This Mexican rice is cooked with onion powder, garlic powder, and tomato sauce for an easy side dish. - Heat canola oil in a skillet over medium-high heat. Season oil with onion powder and garlic powder. Cook and stir rice in seasoned oil until rice is golden, 2 to 4 minutes.
- Pour water and tomato sauce over the rice; stir. Bring the mixture to a boil, cover the skillet, reduce heat to medium-low, and simmer until the rice is tender, about 15 minutes.

KOSSMAN CHICKEN RICE
An easy casserole. If you like green bean casserole, you will like this dish. It is REAL easy and smells wonderful baking. Anybody can make this. I didn't even layer this; just plopped the chicken on top of the rice mixture and covered it with onion soup mix.

Steps:
- Mix cream of chicken soup, cream of mushroom soup, water, and rice together.
- Put a layer of soup mixture in a baking dish.
- Add the chicken.
- Add the rice mixture.
- Sprinkle the top with the Lipton onion soup mix.
- Cover with tin foil.
- Bake at 375 degrees Fahrenheit for 2 hours.
- Uncover for the last 30 minutes of baking.

from darlene kossman , its very old recipe she used home canned tomatoes with bacon ,corn and onion i have made it with boughten tomatoes this is a very good rice dish ,it is no way really mexican , i used rice with this didnt have to wash cause no talc on rice ,or bugs or dirt either we have come a long way lol

Steps:
- wash rice dry thoughly with a cloth.( i skipped this step and used brown rice ).
- fry bacon strips until limp, not crisp. i used cast iron skillet cause then you can just put in oven .
- remove bacon from pan.
- brown the rice and minced onion in the bacon fat.
- stir constantly to prevent burning.
- add chili powder.
- when brown add tomatoes and seasonings. (darlenes canned tomatoes had alot of juice for this dish ,if using canned store bought just fill can with water after dumping in tomatoes).
- let simmer until rice swells up.
- one pint of drained corn may be added at this time if desired. (i used 1/2 cup ,it was plenty ).
- pour into greased baking dish and bake 40 minutes in 350 degree oven.
- place the bacon strips over dish about 10 minutes before removing from oven.

- Heat oil in a Dutch oven or large heavy pot over medium-high heat. Once hot, add onions and rice and sauté for 3 minutes then add jalapenos and sauté until rice is toasted, approximately 2-3 more minutes. Add garlic and sauté 30 seconds.
- Stir in all remaining Rice ingredients (except for cilantro and lime juice garnish). Bring to a boil, cover, and reduce heat to LOW. Simmer 12-15 minutes, or until water is evaporated and rice is tender, stirring once at 8 minutes and replacing lid.
- Add cilantro and lime juice if desired and fluff with a fork. Taste and season with additional salt or lime juice if desired.
