Mix together Alton Brown's Horseradish Cream Sauce from Food Network for an easy condiment to go with roast beef and more.

- Place all of the ingredients into a medium mixing bowl and whisk until the mixture is smooth and creamy. Place in the refrigerator for at least 4 hours or overnight to allow flavors to meld. Sauce can be stored in the refrigerator in an airtight container for 2 to 3 weeks.

- Combine the garlic, hot red pepper flakes, peppercorns, rosemary, and olive oil in a Zip-loc bag. Add the beef, coating it with the marinade. Squeeze all the air out of the bag so the beef is enveloped by the marinade, and refrigerate for at least 6 hours, or overnight.
- Preheat the grill or broiler for 15 to 20 minutes. Sprinkle the steak with the salt and grill or broil to rare or medium rare, depending on your preference.
- The cooking time will depend on the thickness and temperature of the beef, so push at the steak with your finger, and if it still feels totally raw in the middle, give it a little longer.
- This is one of the things that cooks just need to intuit and learn to read the silent signs. Better under than overcooked, so check often, and if your finger defeats you, cut the steak with a knife and have a look. Let the steak rest for at least an hour, to get the juices back into the meat, then cut into short, very thin slices. (The best knife for slicing is a bread knife with wavy rather than pointed teeth, which cuts through beef amazingly well.) Serve on Grilled Garlic Crostini.
- Arrange a few shaved slices of beef on each piece of bread, top with a pungent dot of Horseradish Cream, scatter with minced Italian parsley, and dust on a little kosher salt.

- Coarsely grate potatoes and parsnips. Place grated vegetables on a double thickness of cheesecloth; bring up corners and squeeze out any liquid. Transfer to a large bowl; stir in the onions, eggs, salt and pepper., In an electric skillet, heat 1/8 in. of oil to 375°. Drop potato mixture by heaping tablespoonfuls into hot oil. Flatten to form patties. Fry until golden brown; turn and cook the other side. Drain on paper towels., Roll salmon to form rose shapes; set aside. - Place the peppercorns into a shallow bowl. Sprinkle the beef tenderloin filets with salt on both sides, and coat both sides with crushed peppercorns.
- Melt the butter with the olive oil over high heat in a heavy skillet (not nonstick) until the foam disappears from the butter. Gently place the steaks in the pan, and cook until they start to become firm and are reddish-pink and juicy in the center, about 3 1/2 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Remove the steaks to platter, and cover tightly with foil.
- Pour the beef broth into the skillet, and use a whisk to stir the broth and scrape up any dissolved brown flavor bits from the skillet. Whisk in the cream, and simmer the sauce until it's reduced and thickened, 6 to 7 minutes. Place the steaks back in the skillet, turn to coat with sauce, and serve with the remaining sauce.

HORSERADISH SAUCE FOR FILET MIGNON
I got this recipe out of Wine Enthusiast Magazine. This horseradish sauce is a delicious addition to Filet Mignon. Note: Marinate the beef in olive oil mixed with chopped garlic, parsley, rosemary, thyme, salt, pepper and fresh herbs, covered, in the referigerator for a least an hour or overnight. Cut the filet into medallions for serving.

- In a small bowl, whisk together creme fraiche, 1/2 teaspoon salt, 2 tablespoons olive oil, 1 teaspoon of horseradish, dijon, 1/4 teaspoon pepper and garlic. Taste and add additional horseradish if desired. Transfer to a jar and refrigerate until needed. Horseradish cream may keep for up to three days.
- Rub the beef filet all over with olive oil. Sprinkle all over with remaining 1 1/2 teaspoons of salt and 3/4 teaspoon black pepper. Heat a large cast iron skillet on high until nearly smoking. Sear the beef filet all over until it gets a nice brown crust. It should take a about a minute per side.
- Slide the skillet into the oven and roast the beef for about about 10 – 12 minutes. Start checking after 5 minutes with a probe meat thermometer. Remove from oven when the thermometer reads 130F. This may seem low, but the beef will keep cooking as it cools. Do not over cook!

- Season the steaks generously with the salt and freshly ground black pepper and then transfer the steaks to the air fryer.
- Air-fry the steaks for 15 minutes, turning them over halfway through the cooking process. This should cook steaks to about medium, depending on how thick they are. If you’d prefer your 1-inch steaks medium-rare or medium-well, simply add or subtract two minutes from the cooking time. If your steaks are thicker than 1-inch, add a couple of minutes to the cooking time. When cooked to your desired degree of doneness, remove the steaks from the air fryer and let them rest for 5 minutes before serving.
- While the steaks are air-frying and resting, prepare the horseradish cream by combining the lemon juice, horseradish, crème fraîche (or sour cream), thyme and parsley in a small bowl. Mix well and season with salt and freshly ground black pepper.
