Steps:
- Preheat oven to 375 degrees. Line cookie sheets with parchment paper and set aside.
- In a medium bowl, whisk flour, cornstarch and salt until combined.
- In a large bowl, add powdered sugar, butter, cream cheese and vanilla and beat at medium speed until light and fluffy.
- Add flour mixture to butter mixture, stirring until combined. (Note: dough will be dry and crumbly).
- Shape dough into 1-inch balls (be careful not to overwork dough) and place on prepared cookie sheets.
- Bake for 8 to 10 minutes, or until bottoms of cookies are lightly browned. Cool 5 minutes of pan and then move to wire rack to cool completely.
- GLAZE: In a medium bowl, whisk powdered sugar and lemon juice until smooth. Dip the tops of cooled cookies into glaze and place on wire rack. Decorate with sprinkles, as desired. Let cookies stand until glaze is set.

- Preheat the oven to 350 degrees F (175 degrees C). Line a cookie sheet with parchment paper.
- Sift cake flour, all-purpose flour, baking powder, and salt together in a medium bowl.
- Combine butter, cream cheese, white sugar, and powdered sugar in the bowl of a stand mixer fitted with the paddle attachment; beat until light and fluffy, 4 to 5 minutes. Mix in egg and egg yolk until incorporated. Add lemon juice, lemon zest, and vanilla extract; mix to combine. Slowly add flour mixture until just incorporated; batter will be thick and sticky. Scoop dough with a small cookie scoop and drop 1 inch apart onto the prepared baking sheet.
- Bake in the preheated oven until edges are golden, about 11 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool. Repeat with remaining dough.
- While cookies are baking, whisk together cream cheese, milk, lemon juice, and lemon zest for the glaze in a small bowl until no lumps remain. Slowly whisk in powdered sugar until glaze is runny in consistency. Hold each warm cookie upside down and dip and twist in the glaze. Shake off excess glaze, and place cookie upright on a cooling rack. Repeat with remaining cookies and glaze.

I found this a few years ago in Cooking Light. I made these for a holiday cookie exchange and everyone loved them. They were easy to make in bulk and extremely tasty. The recipe recommends that you avoid handling the dough too much or the dough will become heavy and dense.

- 2. To prepare cookies, lightly spoon flour into dry measuring cups; level with a knife. Combine flour, cornstarch, and salt in a medium bowl, stirring well with a whisk.
- 3. Combine 1 cup powdered sugar, butter, cheese, and vanilla in a large bowl; beat with a mixer at medium speed until light and fluffy (about 4 minutes). - In a large bowl with a hand or stand mixer, cream together the butter and cream cheese until smooth, one minute. Add the powdered sugar a little at a time until fully mixed, scrape down the sides as needed.
- Add in the egg, baking powder, vanilla, lemon extract, lemon zest, and salt. Mix to combine. Slowly add in the flour a little at a time until fully incorporated, scrape down the sides as needed. Add food coloring to the color you would like to achieve (they will slightly darken in color while the dough rests, keep that in mind), optional. Cover with plastic wrap, place in the fridge for one hour to rest.
- Preheat oven to 350 degrees. Place granulated sugar in a small bowl. Roll cookie dough into 1 tablespoon sized balls, the dough will be sticky*. Roll into the sugar and place on a parchment lined sheet tray 2 inches apart.
- Bake** for 8-9 minutes until the cookies are just set. You know they are ready when they puff up and when touched they hold their shape but are still slightly soft, and the bottoms will be very lightly golden brown (however, you won't be able to tell until you pick them up). Let cool on the sheet tray for 10 minutes, transfer cookies to sit on a wired rack directly to cool completely.
