Easy tomato soup with basil is a hearty, delicious side dish or light entrée, perfect for serving guests.

2 tablespoons olive oil
2 yellow onions, chopped
8 cloves garlic, minced
2.5 ounces fresh basil leaves, chopped (or 1.5 teaspoons dried basil)
3 28- ounce cans whole peeled tomatoes, including juices/puree
3 cups vegetable stock
2 tablespoons butter
1 teaspoon baking soda
sea salt, I added no salt
Grated Parmesan cheese for serving

Steps:

  • In a large pot, sauté the onion in the olive oil over medium heat until browned, about 10 to 12 minutes
  • Add the garlic and sauté another 3 minutes
  • While onion and garlic are sautéing, open your canned tomatoes and dice the whole tomatoes.
  • Add the diced tomatoes and juices/tomato puree to the pot with the sauteed onion and garlic.
  • Add the vegetable stock, chopped basil and butter. Stir until butter is melted and incorporated.
  • Add the baking soda. This will cause the soup to bubble up quite a bit, so make sure your pot is big enough to hold a little momentary soup fizz. The bubbles/fizz will die down after a few seconds of stirring.
  • Bring pot to a full boil then reduce the heat to a simmer and cook for 45 minutes.
  • Optional: You can blend part or all of this soup for a smoother consistency, though I like it chunky.
  • Serve with grated parmesan on top. Seriously. It's the bomb!

For the roasted tomatoes
3 pounds roma or plum tomatoes, cut in half
8 cloves garlic, peeled
3 tablespoons olive oil
Freshly ground salt and pepper
For the caramelized onions:
½ tablespoon olive oil
2 yellow onions, thinly sliced
Additions to the soup:
½ cup packed basil leaves
½ teaspoon dried oregano
1-2 cups water or vegetarian broth, depending on how thick you want the soup
Freshly ground salt and pepper, to taste
Optional add ins:
Light/Regular coconut milk for a creamy vegan soup
Whole dairy milk/heavy cream for a creamy texture
Parmesan cheese, for a tangy, flavor enhancing flavor
A tablespoon or two of butter, for richer flavor

Steps:

  • Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper. Place halved tomatoes and garlic cloves on the baking sheet and drizzle with 3 tablespoons of olive oil. Generously season with salt and pepper. Roast in the oven for 40-45 minutes.
  • While the tomatoes are roasting, you can make the caramelized onions: Add 1/2 tablespoon olive oil to a large pot and place over medium heat. Add the onion slices and stir to coat the onions with olive oil. Cook, stirring occasionally. Check onions every 5-10 minutes until they have completely caramelized and turned golden in color. This ususally takes 20 minutes.
  • Once tomatoes and garlic are done roasting, allow them to cool for 10 minutes, then add them to a food processor or high powered blender and blend until smooth. Next add basil and caramelized onions and blend again. Alternatively you can add the tomatoes to the large pot and use an immersion blender. It's really just about what you have available to you.
  • After blending, transfer back to pot, turn to medium low heat and add in oregano, vegetarian broth and salt and pepper to taste. From there you can add in any additional add-ons you want (as listed in the ingredients). Allow tomato soup to simmer 10 minutes before serving. To serve, garnish with parmesan cheese and serve with grilled cheese, if desired. Serves 4.

2 onions
3 lbs roma tomatoes
1 (14 -16 ounce) can tomato sauce
1 bulb of garlic
1/2 cup fresh basil
2 tablespoons dried oregano
4 cups chicken stock
2 teaspoons baking soda
2 cups freshly grated cheddar cheese
2 teaspoons salt, to taste
2 teaspoons pepper, to taste
1 teaspoon red pepper flakes, to taste
2 tablespoons plus more olive oil
4 tablespoons unsalted butter

Steps:

  • Preheat oven to 400 F.
  • Slice the onions into thin strips.
  • Slice the tomatoes in half.
  • Brush the tomatoes with olive oil, then sprinkle liberally with salt and pepper.
  • Arrange them on a parchment paper covered baking sheet cut side up.
  • Peel all the garlic cloves.
  • Place the garlic cloves in the middle of a double layered sheet of aluminum foil that is roughly square.
  • Make a cup shape around the cloves and drizzle olive oil over them.
  • Wrap the sides up to form a roughly garlic bulb shaped aluminum foil container.
  • Heat up 2 Tbsp olive oil in a large pot over medium heat.
  • Place the onions into the pot. Stir it up so that everything's coated in olive oil. Put a lid on the pot but leave it partially open.
  • Put the baking sheet with tomatoes and the garlic into the oven and set a timer for 45 minutes.
  • Keep an eye on the onions. Stir occasionally, as they turn color, they will reduce significantly.
  • We are aiming to caramelize the onions so you will notice that eventually they will be brown in color but not burnt. At this point add the butter. When it's melted stir everything up again. Add red pepper flakes, stir.
  • By this point the tomatoes and garlic should be done and out of the oven. They should ideally cool for about 10 minutes. At this point put them into the pot and roughly chop everything with a wooden spatula and stir some more.
  • Put the fresh basil in and let it sweat for a bit, then Add the tomato sauce, the chicken stock, and the oregano and stir it up again.
  • Add the baking soda. This will reduce the acidity of the soup, but it will foam up for a bit. Keep stirring through the foaming process until it has completed. Hope your pot was big enough.
  • When this has been completed, reduce the temperature, and let the soup simmer for as long as you can afford to wait (up to an hour or more). Taste the soup and adjust spices as necessary during this time (consider more pepper, more salt, more oregano, more red pepper as you prefer).
  • Finally add the cheese into the soup and stir it until it melts and turns the soup creamy looking.
  • Serve by itself or with grilled cheese sandwiches.

2 lbs Campari or cherry tomatoes, quartered and cored
2 cloves garlic, pressed
6 tablespoons olive oil
2 cups Roasted Tomato and Vegetable Sauce
3 cups vegetable stock
4 sprigs fresh basil
1 1/2 cups torn pieces country style loaf bread

Steps:

  • Preheat oven to 450 degrees. Line a large sheet pan with foil. Toss tomatoes, garlic, and 3 tablespoons oil on the prepared sheet pan; season with salt and pepper.

  • Roast, for 30 - 35 minutes stirring occasionally until the tomatoes are browned and the juices thicken.

  • In a large sauce pot combine roasted tomatoes, tomato sauce, and vegetable stock. Mix until well combined and bring to a boil. Once boiling lower to simmer and cover for 8 - 10 minutes.

  • Spread bread crumbs on the sheet pan and toss with 3 tablespoons of olive oil and sprinkle with salt. Toast in the oven for 5 minutes or until bread is toasted.

  • Tear basil leaves and add to sauce pot. Ladle soup evenly into 4 bowls, top with croutons and shaved parmesan.

½ yellow bell pepper, diced
¾ teaspoon butter, divided
8 tomatoes, peeled and sliced

¼ teaspoon ground cloves
1 ½ teaspoons dried oregano
1 ½ teaspoons dried basil
1 cup milk
1 tablespoon cornstarch

Steps:

  • Place the red bell pepper and yellow bell pepper in a large pot with 1/4 teaspoon butter, and cook, stirring constantly, until peppers are slightly charred. Mix in tomatoes, onion, garlic, and chicken broth. Season with salt, sugar, cloves, oregano, and basil. Bring to a boil, and cook 20 minutes, until tomatoes are soft.
  • Mix the milk and cornstarch in a small saucepan, and stir until smooth. Place saucepan over medium heat, and stir in remaining 1/2 teaspoon butter. Continue to cook and stir until thickened. Mix into the pot with vegetables.
  • Strain about 1/2 the vegetables from the soup and transfer to a blender. Blend until smooth, and return to the pot. Bring soup to a boil, reduce heat to low, and simmer 5 minutes. Remove from heat, and let sit about 5 minutes before serving.

400g frozen grilled vegetable mix (peppers, aubergine, onion , courgettes)
2 tbsp chopped garlic
handful basil leaves
400g can chopped tomato
1 reduced-salt vegetable stock cube
50g ricotta per person, beaten with snipped chives and basil, spread on a slice of rye bread

Steps:

  • Heat a large non-stick pan, tip in half the vegetables and the garlic, and cook, stirring, over a high heat until they start to soften - about 5 mins. Tip in the basil, tomatoes, stock cube and 2 cans of water, then blitz with a hand blender to get the mixture as smooth as you can.
  • Add the remaining frozen veg, cover the pan and cook for 15-20 mins more until the veg is tender. Ladle into bowls. Serve with the herby ricotta on rye bread.

4 tablespoons (1/2 stick) butter
2 tablespoons olive oil
1 medium onion, chopped
Coarse salt and ground pepper
1/4 cup all-purpose flour
3 tablespoons tomato paste
2 sprigs fresh thyme (or 1/2 teaspoon dried thyme)
2 cans (14 1/2 ounces each) reduced-sodium chicken broth
2 cans (28 ounces each) whole peeled tomatoes in juice (with basil if available)

Steps:

  • In a 5-quart saucepan or Dutch oven, melt butter over medium heat; add oil and onion, and season with salt and pepper. Cook until onion is translucent, about 5 minutes. Stir in flour and tomato paste; cook 1 minute.
  • To saucepan, add thyme, broth, and tomatoes, breaking up tomatoes with your fingers. Bring to a boil; reduce heat and simmer, 30 minutes. (Remove thyme sprigs before blending.)
  • Using an immersion blender, puree soup in pot, leaving a fair amount of the tomatoes in chunks. Or, working in several batches, puree half (5 cups) of the soup in a conventional blender until smooth; return to pot. Season with salt and pepper. Serve immediately.

Steps:

  • Transfer vegetables and all juices to a large dutch oven or heavy pot. Add chicken broth and bring to a rapid simmer. Cook until slightly reduced, about 25 minutes.
  • Transfer soup to a large bowl. In batches, fill blender halfway with soup, puree until smooth, transferring to pot as you work (use caution when blending hot liquids). Stir in tarragon and season with salt and pepper. If necessary thin with additional chicken broth. Serve with a drizzle of olive oil.
