HEARTY NAVY BEAN SOUP

Hearty Navy Bean Soup image

My family loves navy bean soup! Beans were a commodity you did not survive without in the '30s. This excellent navy beans and ham soup is a real family favorite of ours and I make it often. -Mildred Lewis, Temple, Texas

NAVY BEAN SOUP

Navy Bean Soup image

Provided by Food Network Kitchen

Categories     main-dish

Time 3h15m

Yield 8 servings

Number Of Ingredients 10

1 pound navy beans, picked over, rinsed and drained
10 sprigs parsley
2 sprigs fresh thyme or rosemary
1 bay leaf
2 large smoked ham hocks, about 1 1/2 pounds
1 medium carrot, coarsely chopped
1 medium onion, coarsely chopped
1 clove garlic, coarsely chopped
Kosher salt and freshly ground black pepper
Butter for garnish

Steps:

  • Place the beans in a large saucepan and cover with cold water by about 2 inches. Bring to a boil and lower the heat to a simmer. Cook for 5 minutes; remove from the heat, cover, and let sit for one hour. Drain and reserve. Tie the parsley, thyme, and bay leaf together with kitchen twine.
  • In a large soup pot or Dutch oven combine the beans, herb bundle, hocks, carrots, onions, and garlic with 8 cups water. Bring to a boil, cover, and adjust the heat so the soup cooks at a gentle simmer. Cook until the beans and hock are completely tender, about 1-1/2 hours.
  • Turn off the heat and remove the hocks. Cool slightly. Remove the meat from the hocks, discarding the bones, fat and skin. Cut the meat into small cubes. Remove the herb bundle and discard.
  • Puree about 3 cups of the beans with a bit of the liquid in a blender. (For a smoother soup puree all the beans.) Stir the puree and diced meat into the soup. Heat the soup and adjust the seasoning as needed with salt and pepper. To serve divide the soup among heated bowls. Place a small pat of butter on top each soup and serve.

CHUNKY NAVY BEAN SOUP

Chunky Navy Bean Soup image

A nice thick version on regular navy bean soup. I usually serve with hot cornbread and butter, maybe a few green onions on the side. You could use bacon instead of the ham hock.

Best Ever Navy Bean Soup image

This is my easiest soup and so good. Of all the soups I make, my family says it's my best! The preparation seems lengthy but it's just a matter of getting the beans into water at bedtime and simmering everything for a few hours the next day!

NAVY BEAN SOUP WITH CHICKEN

Navy Bean Soup With Chicken image

Beans are really healthy, so when I cook them I try not to add anything to them that will make them unhealthy. This bean soup relies on some pepper and the green onions for seasoning. If you want salt, add some. Cooking time includes soaking time for the dried beans.

Provided by GrandmaIsCooking

Categories     One Dish Meal

Time 3h45m

Yield 8 serving(s)

Number Of Ingredients 7

1/2 lb dried navy beans
8 cups water
1 -1 1/2 lb chicken breast, cut in 1/2-3/4 inch chunks
1/2 teaspoon white pepper
5 green onions, including tops (separate tops)
1/4 lb baby carrots, sliced 1/4 ", thick
10 cups water

Steps:

  • Wash and pick over the navy beans, then put in a pot with the 8 cups water; bring to a boil and boil 2 minutes, then remove from heat, cover and let sit at least 1 hour (3 or 4 is okay).
  • Drain and rinse the beans.
  • If chicken is frozen put it in a large pot with the 10 cups of water, bring to a boil and cook about 15 minutes until you can cut it into chunks (For raw chicken, just cut up and put in the pot with the water and proceed to the next step).
  • Cut green onion tops about 1/4 inch long and put aside; thinly slice the rest of the onions and add to chicken along with all other ingredients except the green onion tops.
  • Bring to a boil, reduce heat, cover and simmer 1 ½ to 2 hours or until beans are as tender as you like them.
  • Add green onion tops and cook 15 minutes longer.
  • Serve immediately or refrigerate and warm up for an easy lunch.

  • Rinse and sort the beans, carefully looking for dirt or small rocks. Put rinsed beans in a large pan and cover with two inches of water. Let soak for at least 8 hours, or use the "quick soak" method.
  • To "quick soak" the beans, put the pot of beans and water on the stove over hight heat. Bring to a rolling boil. Boil for two minutes, then cover with a lid and remove from heat. Let soak for one hour. A spoon of baking soda can be added to the water before soaking (after removing from heat) to aid in breaking down the beans for easier digestion.
  • For making the soup, dice the carrot and celery stalk. Heat the oil in the soup pot over low or medium-low heat. Add the carrot and celery and cook until tender, stirring often. Do not allow the vegetables to brown.
