Try this classic Spanish dessert recipe for a tasty, traditional treat!

4 cups of whole milk (950 ml)
3 1/2 Tbs of cornstarch (25 g)
7 Tbs of flour (50 g)
1/2 cup of white sugar (100 g)
1 cinnamon stick
Lemon peel
1/2 tsp vanilla extract (2.5 ml)
1/2 cup of olive oil (120 ml)
2 eggs
Sugar and powdered cinnamon to garnish

Steps:

  • Whisk together the cornstarch, sugar, and half of the flour.
  • Add 1 cup of milk and combine. Set aside.
  • Heat the remaining milk over medium-low heat in a large saucepan until it starts to bubble.
  • Remove from heat and add the cinnamon stick, lemon peel, and vanilla. Mix and let sit for 5 minutes.
  • Gradually strain the milk from the saucepan into the mixture from the first step, and stir until combined.
  • Return to saucepan and heat over medium-low heat, stirring constantly, until the mixture thickens considerably (at least 15 minutes).
  • Oil a large baking dish and pour the mixture into it. It should be about 3/4 inch (2 cm) deep.
  • Cover with plastic wrap or wax paper so that it's resting on the surface of the mixture, and refrigerate for a minimum of 4 hours (overnight if possible) until it has solidified.
  • Turn the cooled mixture out of the pan and cut into small squares.
  • Heat the olive oil in a frying pan over medium heat, at a depth of about 1/4 inch (1/2 cm)
  • Beat the eggs in a small bowl. Put the remaining flour in another bowl.
  • Dip each piece in the beaten eggs and then the flour, to form a light coating.
  • Fry in the oil for about one minute on each side, until the coating turns golden.
  • Let cool on a paper towel, then roll in sugar and cinnamon.
  • Serve fresh or at room temperature, ideally with ice cream!

Leche frita (fried milk) is a very interesting and unique Spanish traditional dessert. This dessert has a silky smooth texture, sweet and rich flavor and very unique look. It's pretty easy to prepare leche frita, the custard is eggless, and the results are spectacular.

4 cups (960ml) Milk, divided
1 Cinnamon stick
Lemon peel from 1 small lemon
1/2 cup (100g) Sugar
2/3 cup (85g) Cornstarch
pinch Salt
1 teaspoon Vanilla extract
2 Eggs
1/2 cup (65g) Flour
1/2 teaspoon Cinnamon powder
1/2 cup (100g) sugar
oil for frying

Steps:

  • 1. Place 3 cups of milk, sugar, cinnamon stick, and lemon peel and pinch of salt in a saucepan and bring to a simmer over low heat.2. Meanwhile in a bowl, whisk cornstarch with the remaining 1 cup of milk. Whisk until smooth.3. Remove cinnamon stick and lemon peel from the hot milk. Pour the cornstarch mixture to the hot milk and heat over low-medium heat, stirring constantly, until thickens. Remove from heat, stir in vanilla extract.4. Pour the mixture into a pan lined with parchment paper. Cover with plastic wrap, let cool to room temperature, then refrigerate for at least 4 hours.5. When chilled, cut into squares.6. Prepare the coating: in one bowl beat 2 eggs, in the second bowl put flour, in the second plate/bowl mix sugar and cinnamon.7. Coat milk squares in flour, then dip in beaten eggs.8. Fry in hot oil for about 1-2 minutes on each side, until golden.9. Transfer to a paper towel to drain, then coat with sugar-cinnamon mixture. Serve warm!Notes:To make the custard more flavorful you can add orange peel and other spices.Suggested to serve with ice cream.

This creamy Spanish custard is served as a starter or as a light dessert. It sounds funny but is very delicious! When making custards with extracts, stir the flavorings in after cooking because heat can dull their taste. Plan ahead the mixture must sit in refrigerator for 3 hours or even overnight.

3/4 cup cornstarch
1 cup sugar
4 cups whole milk
2 tablespoons whole milk
3 large egg yolks
3 large whole eggs, room temperature
2 tablespoons cinnamon
1/4 teaspoon cinnamon
1 teaspoon pure vanilla extract
1 cup all-purpose flour
vegetable oil, for frying

Steps:

  • Oil or spray an 8 X 11 glass baking dish.
  • In a medium heatproof bowl, stir cornstarch with 1/2 cup of the sugar. Slowly whisk in 1 cup milk. Add egg yolks and 1 of the whole eggs and whisk until smooth. Whisk in 1/4 teaspoon of the cinnamon.
  • Over moderate heat, heat 3 cups of milk until small bubbles form around edge in a medium saucepan. Gradually whisk the hot milk into the egg mixture. Return the mixture to the saucepan and cook over moderate heat, whisking constantly, until the consistency is thicker than mayonnaise, about 5 minutes. Stir in the vanilla.
  • Scrape custard into oiled baking dish and smooth the surface; let cool slightly. Refrigerate until very firm, at least 3 hours or overnight.
  • In a small bowl, combine the 1/2 cup of sugar with the 2 tablespoons of cinnamon.
  • In a pie plate, whisk 2 eggs and 2 tablespoons of milk.
  • Spread the flour in another pie plate.
  • Cut the custard into 24 rectangles.
  • In a large, deep nonstick skillet, heat 1/2 inch of vegetable oil until shimmering. Working with 6 pieces of custard at a time and keeping the rest refrigerated, dip the custard rectangles in the beaten eggs, then dredge in the flour. Fry the custard over moderate heat, turning once or twice, until golden and crisp, about 5 minutes. Transfer to a rack lined with paper towels and immediately sift cinnamon sugar over them.
  • Repeat with the remaining pieces of custard. Serve warm or at room temperature.

If you have ever been in Canada, especially Ottawa, Ontario, we have a pastry called BeaverTails® -- a whole-wheat pastry, fried and covered in an assortment of goodies. These have also been called pigs' ears. Over the years I have perfected the recipe to the point where I and my friends no longer go out to get them. I just make 'em at home! Enjoy, EH!

½ cup warm water (110 degrees F/45 degrees C)
5 teaspoons active dry yeast
1 pinch white sugar
1 cup warm milk (110 degrees F/45 degrees C)
⅓ cup white sugar
1 ½ teaspoons salt
1 teaspoon vanilla extract
3 beaten eggs
⅓ cup vegetable oil
5 cups whole-wheat flour, divided
1 quart vegetable oil for frying
2 cups white sugar
½ teaspoon ground cinnamon, or to taste

Steps:

  • Mix warm water, yeast, and 1 pinch of sugar in a large bowl, and let stand until the yeast begins to foam and form a creamy layer, about 5 minutes. Stir in milk, 1/3 cup sugar, salt, vanilla extract, eggs, and 1/3 cup vegetable oil until the sugar has dissolved. Mix in about half the whole-wheat flour, and stir until the dough is too stiff to add more flour. Turn the dough out onto a floured surface, and knead in more flour until the dough is no longer sticky. Knead until smooth and elastic, about 10 minutes. Form the dough into a ball, place into an oiled bowl, and cover. Let rise until the dough has doubled in size, about 1 hour.
  • Punch down the dough, knead a few times to reshape it, and pinch off a piece of dough about the size of an egg. Roll the dough ball out into an oval shape about 1/4 inch thick. Place finished fried dough on a cloth and cover while you finish rolling out the pastries.
  • Heat oil in a deep-fryer or large, deep skillet to 375 degrees F (190 degrees C). Oil should be at least 4 inches deep. Combine 2 cups of sugar with cinnamon to taste in a shallow dish or pie plate, and set aside.
  • Gently lower the pastries, one at a time, into the hot oil, and fry 1 to 2 minutes per side until golden brown. Blot excess oil from fried pastries with paper towels; gently press each pastry into the cinnamon sugar while still warm. Shake off excess sugar.
