2-1/2 quarts apple cider or juice
1/2 cup Red Hots
1/4 teaspoon ground nutmeg
2 cinnamon sticks (3 inches)
1/2 teaspoon whole cloves

Steps:

  • In a large saucepan, combine cider, Red Hots and nutmeg. Place cinnamon sticks and cloves on a double thickness of cheesecloth. Gather up corners of cloth to enclose seasonings; tie securely with string. Add to Dutch oven., Bring to a boil, stirring occasionally to loosen candies. Reduce heat; simmer, covered, 10-15 minutes or until flavors are blended. Discard spice bag.

10 apples, quartered
¾ cup white sugar
1 tablespoon ground cinnamon
1 tablespoon ground allspice

Steps:

  • Place apples in a large stockpot and add enough water cover by at least 2 inches. Stir in sugar, cinnamon, and allspice. Bring to a boil. Boil, uncovered, for 1 hour. Cover pot, reduce heat, and simmer for 2 hours.
  • Strain apple mixture though a fine mesh sieve. Discard solids. Drain cider again though a cheesecloth lined sieve. Refrigerate until cold.

16 cups (1 gallon) apple cider
1/4 cup light brown sugar
1 teaspoon allspice
Pinch grated nutmeg
2 teaspoons whole cloves
1 orange
Cinnamon sticks, for garnish
2 cups bourbon, optional

Steps:

  • In a large pot over medium heat, add the apple cider. Stir in the brown sugar, allspice and nutmeg until the sugar is dissolved and bring to a low boil.
  • Stick the pointy ends of the cloves into the orange so that just the buds of the cloves are visible. The entire orange should be covered with the cloves.
  • Add the orange to the cider and reduce the heat to simmer. Cover and continue cooking for 20 minutes.
  • Serve in warm mugs with a cinnamon stick garnish. For adults, add bourbon to the cider.

3-1/4 cups all-purpose flour
1/4 cup sugar
1 package (1/4 ounce) quick-rise yeast
1/2 teaspoon salt
3/4 cup 2% milk
1/4 cup apple cider or juice
1/4 cup plus 1/3 cup butter, softened, divided
1 large egg, room temperature
2 cups finely chopped peeled tart apples
1-1/4 cups packed brown sugar
3/4 cup finely chopped walnuts
3 teaspoons ground cinnamon
2 cups apple cider or juice
1 cinnamon stick (3 inches)
1 package (8 ounces) cream cheese, softened
1/4 cup butter, softened
1 cup confectioners' sugar

Steps:

  • In a large bowl, combine 2-1/4 cups flour, sugar, yeast and salt. In a small saucepan, heat the milk, cider and 1/4 cup butter to 120°-130°. Add to dry ingredients; beat just until moistened. Add egg; beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 10 minutes. Roll into a 15x10-in. rectangle. Spread remaining butter to within 1/2 in. of edges. Combine the apples, brown sugar, walnuts and cinnamon; sprinkle over butter., Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 12 slices. Pinch of ground cloves
1/2 cup/120 milliliters vegetable oil
1/2 cup/120 milliliters unsweetened applesauce
1/2 cup/100 grams granulated sugar
1/2 cup/110 grams packed dark brown sugar
3 large eggs
1 large Granny Smith apple, unpeeled and shredded (about 1 cup)
1 cup/240 milliliters apple cider
2 tablespoons unsalted butter
1/2 cup/60 grams confectioners' sugar
Pinch of kosher salt

Steps:

  • Heat oven to 350 degrees. Butter and flour an 8 1/2-inch-by-4 1/2-inch loaf pan. In a medium bowl, whisk together flour, baking powder, cinnamon, salt, nutmeg and cloves. In a large bowl, whisk together the oil, applesauce, sugars, eggs and apple.

  • Preheat oven to 350°. Combine cider mixes. Separate cinnamon rolls, setting aside icings; cut each roll into quarters.
