COUNTRY PEACH PRESERVES

Time P1DT40m

Number Of Ingredients 4

11 lbs peaches (rinsed)
4 cups white sugar
Juice of 1 medium lemon
5-6 pint-sized jars with lids.

Steps:

  • Fill 2/3 of a large soup pot with water. Bring to a boil. Add peaches for 30 -45 seconds, then remove with slotted spoon and drain the pot. Remove peaches immediately to a large bowl of cold water.
  • Peel the skin, cut the peaches into quarters and remove pits.
  • Place all peeled peaches in a large soup pot and squeeze in juice of 1 lemon. Drizzle well with 2 cups sugar, toss and drizzle again with the remaining 1.5-2 cups so the sugar reaches all the peaches. If peaches are very sweet, you may only need 3 1/2 cups of sugar total. Add more sugar to taste while its cooking.
  • Let peaches sit at room temp with the sugar for about 30 min -1 hour, or until sugar is dissolved.
  • Place the pot over the stove uncovered and bring to a light boil, stirring to prevent scorching. Once the whole pot is at a light boil, simmer for 10 minutes and turn off the heat. Let the pot stand uncovered until it is just warm to the touch or reaches room temp.
  • As soon as it cools, repeat step 3. You will bring it to a light boil a total of 5 times. Preserves have plenty of sugar so they won't spoil at room temp if you leave it on the counter overnight. If you want the preserves to have an even thicker consistency, you can boil it 6 times if you wish. (Note: the fifth time you boil, bring it to a boil over a little lower heat and stir a few extra times to prevent scorching. Also, it thickens more as it cools.)
  • The last time you bring it to a boil you will want to transfer it to sterilized jars while it's boiling hot.
  • Transfer your boiling hot preserves to the jars using a glass measuring cup and a funnel (least messy method) leaving about 1/2″ space.
  • Screw the lids on enough to keep a tight seal in place but don't over-tighten them since air bubbles need to be able to escape.
  • Place packed cans into the canning pot and cover with 1-2 inches of water. Bring to a boil and process 15 minutes. Remove from the pot with jar lifter and leave at room temperature undisturbed for 12-24 hours. You may hear a pop when the jars fully seal. After 24 hours, check that the seal has formed by pushing down on the center of the lid - it should not move at all. If the seal does not form, refrigerate preserves and enjoy within 3 months.

CHUNKY PEACH SPREAD

Chunky Peach Spread image

Here's a fruit spread that captures the best tastes of late summer. I like that it's low in sugar and not overly sweet, which lets the fresh peach flavor shine right through. - Rebecca Baird, Salt Lake City, Utah

Provided by Taste of Home

Time 30m

Yield about 3-1/2 cups.

Number Of Ingredients 5

7 medium peaches (2 to 2-1/2 pounds)
1 envelope unflavored gelatin
1/4 cup cold water
1/3 cup sugar
1 tablespoon lemon juice

Steps:

  • Fill a large saucepan two-thirds full with water; bring to a boil. Cut a shallow "X" on the bottom of each peach. Pull off skins with tip of a knife; discard skins. Chop peaches., In a small bowl, sprinkle gelatin over cold water; let stand 1 minute. Meanwhile, in a large saucepan, combine peaches, sugar and lemon juice; bring to a boil. Mash peaches. Reduce heat; simmer, uncovered, 5 minutes. CHUNKY CHERRY & PEACH PRESERVES

Chunky Cherry & Peach Preserves image

Out of all the jams I make, this is my grandmother's favorite. She anxiously waits for late June to come because she knows I'll put up as many batches as I can while peaches and cherries are at their peak. -Amy Seiger, McLoud, Oklahoma

Provided by Taste of Home

Time 50m

Yield 7 half-pints.

Number Of Ingredients 6

4 cups chopped peeled fresh peaches (about 7 medium)
4 cups chopped pitted fresh tart cherries (about 2 pounds)
2 tablespoons lemon juice
1 package (1-3/4 ounces) pectin for lower sugar recipes
3 cups sugar
1/4 teaspoon almond extract

Steps:

  • In a Dutch oven, combine peaches, cherries and lemon juice; stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. CHUNKY PEACH PRESERVES

Chunky Peach Preserves image

Make and share this Chunky Peach Preserves recipe from Food.com.

Provided by Nana Lee

Categories     Fruit

Time 1h25m

Yield 3 pints

Number Of Ingredients 4

3 lbs freestone peaches
ice water
5 cups sugar
2/3 cup strained fresh lemon juice (to taste)

Steps:

  • Directions:.
  • Cut an X in the rounded end of each peach. Bring a saucepan full of water to a boil over high heat. Have ready a bowl of ice water. Add peaches a few at a time to the boiling water and blanch 30 seconds, then transfer to the ice water to stop the cooking. When cool, lift out and peel. The skin should peel back easily from the X.
  • Cut peaches into wedges about 1/2 inch thick, then cut each wedge in half crosswise. Transfer to a large bowl, add sugar and lemon juice and stir well. Let stand several hours or overnight, stirring two or three times, until sugar dissolves and mixture no longer tastes grainy.
  • Transfer to a large pot, bring to a simmer over moderately high heat and simmer, skimming any white foam that collects on the surface, until peaches are tender and syrup thickens slightly, 25 to 30 minutes. Transfer to a large bowl, cover and let rest overnight to "plump" the fruit again.
  • Drain the fruit in a sieve set over a bowl. Taste the syrup and add more lemon juice if it seems too sweet. Return the syrup to a pot and cook over moderately high heat until it reaches 220F 105C). Or test for jamlike consistency by spooning a little onto a chilled saucer, then returning the saucer to the freezer for a couple of minutes to cool the syrup quickly. It should firm to a soft jelly consistency.
  • Return the peaches and any collected juices to the pot and cook a couple of minutes more, until mixture returns to 220 F (105 C). It will seem thin.
  • Remove from heat and let stand 5 minutes, then spoon into clean, hot jars to within 1/2 inch from the top. Wipe rim clean with a towel dipped in hot water. Place lids and rings on jars and seal tightly.
  • Cool and refrigerate for up to 3 months. Or, for longer storage, place just-filled jars in boiling water to cover by 1 inch and boil 15 minutes for half-pint jars, 20 minutes for pint jars.
  • Transfer with tongs to a rack to cool; lids should form a seal. Sealed jars may be stored in a pantry for up to a year.

  • Pour the lemon juice into a large, heavy bottomed sauce pan. Peel, pit and chop the peaches into small, bite-size chunks. Add the peaches to the lemon juice as you chop, stirring with each addition to coat the peaches in the lemon juice which will prevent them from browning.
  • Pour the sugar over the peaches and stir gently to coat the peaches in the sugar. Let the mixture sit at room temperature for 1 hour. *NOTE: The amount of sugar will depend on the sweetness of your peaches. If the peaches are quite sweet, 2 1/2 cups of sugar will suffice.
  • Bring the mixture to a full boil over medium-high heat, stirring occasionally. Reduce the heat to medium and allow to simmer for 1-2 hours, until the liquid has reduced significantly and is thick and jelly-like. As the preserves begins to thicken you'll want to stir more and more frequently to prevent scorching. (To test whether the preserves are done, place a small dish in the freezer until very cold. Spoon a small amount of preserves onto the cold dish, allowing it to cool quickly and providing an accurate sense of how thick the juice is.)
  • Pour the hot mixture into very clean, dry glass jars leaving about 1/4 inch at the top. Using a damp cloth or paper towel, wipe the tops of the jar to ensure a clean seal. Cap and screw on lids, leaving them a bit loose.
