BBQ Prawns with Citrus Garlic Marinade and Dipping Sauce

16 - 32 prawns (shells removed and cleaned)
8 BBQ skewers (if using)
Marinade ingredients
½ cup olive oil
¼ cup honey
¼ cup fresh lemon juice (to taste)
3 tbsp tamari or soy sauce (to taste)
2 cloves garlic, finely minced (to taste)
½ tsp lemon zest
2 tbsp finely chopped fresh herbs
1½ tsp sea salt (to taste)
½ tsp fresh ground pepper (to taste)
6 - 8 drops Young Living Lemon essential oil (to taste)
1 - 2 drops Young Living Basil essential oil (to taste)
Citrus and Herb Dipping Sauce
½ - ¾ cup Citrus Garlic Marinade (from above ingredients)
½ - ¾ cup mayonnaise or plain yoghurt
½ tsp sea salt and freshly ground pepper (to taste)
1 tbsp finely chopped fresh herbs
1 - 2 spring onions, finely chopped
4 - 6 drops Young Living Lemon essential oil (to taste)
For Serving
Freshly chopped herbs and spring onions (optional)
Dipping Sauce (recipe above)
Lemon wedges

Steps:

  • Mix all the marinade ingredients together in a medium sized bowl and set aside.
  • Place the prawns in a large bowl and pour approx half the marinade over them and gently stir to coat. You can cook them right away or refrigerate for a couple of hours to let the flavour infuse.
  • Prepare the Citrus and Herb dipping sauce by combining the sauce ingredients together and refrigerate until needed.
  • When ready to cook the prawns place them on skewers, if using (you can do this step ahead of time and refrigerate until ready to cook).
  • Heat the BBQ or a grill pan and brush with oil so it does not stick (I'm not a fan of cooking sprays, but if you like to use a natural one it does help them not to stick on the grill). When the BBQ or grill pan is hot, gently place the prawn skewers or prawns on the BBQ or grill pan and cook for approx 2 - 3 minutes on one side then turn and cook for approx. 2 - 3 more minutes until cooked through (you may want to cook 1 extra prawn so you can test it to see if it is ready). When done, set the prawns on a platter, drizzle with a little of the marinade and cover to keep warm, if not serving immediately.
  • When ready to serve place them on a serving platter with a bowl of dipping sauce or on top of salad greens drizzled with some of the remaining marinade and serve some dipping sauce on the side.

2 oranges, zested and juiced
3 limes, zested and juiced
2 tablespoons olive oil
½ teaspoon salt, or to taste
3 cloves garlic
1 ½ pounds large shrimp, peeled and deveined

Steps:

  • In a blender or food processor, combine the orange juice and zest, lime juice and zest, olive oil, garlic and salt. Be careful with the salt - the shrimp really suck it up! Cover, and puree until smooth.
  • Place shrimp in a bowl, and pour the citrus marinade over them. Let them marinate for 20 minutes at room temperature.
  • Heat a non-stick skillet over medium-high heat. Fry the shrimp about 3 minutes per side, in batches if necessary, until opaque. Spoon a little of the marinade in with them for extra flavor while they cook if you like.

I don't know where it was originally published but it's accredited to Peter Dorsey of Warwick, Rhode Island The preparation time does not include the 24 hour marinating time. My Mom didn't marinate the shrimp for the full 24 hours and the dish was still delicious.

3 lemon slices, thin slices
2 bay leaves
1/2 cup water
1 pinch salt
1 pinch pepper
1 lb shrimp, unshelled (about 32)
1/4 cup ketchup
1 garlic clove, minced
1/2 cup vegetable oil
1/3 cup fresh lemon juice
2 teaspoons sugar
1/2 teaspoon celery seed
1/2 teaspoon mustard seeds
1/4 teaspoon Tabasco sauce
1 orange, thinly sliced
1 white onion, thinly sliced
salt and pepper, to taste
lettuce leaf, for lining the plates

Steps:

  • Combine first 5 ingredients in a saucepan and bring to a boil.
  • Add shrimp and boil them, covered, for 1 to 2 minutes, or until pink and just firm to the touch.
  • Drain shrimp in colander, refresh them under cold water, and shell and devein them.
  • In a bowl, combine ketchup, garlic, vegetable oil, lemon juice, sugar, celery seeds, mustard seeds, Tabasco, organe, onion and salt and pepper.
  • Toss shrimp with marinade and chill mixture, covered, for 24 hours.
  • Drain shrimp and arrange on lettuce leaves on serving plates.

"DRUNKEN SHRIMP STYLE" QUICK MARINADE

1 cup vodka
1 cup citrus juice made from freshly squeezed orange, lime, and lemon juice
1/4 cup peeled ginger, chopped
1/2 clove garlic, finely minced

1/2 cup light cooking oil, preferably sesame, canola, or vegetable
1 pound small shrimp, rinsed, shells intact
1/2 pound bay scallops

Steps:

  • Soak skewers in water for 45 minutes. In a mixing bowl, combine vodka, citrus, ginger, garlic, sugar, and miso paste and whisk until mixed. Slowly whisk in oil until smooth. Pour marinade over unpeeled shrimp and scallops. Cover and let marinate in refrigerator for 45 to 60 minutes. Skewer shrimp and scallops (4 to a skewer is optimal) and place on grill over direct heat. Allow tails and legs of shrimp to slightly blacken before turning. Scallops should brown slightly before turning.

1 tablespoon lemon juice
1 tablespoon honey
2 teaspoons grated lime peel

1 tablespoon orange marmalade
24 slices French baguette, 1/4 inch thick

Steps:

  • In medium bowl, mix oil, lemon juice, honey, lime peel and salt. Add shrimp; toss to coat. Cover and refrigerate at least 30 minutes but no longer than 2 hours, stirring once after half the time.
  • Meanwhile, set oven control to broil. In small bowl, stir butter and marmalade until well mixed. Spread butter over baguette slices.
  • Remove shrimp from marinade; discard marinade. On rack in broiler pan, place shrimp in single layer. Broil with tops 4 to 6 inches from heat 4 to 6 minutes or until shrimp are lightly browned.
