LIGHT AND FLUFFY CHOCOLATE CHIP PANCAKES
My Light and Fluffy Chocolate Chip Pancakes are simply the BEST! Just one bite will turn you into a believer.

Steps:
- In a large bowl add the flour, sugar, baking soda, baking powder, salt, and cinnamon (if using); whisk well to combine. In a separate bowl add the eggs and lightly beat them with a whisk. Add in the milk, sour cream, and vanilla and beat until well combined. Stir the wet mixture into the dry ingredients, stirring just until everything is combined. Quickly fold in the chocolate chips, stirring until evenly combined. Be careful not to over mix the batter.
- Pour batter by 1/3 cupfuls onto a buttered hot pan or griddle, adding only a few at a time so that they do not blend together. Cook for 3 to 4 minutes before flipping them over, or until small bubbles form on top. Cook on the second side until golden brown, about 2 minutes. Repeat with all pancake batter. Serve pancakes warm, with syrup, whipped cream, and/or extra chocolate chips. See notes for freezing options.
CHOCOLATE CHIP PANCAKES
This is my go-to recipe for chocolate chip pancakes. The pancakes come out super fluffy and the whole family loves them. Add as many chocolate chips as you like. Can easily be doubled or tripled. Serve with maple syrup if you like.

- Combine milk and vinegar in a bowl and set aside for 5 minutes to "sour" the milk. You are essentially making your own buttermilk with this step.
- Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
- Whisk egg, butter, and vanilla extract into "soured" milk until well combined. Pour flour mixture into the wet ingredients and whisk until just combined. Fold in chocolate chips. Batter will be thick. Allow batter to rest for 5 minutes.
- Heat a large skillet over medium-low heat, and coat with cooking spray.
- Pour about ¼ cup of batter for each pancake onto the skillet. Cook until bubbles appear on the surface, 2 to 4 minutes. Flip pancake with a spatula, and cook until browned on the other side, 2 to 3 more minutes. Repeat with remaining batter. Serve immediately.

DOUBLE CHOCOLATE CHIP PANCAKES

- Make the batter by combining the pancake mix, milk, sugar, melted butter and egg in a large bowl. Stir in the dark and white chocolate chips.
- Heat a nonstick skillet or griddle over medium heat and add a little butter. Drop about 1/4 cup of the batter per pancake onto the skillet, then fry on both sides until dark and golden, about 2 1/2 minutes per side.
- Remove the pancakes to a plate and drizzle with the caramel and chocolate sauces. Top with butter and whipped cream and garnish with both types of chocolate chips.

- Preheat griddle to 350°F
- In a large bowl, combine flour, sugar, baking powder, and salt.
- In a small bowl, combine milk, egg yolks, and 3 tablespoons melted butter; add to flour mixture, whisking until smooth.
- In a small bowl, beat egg whites at medium-high speed with an electric mixer until stiff.
- Gently fold into batter.
- Gently fold in chocolate morsels.
- Melt 2 tablespoons butter on hot griddle.
- Ladle about 1/4-cup batter for each pancake onto hot griddle.
- Cook pancakes for 2 to 3 minutes, or until tops are covered with bubbles and edges look cooked.
- Turn and cook the other side.
- Repeat procedure with remaining 2 tablespoons butter and remaining batter.
- For the Cinnamon Cream:.
- In a medium bowl, beat cream at medium-high speed with an electric mixer until thickened.
- Gradually beat in confectioners' sugar and cinnamon, beating until stuff peaks form.
- Cover and chill.
- Serve pancakes with Cinnamon Cream and maple syrup.

- Sift the flour, baking powder, salt and cinnamon together and set aside.
- Beat the butter with the sugar until well blended and creamy. Beat in the egg.
- Mix the sour cream and baking soda together and add to the butter mixture. Add the dry ingredients and beat well to make a soft dough. It will be sticky, so cover and chill the dough for about 30 minutes until it is firm enough to handle. If the kitchen is hot you may need to chill the dough a little longer.
- Lightly grease baking sheets. Preheat oven to 375 degrees.
- Take walnut-size pieces of the dough and roll into balls. Arrange on the baking sheets about two inches apart to allow for spreading. Flatten the balls with the tines of a fork. Bake 10 to 15 minutes until the cookies are golden brown but still slightly soft in the center. Allow to cool for a couple of minutes on the pans, then transfer them to racks to cool completely.
