)
2 cups cooked fresh corn kernels (from 3 medium ears) or frozen corn, thawed
One 14- to 16-ounce can low-sodium or Mexican-style stewed tomatoes, chopped, with liquid
1 jalapeño pepper, seeded and minced, or one 4- to 7-ounce can mild green chilies
1 teaspoon ground cumin

Steps:

  • Combine all of the ingredients in a large saucepan or steep-sided stir-fry pan and bring to a simmer. Cover and simmer gently over low heat for 15 minutes. Serve in shallow bowls.
  • These related varieties are most widely used in Mexican and Southwestern dishes. Pink beans are slightly smaller and rounder than pintos, which are speckled when raw but turn a warm brown when cooked. Their mellow flavors are similar, so they may be used interchangeably. Both cook to a fine, creamy texture.
  • Pink and pinto beans combine nicely with rice or corn, either hot and spiced as a main dish, or cold and marinated as a salad.

1 to 2 teaspoons hot pepper sauce
1 teaspoon chili powder
6 corn tortillas (6 inches)
2 cups shredded lettuce

3/4 cup crumbled feta cheese or queso fresco
Lime wedges

Steps:

  • In a small bowl, mix sour cream, lime zest, cumin and 1/4 teaspoon salt. In a large saucepan, heat 1 tablespoon oil over medium heat. Add garlic; cook and stir just until fragrant, about 45 seconds. Stir in beans, pepper sauce, chili powder and remaining salt; heat through, stirring occasionally. Keep warm., Brush both sides of tortillas with remaining oil. Place a large skillet over medium-high heat. Add tortillas in two batches; cook until lightly browned and crisp, 2-3 minutes on each side., To serve, arrange beans and lettuce over tostada shells; top with salsa, sour cream mixture and cheese. Serve with lime wedges.
