Cauliflower With Cinnamon image

Number Of Ingredients 8

Juice of 1 lemon
1 large head cauliflower
8 tablespoons butter
1 teaspoon ground cinnamon (or to taste)
1/2 teaspoon ground nutmeg (or to taste)
1 cup soft bread crumbs
1/2 pint heavy cream
Salt and white pepper, to taste

Steps:

  • Preheat oven to 375 degrees.
  • Put cold water into a large bowl and mix in the lemon juice.
  • Remove the center stalk from the cauliflower, cut the head into large, thin slices and put them in the lemon water.
  • Butter a suitable au gratin dish with 2 tablespoons of the butter. Drain the cauliflower slices, layer half of them in the bottom of the dish and sprinkle them with half of the cinnamon, nutmeg and bread crumbs. Add salt and pepper to taste.
  • Dot with half of the remaining butter and pour over half of the cream. Make a second layer using all remaining ingredients. Cover and bake for 1 hour, or until done.

1 head of cauliflower, chopped into florets
1/2 teaspoon cinnamon
1/2 teaspoon paprika
1/2 teaspoon cayenne
1/2 teaspoon garlic powder
1/2 teaspoon coarse salt
1 teaspoon sesame oil
3 tablespoons olive oil

Steps:

  • Spread florets from 1 head of cauliflower out on a baking sheet and sprinkle with the spices, sesame oil, and olive oil.
  • Roast at 450° F for 20-25 minutes or until golden, fork tender, and crispy on the edges.

  • Place the sun-dried tomatoes in a cup of warm water to soak for one hour. Remove, coarsely chop, reserve the water and set aside.
  • Heat 3 tablespoons olive oil in a large, wide pot over medium heat and cook the onion and garlic until wilted, about 8 minutes, stirring.
  • Add the cauliflower florets, toss to coat in the oil, and add the tomatoes. Stir gently. Add enough water to come about three-quarters of the way up the cauliflower. Add the bay leaves, cinnamon and orange zest. Season lightly with salt and pepper. Cover and simmer over low heat for 20 minutes. Add the olives and continue cooking for five minutes. Remove and serve, garnished with an orange wedge and the fresh herbs.
