CLASSIC CHAMPAGNE COCKTAIL WITH A CITRUS TWIST
New Years Eve is tomorrow, which means it's time to pop the cork and treat ourselves to one of the most festive cocktails around: the Champagne cocktail. Champagne is among my favorite things to indulge in during the holidays, and while I can definitely enjoy it on its own, I really love it when it's used as the base of a cocktail. The traditional Champagne cocktail is pretty basic, so I decided to give it a twist by adding a bit of citrus. The reason I chose to add citrus to this beautiful classic is because it pairs perfectly with the effervescent qualities of the champagne. The classic Champagne cocktail consists of a sugar cube doused in angostura bitters and topped with Champagne, so by substituting citrus bitters along with fresh citrus, the cocktail becomes even more celebratory than the original.

Steps:
- In a champagne flute or coupe drop in 1 sugar cube and add a dash of citrus bitters right on top of the cube.
- Pour in the lime juice and orange juice and allow the sugar to dissolve a bit.
- Top with Champagne.
CITRUS CHAMPAGNE COCKTAIL
When selecting the Champagne for this cocktail, we wanted something moderately dry but with a hint of sweetness. Demi-sec (a French term meaning "half dry") Champagnes and sparkling wines provide the perfect balance.

- Pour liqueur into a Champagne flute and swirl around to coat inside of glass. Top off with Champagne.

- Put the Cointreau into a champagne flute and swirl around to coat the glass.
- Pour in the Champagne, swirl both liquids around in glass, just a little bit, don't get too excited or it will slosh out, done that plenty of times!
- garnish with an orange curl.
