IRISH'S CLAM BALLS



Irish's Clam Balls image

These are a great appetizer for parties. They are a family favorite in my house. You can freeze some prior to baking and use as needed. We serve these with some worcestershire sauce sprinkled on them.

Number Of Ingredients 8

1 (14 ounce) package Pepperidge Farm stuffing
1 (8 ounce) bottle clam juice
4 (6 1/2 ounce) cans minced clams
1/2 cup butter
4 stalks celery, finely chopped
1 large onion, finely chopped
1 teaspoon oregano
1 dash pepper

Steps:

  • Melt butter in saucepan, add clam juice ,minced clams and juice form minced clams. Heat this mixture. In a large bowl add stuffing and sauted celery and onions, pepper and oregano. Pour hot liquid over stuffing mix. Mix well and cool. Roll into balls then bake for 30 minutes at 350.

We had clam fritters every time we went to Rhode Island. I looked for a recipe and finally found this one. Now we have them whenever we want.

Yield 14-16 fritters.

Number Of Ingredients 10

2/3 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon pepper
1 can (6-1/2 ounces) minced clams
1 egg
3 tablespoons milk
1/3 cup diced onion
Oil for deep-fat frying
Tartar sauce and/or lemon wedges, optional

Steps:

  • In a bowl, combine the flour, baking powder, salt and pepper; set aside. Drain clams, reserving 2 tablespoons juice; set clams aside. In a small bowl, beat the egg, milk and reserved clam juice; stir into dry ingredients just until moistened. Add the clams and onion. , In an electric skillet or deep-fat fryer, heat oil to 375°. Drop batter by tablespoonfuls into oil. Fry for 2-3 minutes or until golden brown, turning occasionally. Drain on paper towels. Serve fritters with tartar sauce and/or lemon wedges if desired.

BRAZILIAN CODFISH BALLS

1 1/2 pounds russet potatoes (about 2 to 3 medium), peeled and cut into chunks
3 cups clam juice (or fish or shrimp bouillon)
1 medium yellow onion, quartered
1 bay leaf
1 pound cod fillets, cut into large chunks
2 large eggs, lightly beaten
3 tablespoons finely chopped fresh cilantro leaves, plus more for garnish
1 1/2 teaspoons green hot sauce (recommended: Tabasco)
1 teaspoon salt
1 cup seasoned dry bread crumbs

Steps:

  • Put the potatoes in a pot and cover with the clam juice. Bring to a boil over medium heat and cook until the potatoes are fork tender, about 20 minutes. Remove the potatoes with a slotted spoon and place in a bowl. To the cooking liquid, add the onion and bay leaf; bring to a simmer for 3 minutes. While the potatoes are still hot, mash with a hand masher and set aside. Add the cod to the simmering broth and cook until the fish is opaque, about 3 minutes. Remove the fish with a slotted spoon and add to the mashed potatoes.
  • Add the eggs, cilantro, hot sauce, and salt to the fish and potato mixture. Mix until well combined. Cover with plastic wrap and refrigerate until completely cooled and firm, at least 4 hours or preferably overnight.
  • Preheat the oven to 400 degrees F. Coat a baking pan with nonstick cooking spray. Spread the bread crumbs on a plate.
  • Using an ice cream scoop, roll the chilled fish and potato mixture into 2-inch balls. Then roll each ball in bread crumbs to coat completely. Put the codfish balls on the prepared pan and spray the tops lightly with nonstick cooking spray, this will make them really crispy. Bake until the codfish balls are nicely browned, 20 to 25 minutes. Put the codfish balls on a platter and garnish with cilantro.

2 (8 ounce) cans minced clams
1 tablespoon bacon fat
2 teaspoons shallots, minced
2 garlic cloves, minced
1 tablespoon flour, plus
1 1/2 teaspoons flour
1/2 cup heavy cream
1 teaspoon dried oregano
2 teaspoons parsley
1/2 teaspoon Worcestershire sauce
4 dashes Tabasco sauce
1/4 teaspoon salt
oil (for deep frying)

Steps:

  • Drain clams, reserving liquid. You will have about 1 cup liquid and 1 cup clam meat.
  • Melt the bacon fat in a skillet and saute the shallots and garlic for about 3 minutes.
  • Off the heat, blend in the flour, stirring until it is all incorporated.
  • Add 1/4 cup clam liquid and cream gradually.
  • Return to the heat and cook over moderate heat until the sauce is very thick.
  • Remove from the heat and add remaining ingredients.
  • Fold in the clams.
  • Refrigerate mixture at least 4 hours.
  • With a teaspoon measure form balls 1/2-inch in diameter.
  • Place on wax paper.
  • In a small, heavy skillet pour oil to a depth of 1-inch and heat to 365°F
  • Drop in 3 balls at a time, frying about 1 minute.
  • Remove with a slotted spoon and drain on paper towels.
  • These can be kept warm in a 200°F oven.
  • If made in advance, reheat in a 425F oven placed on a wire rack in a jelly-roll pan for 7 minutes.
  • Can be frozen. Place on a flat surface to freeze, then put in a freezer bag and seal. Reheat frozen balls in a 350F oven for 10 minutes.
