LEMON GARLIC BUTTER SHRIMP

1/3 cup butter, (divided)
4 cloves garlic, (minced (or 1 tablespoon))
1 3/4 pounds (800 g) shrimp ((or prawns), peeled and deveined, tails intact)
Kosher salt and freshly ground black pepper, (to taste)
Juice of half a lemon ((about 2 tablespoons -- add more if desired))
2 tablespoons water
Fresh chopped parsley, (to garnish)

Steps:

  • Melt 2 tablespoon butter in a large skillet over medium-high heat. Add the garlic and cook until fragrant (about 1 minute).
  • Fry shrimp and add salt and pepper, to your taste. Cook 2 minutes on one side, while stirring occasionally. Flip and cook 2 minutes on the other side until JUST beginning to turn pink.
  • Add in the remaining butter, lemon juice and water. Cook, while stirring, until the butter melts and the shrimp have cooked through (do not over cook them). Take off heat. Taste test, and add more lemon juice, salt or pepper, if needed to suit your tastes.
  • Garnish with fresh chopped parsley and serve over rice or pasta.

1 package (16 ounces) linguine
1/2 cup olive oil
1/2 cup orange juice
1/3 cup lemon juice
3 to 4 garlic cloves, minced
5 teaspoons grated lemon zest
4 teaspoons grated orange zest
1 teaspoon salt
1/4 teaspoon pepper
1 pound uncooked medium shrimp, peeled and deveined
Shredded Parmesan cheese and minced fresh parsley, optional

Steps:

  • Cook linguine according to package directions. Meanwhile, in a blender, combine the next eight ingredients; cover and process until blended. Pour into a large skillet; bring to boil. Reduce heat, stir in the shrimp; simmer, uncovered for 3-4 minutes or until shrimp turn pink. , Drain linguine; toss with shrimp mixture. Sprinkle with cheese and parsley if desired.

2 oranges, zested and juiced
3 limes, zested and juiced
2 tablespoons olive oil
½ teaspoon salt, or to taste
3 cloves garlic
1 ½ pounds large shrimp, peeled and deveined

Steps:

  • In a blender or food processor, combine the orange juice and zest, lime juice and zest, olive oil, garlic and salt. Be careful with the salt - the shrimp really suck it up! Cover, and puree until smooth.
  • Place shrimp in a bowl, and pour the citrus marinade over them. Let them marinate for 20 minutes at room temperature.
  • Heat a non-stick skillet over medium-high heat. Fry the shrimp about 3 minutes per side, in batches if necessary, until opaque. Spoon a little of the marinade in with them for extra flavor while they cook if you like.

1 tablespoon seafood seasoning, such as Old Bay
2 teaspoons kosher salt
1/2 teaspoon ground black pepper
3 pounds medium shrimp (16/20), peeled and deveined with the tails on
2 tablespoons extra-virgin olive oil
1 teaspoon celery seed
1 teaspoon coriander seeds
1 teaspoon fennel seeds
1 teaspoon mustard seeds
1/4 cup white wine vinegar
1/2 cup fresh lemon juice
2 tablespoons extra-virgin olive oil
1 teaspoon ground white pepper
14 bay leaves
6 cloves garlic, sliced very thin
3 dried hot chile peppers, like arbol chiles
2 small Spanish onions, sliced very thin
2 lemons, sliced very thin

Steps:

  • For the shrimp: Preheat the oven to 400 degrees F. Mix the seafood seasoning, salt and pepper together in a small bowl. Place the shrimp on a sheet tray and drizzle with the olive oil. Sprinkle with the seafood seasoning mixture. Put in the oven and bake for 8 minutes.
  • For the marinade: Toast the seeds in a dry pan over low heat for a few minutes, until just toasted and giving off a nutty aroma. Let cool.
  • Whisk the toasted seeds with the vinegar, lemon juice, olive oil and white pepper in a large glass bowl. Stir in the bay leaves, garlic, chiles, onions and lemons.
  • When the shrimp come out of the oven, put them into the marinade to let cool. Wrap the bowl tightly with two layers of plastic wrap. Put the bowl in the refrigerator and marinate, turning the shrimp in the bowl occasionally to mix well, for at least 8 hours and for up to 24 hours before serving. Also put a large glass bowl in the fridge to chill, for serving the shrimp.
  • To serve: Strain and reserve the liquid from the shrimp using a medium sieve or strainer so the seeds can pass through (but it's ok if some remain in the shrimp).
  • Put the shrimp in the chilled glass bowl. Add some of the marinade back to the shrimp and toss. The shrimp should not be swimming in the marinade.

2 medium-sized limes, each cut into four wedges
8 bamboo skewers
INGREDIENTS B:
For The Sauce Mixture
4 tablespoons peanut oil
1 tablespoon finely minced ginger
1 teaspoon red chili flakes (optional)
1 teaspoon lemon pepper
1 cup Louisiana seafood cocktail sauce
1/2 cup tomato sauce
4 tablespoons cilantro, finely chopped
2 tablespoons white sesame seeds, lightly dry toasted until golden brown

Steps:

  • 1. Preheat broiler on low. 2. To make the sauce mixture, put all the eight ingredients in a bowl and mix them together until they are well combined. 3. Add the shrimps to the sauce and mix well. 4. To thread shrimps, start with a wedge of lime, follow with four shrimps well coated in sauce mixture. Lastly, attach a clove of garlic. 5. Broil shrimps until light chars appear on them. Baste them once with remaining sauce mixture. When the shrimps start to sizzle, remove them from the broiler. 6. Squeeze the juice from the broiled limes over the shrimps. Enjoy and bon appetit!
