- In a large bowl, cream butter and 2 cups sugar until light fluffy. Add 1 egg at a time, beating well after each addition. Beat in vanilla. Combine flour, baking soda and salt; add alternately with sour cream, beating just enough after each addition to keep batter smooth. , Spoon a third of batter into a greased 10-in. tube pan. Combine cinnamon, nuts and remaining sugar; sprinkle a third over batter in pan. Repeat layers 2 more times. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack to cool completely.

- Preheat oven to 350°. Coat a 13x9-in. baking pan with cooking spray., In a large bowl, beat eggs, oil, sugar, honey and vanilla until well blended. In another bowl, whisk flours, baking powder, baking soda and salt; add to egg mixture alternately with yogurt, beating well after each addition., Transfer batter to prepared pan. In a small bowl, mix sugars, cinnamon and vanilla until blended. Stir in pecans; sprinkle over batter. Bake 25-30 minutes or until a toothpick inserted in center comes out clean. Cool in pan on a wire rack.

CINNAMON SUGAR SWIRL COFFEE CAKE

- Add both ingredients to a small bowl and stir to combine.
- Preheat oven to 350F.
- Spray a 12-cup Bundt pan very well with cooking spray and add about 1/3 cup of the cinnamon-sugar to the pan. Carefully roll the cinnamon-sugar around the pan, getting it into all the nooks and crannies, so the pan is well coated in cinnamon-sugar; set both the Bundt pan and remaining cinnamon-sugar aside.
- To a large bowl, add the butter, sugar, and cream (beat) on high speed with a handheld electric mixer until light and fluffy.
- Add the eggs, vanilla, and beat on high speed to combine. Scrape down the sides of the bowl if necessary.
- Add the sour cream and beat on high speed to incorporate.
- Add the flour, baking soda, salt, and beat on low speed or mix by hand until incorporated; don't overmix or cake will be tough.
- Turn half the batter out into the prepared Bundt pan, smoothing the top lightly with a spatula. Tip - Make sure you don't add more than half; novice bakers tend to underestimate how much batter they're adding and the problem is that you then don't have sufficient batter to properly complete the cake. Set remaining batter aside.
- Evenly sprinkle the remaining cinnamon-sugar over the cake batter. It may look like a lot but it melts into the batter/cake while baking.
- Turn the remaining cake batter out over the cinnamon-sugar layer, smoothing the top lightly with a spatula.
- Bake for about 40 to 45 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs but no batter. Since all ovens, pans, climates, etc. are different, I recommend starting to check on the cake at the 30 to 35-minute mark, and keep a close eye on it from there until it's done; don't overbake or it will be dry. Watch your cake and not the clock and if it takes a bit less or longer for your cake to be sufficiently baked than my baking time estimates, do what is needed for your cake.
- Allow the cake to cool in the pan on a wire rack for about 20 minutes before inverting it onto a serving platter and serving.

- Place sugar and butter in a bowl; beat with mixer until well blended. Add oil, vanilla, and egg; beat until blended.
- Add white and wheat flour, baking powder, baking soda, salt, milk, and cinnamon to mixture; stir until completely combinded. Chill in refrigerator for 45 minutes (or freezer for 15, just enough to cool).
- Preheat oven to 375.
- Combine 1/4 cup sugar (or 1/8 cup Splenda) and 1 teaspoon cinnamon in a small bowl or plate. Shape dough into 1 inch balls, makes about 1 dozen. Roll balls in cinnamon sugar mixture. Place 2 inches apart on ungreased baking sheet, slightly flattened balls. Bake at 375 for 12 minutes, allow to cool.

- In a medium bowl combine 1/2 cup brown sugar, 1/2 cup of flour, 1/2 tsp cinnamon and 4 tbsp soft butter. Mix well with a fork until it's a sand-like texture and set aside.
- Bake your favorite soft sugar cookie recipe, taking them out of the oven 5 min before they're done.
- Gently press the back of a spoon into the cookie, creating a small indent.
- Top the cookies with some crumble and continue baking until they are golden brown.
- While the cookies finish in the oven, prepare the glaze. Mix 1/2 cup of light brown sugar with 1/2 tsp vanilla and 2 tbsp water. Drizzle over cookies when they're finished baking.
- Powdered sugar topping - optional.

CINNAMON SUGAR COOKIES
These melt in the mouth treats never lasted long once grandma had put them in the cookie jar !!! These cookies are perfect for baking ahead of time and freezing. Grandma left the cookies to cool completley, then she would open freeze them until soild. Once solid, she stacked the cookies, a few at a time, and wrapped them loosely in foil. Then she sealed them in a freezer bag and froze for up to 1 month.

- put the butter and soft cheese into a large mixing bowl. beat together with a electric whisk or wooden sponn until smooth and combined.
- add the flour, 125g caster sugar, 2 tsp cinnamon and eggs. beat together until the mixture resembles coarse breadcrumbs. using your hands, carefully gather the mixture together to form a ball.
- put the ball of dough onto a floured surface. shape into a roll about 3cm/1 1/2 inch in diameter. wrap in cling film. chill in the freezer for 30mins or until firm.
- preheat the oven to 180 oc/350of/gas 4. grease 2 non stick baking trays.
- unwrap the cookie dough and put on a work surface. cut into 6mm/1/4inch thick slices. put the slices on the baking trays, spaced well apart.
- bake for 12-15 minutes, or until the cookies are set and pale golden. cool slightly, then use a fish slice to transfer the cookies to a wire rack.
- for the topping mix together 2 tbsp of caster sugar and 1/2 tsp ground cinnamon. sprinkle over the hot cookies, then leave to cool completely.
