3 tablespoons red wine vinegar
2 teaspoons honey

Steps:

  • Place all ingredients in a jar with a tight-fitting lid; shake well. Chill until serving. Just before serving, shake dressing and drizzle over salad.

¼ cup orange juice, preferably freshly squeezed
2 tablespoons lemon juice
2 teaspoons Dijon mustard

¼ cup extra-virgin olive oil
¼ cup organic canola oil or avocado oil

Steps:

  • Combine shallot, orange zest, orange juice, lemon juice, mustard, salt and pepper in a blender or mini food processor. (Alternatively, combine in a jar and use an immersion blender.) Add olive oil and canola (or avocado) oil; blend until smooth.

1 lemon, zested and juiced
1/3 cup extra-virgin olive oil

2 hearts romaine lettuce, chopped
3 to 4 ribs celery from the heart, chopped
1 yellow bell pepper, seeded and finely chopped
1 small red onion or 1/2 medium, finely chopped

Steps:

1 tablespoon rice wine vinegar

  • If using a vegetable peeler or cocktail zester blanch lemon and lime peel for 30 seconds and then shock in cold water.

2 teaspoons of fresh mint, coarsely chopped

The sweet-tart zestiness of the dressing perks up the salad! The yield depends on how much salad dressing you prefer. For us, this recipe makes enough dressing for about 4 large salads.

2 Tbsp white wine vinegar
1/2 tsp kosher salt

  • Bring juice and sugar to a boil in a small saucepan; cook 10 minutes or until reduced to 2 Tbsp. Pour into a medium bowl; cool slightly. Add shallots, vinegar, salt and pepper, stirring with a whisk. Gradually add oil, whisking constantly. **Serve with a salad of beets, Boston lettuce, watercress, radicchio and goat cheese.
