BAKED BANANA BOATS
Kids can make their own baked banana boats with custom toppings. We use different berries and honey or peanut butter instead of chocolate chips. These baked bananas are also good topped with crushed graham crackers or granola-whatever your family likes. -Rebekah Viers, Taylors, South Carolina

- Cut each banana lengthwise about 1/2 in. deep, leaving 1/2 in. uncut at both ends. Place each banana on a 12-in. square of foil; crimp and shape foil around bananas so they sit flat. Gently pull each banana peel open, forming a pocket. Fill pockets with pineapple, granola, pecans and chocolate chips., Place on a baking sheet. Bake at 350° for 10-12 minutes or until chips are softened.

- Slit unpeeled bananas lengthwise along inner curve.
- Take care not to cut right through.
- Stuff cavity with choc melts and marshmallows.
- Wrap bananas loosely in foil, seal well.
- Barbeque, curve upwards for 15 minutes till choc has melted.
- Leave in foil and eat with a spoon.
- Do not eat skin.

- Split the bananas lengthwise, but don't cut all the way through. The goal is to create a boat to hold the ingredients. Load the bananas 1/4 cup each of the caramel bits, chocolate chips and mini marshmallows. Crumble 1 whole graham cracker onto each loaded banana. Wrap individually in 8-by-10-inch squares of foil, and then place near the campfire to melt the candies. Open up and eat with a spoon.

- In a stand mixer with the whisk, beat the condensed milk and water on medium speed until well combined, about 1 minute. Add the pudding mix and beat until there are no lumps and the mixture is smooth, about 2 minutes. Transfer the mixture to a medium bowl, cover and refrigerate until firm, at least 1 hour or overnight.
- In a stand mixer with the whisk, whip the heavy cream on medium speed for about 1 minute, until the cream starts to thicken, then increase the speed to medium-high and whip until stiff peaks form. Be careful not to overwhip.
- With the mixer running on low speed, add the pudding mixture a spoonful at a time. Mix until well blended and no streaks of pudding remain.
- To assemble, select a trifle bowl or a wide glass bowl with a 4- to 5-quart capacity, or individual serving bowls.
- Saving 4 to 5 cookies for the garnish on top, begin assembly. Spread one-quarter of the pudding over the bottom and layer with one-third of the cookies and one-third of the sliced bananas (enough to cover the layer). Repeat the layering twice more. End with a final layer of pudding. Garnish the top with additional cookies or cookie crumbs.
- Cover tightly with plastic wrap and refrigerate for 4 to 6 hours. Cookies should be tender when poked with a knife. This dessert is best served within 12 hours of assembling.
BANANA BOATS
Banana boats are a classic campfire dessert: a delicious gooey mess of softened banana, melted chocolate and sticky marshmallows meant to be eaten with a spoon. Tweaking the recipe so it can be done at home in an oven or on a grill means that this treat can be enjoyed year round, even if you're far from a campfire. Bonus: If you're making them at home and feeling adventurous, you can add sprinkles, nuts or ice cream.

- Preheat the oven to 400 degrees F or prepare a grill for medium indirect heat. For a gas grill (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes turn off one of the middle burners and turn the remaining burners down to medium. For a charcoal grill, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. (Be sure to consult the grill manufacturer's guide for best results.)
- Break the chocolate bar into squares. Lightly spray kitchen shears with cooking spray and cut the marshmallows in half crosswise.
- Use a paring knife to cut a slit down the center of 1 unpeeled banana lengthwise, being sure not to cut all the way through. Gently insert alternating pieces of half the chocolate and 4 marshmallow halves. Press the marshmallows into the banana as much as possible so they don't stick out too much. Wrap the banana in nonstick aluminum foil. Repeat with the remaining banana, chocolate and 4 marshmallow halves.
- Bake or grill over indirect heat, covered, until gooey, 12 to 14 minutes. Let cool 1 minute before unwrapping and eating.
BANANA BOATS
These are great for a camp fire during a trip to the outdoors. If you don't have a fire, use the oven or barbeque. Serve with hot chocolate.
