CANDIED CARROTS AND PARSNIPS

Number Of Ingredients 10

2 med. carrots, peeled, halved lengthwise and sliced
2 med. parsnips, peeled, halved lengthwise and sliced
2 Tbsp. butter
2 Tbsp. brown sugar
2 Tbsp. orange juice
2 tsp. fresh lemon juice
1/4 tsp. ground cinnamon
1/8 tsp. ground nutmeg
Salt and freshly ground black to taste
1 green onion, thinly sliced

Steps:

  • Place the carrots and parsnips in a pot and cover with cold water. Gently boil the vegetables until just tender, about 5 minutes, and then drain well. Place the butter in a skillet and set over medium heat. When the butter is melted, add the brown sugar, orange juice, lemon juice, cinnamon and nutmeg and cook and stir until the brown sugar is melted. Add the carrots and parsnips. Cook while stirring for 2 to 3 minutes, and then serve.

1/4 cup honey
2 tablespoons butter (or stick margarine)

  • In a separate saucepan, heat the honey, butter and cinnamon until butter is melted, stir to blend.

1 pound carrots, unpeeled
3 tablespoons good olive oil
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
2 tablespoons minced fresh dill or parsley

Steps:

  • Preheat the oven to 425 degrees F.
  • If the parsnips and carrots are very thick, cut them in half lengthwise. Slice each diagonally in 1-inch-thick slices. The vegetables will shrink while cooking, so don't make the pieces too small. Place the cut vegetables on a sheet pan. Add the olive oil, salt, and pepper and toss well. Roast for 20 to 40 minutes, depending on the size of the vegetables, tossing occasionally, until the parsnips and carrots are just tender. Sprinkle with dill and serve hot.

1 ½ pounds carrots, coarsely chopped
2 pounds parsnips, peeled and cut into 1/2 inch pieces
½ cup butter, diced and softened
1 pinch ground nutmeg
salt to taste
ground black pepper to taste

Steps:

  • Bring a large pot of salted water to a boil. Add carrots, cover partially, and simmer 5 minutes. Add parsnips, and cover partially. Simmer until vegetables are very tender, about 15 minutes. Drain well.
  • Return vegetables to saucepan, and stir over medium heat until any excess moisture evaporates. Transfer to food processor. Add butter, and process until smooth. Season with nutmeg, salt, and pepper. Can be made 4 hours ahead. Rewarm over low heat, stirring often. Transfer to bowl. Serve.

2 pounds parsnips, peeled, trimmed and quartered lengthwise
Coarse salt
1/4 cup firmly packed dark-brown sugar
3 tablespoons unsalted butter, cut into pieces, plus more for pan
Freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. Place parsnips in a medium saucepan. Add enough water to cover by 1 inch, and 1 teaspoon salt. Bring to a boil. Reduce to a simmer, and cook until tender, about 6 minutes; drain.
  • Generously butter a 9-by-13-inch baking pan. Arrange parsnips in pan and sprinkle with sugar. Dot with butter, and season with salt and pepper. Bake until parsnips are tender and glazed with sugar and butter, about 20 minutes.

3 carrots, large, julienned (cut into thin strips)
2 parsnips, large julienned (cut into thin strips)
2 tablespoons butter, salted (or margarine)
2 tablespoons brown sugar, loose (not packed)
1/2 teaspoon cinnamon, ground

Steps:

  • Fill a medium-sized pot 2/3-full of water. Over high heat, bring to a rolling boil.
  • While waiting for water to come to a boil, peel carrots and parsnips. Then julienne (cut into 2" long x ¼" wide strips) and place into boiling water.
  • Boil for 10-12 minutes or until fork-tender. Drain and place in a serving bowl.
  • Return empty pot to stovetop over low heat. Melt the butter and then stir in the brown sugar and cinnamon.
  • Drizzle over carrots and parsnips, toss until coated, serve and enjoy!
