1/4 pound bacon (about 8 slices), chopped
two 6 1/2-ounce cans minced clams
8 ounces cream cheese, softened
1/4 cup sour cream
1/3 cup finely chopped red bell pepper
3 scallions, chopped fine
2 tablespoons finely chopped fresh basil leaves
1 teaspoon drained bottled horseradish
1 teaspoon fresh lemon juice, or to taste
3/4 teaspoon Worcestershire sauce
Tabasco to taste
Accompaniment:Pita Toasts or potato chips

Steps:

  • In a skillet cook bacon over moderate heat, stirring, until golden and crisp and transfer with a slotted spoon to paper towels to drain.
  • In a large sieve set over a bowl drain clams, reserving clam juice, and in another bowl whisk together cream cheese and sour cream. Whisk 2 tablespoons reserved clam juice into cream cheese mixture with clams, bacon, and remaining ingredients. Dip may be made 1 day ahead and chilled, covered. Bring dip to room temperature before serving.
  • Serve dip with toasts or chips.

4 slices bacon, coarsely chopped
8 ounces cream cheese, softened
1 tablespoon bottled clam juice
1 -2 tablespoon lime juice
1 teaspoon Worcestershire sauce
1 (5 ounce) can baby clams, rinsed drained and chopped
2 -4 tablespoons sour cream
2 tablespoons finely chopped red bell peppers
1/4 cup chopped chives
salt and pepper

Steps:

  • In skillet, cook bacon until browned and crisp. Drain on paper towels.
  • In bowl, using a fork, mix cream cheese, clam juice, 1 teaspoon lime juice, and Worcestershire sauce until just blended.
  • Stir in clams, chives and red pepper and just enough sour cream to reach dipping consistency. Season to taste with salt and pepper.
  • Stir in bacon. Add remaining lime juice, if desired.

  • Preheat oven to 350 F degrees. Spray a 24oz oven safe dish with non-stick cooking spray and set aside.
  • In a mixing bowl, add softened cream cheese and mash until smooth. Add 6 slices bacon, clams, horseradish sauce, onion, hot sauce, salt, and pepper. Stir to combine fully. If mixture is too thick, add reserved clam juice 1/2 Tbsp at a time, until dip is at a dipping consistency.
  • Transfer dip to prepared dish and spread into even layer. Place dish on a baking sheet (just in case it bubbles over), and bake 25-30 minutes, until hot, bubbly, and golden brown on top.
  • Sprinkle with remaining 2 slices of bacon, green onions and parsley. Serve hot with crackers or toasted baguette slices.
