4 cups fresh or frozen cranberries
1-2/3 cups sugar
1-2/3 cups water
3/4 cup orange juice
1/4 cup chopped dried apricots
1/4 cup chopped dried apples
1/4 cup dried cranberries
1 teaspoon grated lemon zest
1 teaspoon grated orange zest

Steps:

  • In a large saucepan, combine the first 7 ingredients. Cook over medium heat until berries pop, about 15 minutes. Remove from the heat; stir in lemon and orange zests. Transfer to a bowl; refrigerate until chilled.

1 tablespoon unsalted butter
2 tablespoons ginger (finely grated)
16 ounces cranberries (fresh or frozen)
2/3 cup sugar
1 cup fresh orange juice
1/2 cup apricot preserves

Steps:

  • In a saucepan, over medium heat, melt the butter.
  • Add the ginger and cook, stirring, for 2 minutes.
  • Stir in the cranberries, sugar, orange juice, and preserves.
  • Cook, stirring occasionally, until the cranberries burst and the sauce thickens, about 20 minutes.
  • Transfer to a bowl and serve warm. NOTE: The sauce can be made up to 2 days in advance. Cover and keep refrigerated until ready to reheat.

1 (12-ounce) package fresh cranberries, picked over
3/4 cup sugar
1/4 cup water
1/8 teaspoon ground ginger
1/2 teaspoon fresh lemon juice
1/2 teaspoon fresh lime juice

Steps:

  • Remove the peel and pith from oranges with a pairing knife, cut each section into quarters.
  • In a heavy saucepan over medium heat combine oranges, cranberries, sugar, water, and ground ginger. Cook for 15 minutes, stirring occasionally. Remove from heat and stir in lemon and lime juice. Cover sauce and chill before serving. Can be made up to 3 days prior to serving.

  • Quarter apricots and pick over cranberries. In a 3-quart saucepan bring water, sugar, and apricots to a boil and simmer, stirring until sugar is dissolved, 5 minutes. Add cranberries and simmer until berries have burst, about 5 minutes. Finely chop shallots and stir into compote. Remove pan from heat and cool compote completely. Compote may be made 2 days ahead and chilled, covered.

8 whole green cardamom pods
1 3/4 cups canned apricot nectar
1/2 cup sugar
1/2 cup apricot preserves

1/4 cup honey
1 6-ounce package dried apricots, quartered
1 12-ounce bag cranberries
1 1/2 teaspoons grated lemon peel

Steps:

  • Coarsely crush cardamom in mortar with pestle or place in resealable plastic bag and crush with rolling pin; discard skins.
  • Bring next 5 ingredients and cardamom to boil in heavy large saucepan over medium-high heat, stirring until sugar dissolves. Add apricots; cook 2 minutes. 2 whole star anise

12 ounces cranberries, washed and picked over

Steps:

  • With vegetable peeler, remove all peel from lemon in strips and squeeze 2 tablespoons juice.
  • In 2 to 3 quart saucepan, stir together apricots, orange juice, sugar, water, star anise, lemon juice, and 1/8 tsp freshly ground black pepper. Heat to boiling on medium-high, stirring occasionally.
  • Add cranberries and lemon peel. Return to boiling. Reduce heat to medium; simmer 3 to 4 minutes or until half of cranberries pop and mixture thickens. let cranberry sauce cool before serving, or cover and refrigerate up to 4 days. Discard star anise and lemon peel before serving, if you wish.
